        동결분쇄를 이용한 보리싹, 울금, 황칠, 상황버섯의 영양성분 증진 및 투과 효과

        본 연구에서는 건조조건과 분쇄조건을 달리하거나 추출한 식물류의 영양성분 함량과 영양성분의 보존율을 비교 분석하였다. 동결분쇄한 식물류는 일반분쇄 하거나 추출한 식물류에 비하여 영양성분의 보존율이 높은 것으로 나타났다. 인공생체막에서 영양성분의 투과도를 분석한 결과 동결분쇄한 식물류의 영양성분이 잘 투과하였다. 분쇄과정에서 열발생을 최소화하고 입도를 작게 하는 동결분쇄 기술이 식물류 원료를 우수한 식물소재로 가공할 수 있는 기술임을 확인하였다. The purpose of this study was to improve the nutrition and the permeability of functional plants by using cryogenic grinding technology. Barley sprouts, Curcuma longa L., Dendropanax morbifera LEV., Phellinus linteus were dried, ground and extracted in different temperature conditions. Powder size of barley sprouts and Curcuma longa L. were about 50 μm and Dendropanax morbifera LEV. and Phellinus linteus were about 20 μm. Cryogenic ground of Barley sprouts preserved 18.27-124.65% of nutrients such as protein, ash, carbohydrate, beta carotene, minerals, vitamins. Cryogenic grinding powder of Curcuma longa L. show high nutrients retention rate of lipid and carbohydrate. Permeability was measured by Parallel Artificial Membrane Permeability Assay (PAMPA) to predict passive gastrointestinal absorption. Permeability of saponarin, which is marker compound of Barley sprouts, is 9.88 times higher in cryogenic grinding powder than ambient grinding powder. Curcumin permability is 3.1 times higher than ambient grinded powder. As a result, particle size, nutrition, protein digestion degree and permeability demonstrated a positive relationship with the decreasing grinding temperature for the powders. These results confirm that the cryogenic grinding method had good suitability to increase functionality of plants, since it could minimize the heat generated while processing and effectively reduce the particle size.

        B 형 만성활동성간염 치료제로서 합성 α - Interferon 의 효용성

        N/A Fifty eight patiens with chronic active hepatitis were entered into a therapeutic trial of 12-week period of recombinant α-interferon therapy. All patients were positive for both HBsAg and HBeAg. During the 13 to 62-week period of follow-up, 24 of 58 (47%) treated patints became negative for serum HBeAg but in 9 of these HBeAg reappeared in their serum. Fifteen patients (30%) were also positive for serum Anti-HBe but 5 of this lost Anti-HBe from serum. 9 patents positive for initial HBV DNA lost their DNA from serum. Responders had a marked improvement in serm aminotransferase activities. Seroconversion rate of female (5/9, 56%) was seemed to be higher than that of male (19/43, 45%). Comparison of responders to non-responders indicated that a high initial level of serum aminotransferuse and a severe form of hepatic histology correlate best with response to interferon herapy. 45 of 58 (78%) patients showed various adverse reactions, such as myalgia (59%), fatigue (57%), fever (52%), nausea and anorexia. Transient decrease in peripheral leukocyte and platelet count were also noted. These findings suggest that α 12-week course of recombinant α-interferon therapy would be effective and safe in approximately half of patients with chronic active hepatitis B.

        N/A To clarify the mechanism of ethanol induced gastric mucosal damage and protective effect of d-methyl prostaglandin (PG) E against the gastric mucosal damage, the activiteis of superoxide (SOD), catalase, glutathione peroxidase of rat stomach were measured after topical application of ethanol in stomach of rats with or woitout d-methyl PGE pretreatment.Variable doses of d-methy1 PGE were given intragastrically at 30mins before the administration of 75% ethanol.The results were summarized as follows;1) The SOD, catalase, glutathion peroxedase activities increase with different concentration of ethanol.2) The each eazyme actinity also shwed dose dependent decrease in the d-methyl PGE pretreatment group than only 75% ethanol application group. According to our experimint it was suggested that superoxide radical may play a role on ehtnol-indeced gastric damage in rats.

