The Role of Ca Equilibrium on the Functional Properties of Cheese: A Review

The functional properties of cheese, such as texture and melt, are known to be controlled by several important parameters. Recently, the characteristics of Ca in cheeses, especially the form of Ca (insoluble (INSOL) or soluble) and the shift in Ca equilibrium (i.e., from INSOL to soluble Ca), during aging has received a lot of attention. The INSOL form of Ca, which is present as a structural form in casein, plays a critical role in determining the functional properties of cheese during the early period of ripening (~1 mon). It seems that there is always a reduction of INSOL Ca content in cheese during ripening and there are also factors that can affect the shift in Ca equilibrium. These factors may include the composition of cheese milk, cheese manufacturing pH, acid development during aging, adopting curd-washing in various methods, pre-acidification of milk, etc. There have been many studies showing that the rheological and melting properties of cheese during ripening were significantly (p<0.05) affected by the shift in Ca equilibrium. Therefore, for cheese makers, it is now possible to predict/ manage the functional properties of cheese by monitoring and controlling Ca equilibrium in cheese during aging. 『源氏物語』의 往生 -明石入道와 八宮의 대조를 통하여-

この研究は『源氏物語』の中で「結局誰が往生できたのか」というごく単純な疑問から始まったものである。『源氏物語』には多数の出家者と道心者が登場して極楽往生を願い、祈りと勤行、そして色々な仏教儀式を行われている。本稿はその登場人物の中で往生を目指して勤行に熱中していた明石入道と八宮を分析の対象にして、『源氏物語』の追求していた「往生」とはどんなものか、そして往生を達成するためにはどんな条件が必要なのかなどについて考察したものである。明石入道と八宮は二人とも徹底的な勤行と祈念を重ねる人物として描かれている。しかし同時に二人とも娘の不安な身辺を心配して自分の往生の祈願まで妨げられる人物でもある。そのように表面的に同じ条件の二人であったが、往生を成し遂げるまでの道程は正反対に展開していく。つまり明石入道の場合、家門の復興と自分の往生とを予知してくれる夢を見てからためらいなくそれを目指して進んだのに対して、八宮は阿闍梨の厳しい助力にもかかわらず死後、阿闍梨の夢に出てきて往生できなかったことを語っている。結局『源氏物語』に描かれていた人物たちの往生への念願は出家とか行法だけがそれを保証してくれる唯一な条件ではないことがわかる。それより往生を願う本人の強い意志こそ往生をかなうための一番重要な条件になると思われる。また多くの人が極楽往生を願って勤行を重ねているが、物語という文学空間の性格上、現世を離れた彼岸は対象にしていない。それこそ仏教その自体を語るのではなく、仏教的な観点から人間を眺め、その世界を調和良く描き出した『源氏物語』だけの叙述態度ではないかと思われる。

この研究は『源氏物語』の空間的な背景になっている六条院に関して仏教的な立場から考察したものである。そのために、まず『無量寿経』に現れている仏国土の具体相を把握し、経典上の仏国土を構成する要素が六条院にどのように反映され、物語の空間の中に現実化されたかを考察した。また六条院内外で頻繁に行われている行事と儀式を分析して、六条院の仏教的理想郷としての役割を考察した。そして女三宮の降嫁で引き起こされた紫上の六条院からの離脱、四季の町の不均衡などが結局六条院の瓦解に帰結する過程も分析したのである。しかしこのような六条院の瓦解が最終的な崩壊と消滅には及ばず、もう一度復活するのも確認したのである。その過程で六条院の瓦解の主な原因になった女三宮と薫が六条院から分離されることで完全な仏教的理想郷を構築することになる。 『源氏物語』の六条院は光源氏の栄華を象徴する空間で、須磨の苦難を克服して権力の頂点に立った光源氏の華麗な一面を反映した空間である。このような六条院は、その登場の段階において「生ける仏の御国」と表現されるし、またその終りに当たる「匂宮」巻では「仏の国」と表現されている。これは『源氏物語』の中でたった二カ所しか確認されない「仏国土」の用例で、そういうわけで六条院は永遠な仏国土としてのイメージを持つよになったのではないかと思う。

This research recognizes Uji not only as a mere geographical and natural background of the monogatari, but as an interaction between space and character. In order to present it, the research focuses on the main character Kaoru and contemplates the character who gets excluded and left out as he fails to harmonize with space in negotiating process with Uji. As a result of the consideration, Kaoru who recognized Uji as the space of search‒after‒truth at first, drifts apart from Uji as he becomes aware of the space of sentiment in relationship with women of Hatinomiya. At last, including Kaoru himself, Okimi, Nakanokimi and Ukihuna, who were sacrificed by Kaoru's sentiments, are removed from Uji's space. Uji's is separated from the destroyer Kaoru and remains as the space of Ben ‒ the devotee of Buddhism ‒ and Azari's Buddhist space. Finally, the incomplete meaning of search‒after‒truth space gets defined with a complete one. 本研究は 『源氏物語』三部の空間的背景となっている 「宇治」を、「空間と人物の相互作用」という観点から考察した論である。そこで、重要登場人物である薫に焦点を合わせ、宇治の空間から排除․離脱されていく人物像を考察した。考察の結果、登場の初期には宇治を 「求道の空間」として認識していた薫が、八宮家の姫君たちとの関わりの中で、徐々に 「情念の空間」として認識しながら、以後、宇治の空間から遠ざかってゆく様子が窺われた。結局、薫自身を初め、彼の情念の犠牲となった大君·中君·浮舟が宇治という空間から離脱されながら、宇治の空間は「破壊者」薫から分離され、仏道帰依者である弁と阿闍梨の仏教的な空間となるのである。それにより、不完全だった求道空間が完全な求道空間として改めて成立されたのではないかと思われる。

THE CORRELATION DIMENSION OF GENERALIZED CANTOR-LIKE SETS

In the paper, a symbolic construction is considered to dene generalized Cantor-like sets. Lower and upper bounds for the correlation dimension of the sets with a regular condition are obtained with respect to a probability Borel measure. Especially,for some special cases of the sets, the exact formulas of the corre-lation dimension are established and we show that the correlation dimension and the Hausdor dimension of some of them are the same. Finally, we nd a condition which guarantees the positive correlation dimension of the generalized Cantor-like sets.