        동결분쇄에 따른 아로니아, 자몽, 서리태, 발아현미의 이화학적 특성

        식품중의 영양성분을 잘 보존하고 섭취가 용이하며 소화가 잘 될 수 있는 가공방법의 최적화를 위하여 식품원료의 동결분쇄물과 일반분쇄물을 비교하였다. 단백질의 공급원으로 알려진 서리태는 동결분쇄한 것이 일반분쇄한 것에 비해 미세하나 에너지원으로서 영양성분 보존율(이하보존율)이 4.57% 높고, 미네랄은 큰 차이가 없었다. 특히, β-carotene의 경우, 동결분쇄가공분말에서 11.54% 높게 포함되어 있어 비타민 A의 전구물질인 공급에 유리함을 보였다. 아로니아의 총 안토시아닌은 동결분쇄가 453.49 mg으로 일반분쇄 158.98mg 보다 보존율이 높았다. 자몽에서 열에 약한 베타카로틴은 동결분쇄가 129.47%, 니아신은 439.39%로 동결분쇄가 보존율이 높았다. 발아현미는 동결분쇄에서 단백질, 탄수화물, 니아신이 107.74%, 103.87%, 156.52%로 각각 높았다. Protease에 의한 단백질 소화율은 일반분쇄에 비하여 아로니아가 120.5%, 서리태가 101.14%로 동결분쇄방법이 단백질 소화율이 높았다. 그러나, 자몽과 발아현미는 동결분쇄에서 94.06%와 93.14%로 소화율이 떨어졌다. We compared the ingredients present in freeze-dried ground food samples with those present in hot air-dried and ambient ground food samples to optimize processing conditions for preserving nutrients in and for improving the ingestion of different foods. The freeze-dried ground sample of black bean showed 4.57% higher retention rate than the ambient ground sample of black bean. Mineral content was also significantly different between these two samples. Moreover, the freeze-dried ground sample of black bean contained 11.54% higher content of β-carotene, a precursor of vitamin A, than the ambient ground sample of black bean. Total anthocyanin content was 453.49 mg in the freeze-dried ground sample of Aronia compared with 158.98 mg in the ambient ground sample of Aronia. Contents of β-carotene and niacin increased by 129.47% and 439.39%, respectively, in the freeze-dried ground sample of grapefruit. Retention rates of proteins, car-bohydrates, and niacin were 107.74%, 103.87%, and 156.52%, respectively, in the freeze-dried ground sample of germinated brown rice. Protein digestibility increased by 120.5% and 101.14% in the freeze-dried ground samples of Aronia and black bean, respectively, but did not increase in the freeze-dried ground samples of grapefruit and germinated brown rice.

        출혈성 쇼크로 유도된 흰쥐의 위병변에 대한 Allopurinol의 보호 효과에 관한 연구

        This study was designed to determine whether oxygen derived free radicals play a role in the pathogenesis of gastric lesions produced by hypotensive ischemia and whether allopurinol, an in-hibitor of xanthine oxidase (the enzyme responsible for the formation of superoxide radicals) has the protective effect on ischemic gastric lesions. To achieve this goal, the changes of antioxidant enzyme activity; xanthine oxidase, superoxide dismutase (a scavenger of superoxide radicals <O-2 >), catalase and peroxidase were measured in control group, in hemorrhagic shock groups and in allopurinol pretreated hemorragic shock groups. Allopurinol pretreated hemorrhagic shock groups were subclassed by dose of administration (25 mg, 50 mg, 75 mg/kg). The resuits were summarized as follows; 1) In hemorrhagic shock group, the activities of total SOD and xanthine oxidase were significantly higher than those in control group (p<0.05). 2) In allopurinol pretreated hemorragic shock groups, the activities of total SOD and xanthine oxidase were lower than those of hemorragic shock group (p<0.05). But there was no linear relation between the increased dose of administration and the inhibition of activities of SOD and xanthine oxidase. 3) The activities of catalase and peroxidase were not significantly different in all groups of this study. 4) The gastric lesions (hemorrhage, edema, erosion) were significantly severe in hemorrhagic shock induced rats irrespective of allopurinol pretreatment compared to control group. And the lesions were more severe in antrum and cardia than the fundus. From the above resu]ts, oxygen derived free radicals may play an important role in the formation of gastric lesions produced by ischemia plus HCI. Allopurinol could have the protective effect on hemorrhagic shock induced gastric lesions by inhibition of xanthine oxidase ivhich is reponsible for the formation of superoxide radicals.

        The aim of this study is to investigate the effect of the energizing duration and the ambient gas pressure on the gasoline direct injection (GDI) spray behavior characteristics in a constant volume-high pressure chamber. In order to visualize the GDI spray, the spray visualization system, which consists of the high-speed camera, the meta-halide lamps, and the synchronizing systems, is utilized. In addition, the n-heptane fuel that has a similar physical properties with gasoline fuel is used for the safety. It was revealed through the spray image analysis that the effect of energizing duration for spray tip penetration is insignificant. Also, the spray tip penetration is decreased according to the increasing ambient pressure due to the increase of the drag force and friction of ambient gas. The rotating vortex was located closely the injector nozzle tip as increase of ambient pressure.
