NMR 에 의한 Methyl Linolenate 의 자동산화속도측정

The rate constant and reaction order of the autoxidation of methyl linolenate were determined by using nuclear magnetic resonance spectrometer, and the applicability of nmr to the kinetic study was examined. The autoxidation was carried out under a mild condition, i.e., the air flow rate of 90m1/min and room temperature. The autoxidation of methyl linolenate followed the first-order kinetics, and the rate constant was found to be 1.96×10^(-2)hr^(-1).

Some phenolics were examined as an antioxidant for the autoxidation of soybean oil. Soybean oil was autoxidized under a mild condition (the flow rate of 67㎖ O₂/min and 50℃). The antioxidant effect was estimated by active oxygen method. Phenolics show distinctive antioxidant effect, and the effect is prominent when cupper or iron was added. Phenolics showed a tendency to increase antioxidant effect with an increase of the number of hydroxyl group, and the increasing order was ferulic acid, quinalizarin, sesamol, alizarin, fisetin and purpurogallin. However, the effect was remarkably low in ferulic acid, alizarin and quinalizarin. It was found that the antioxidant effect was dependent on the functional group and geometric molecular structure of phenolics.

위암발증의 원인을 밝히기 위하여 설문조사를 통하여 강원도 화천군에 거주하는 주민들의 일반사항, 생활습관 및 영양섭취실태와, ELISA법으로 Helicobacter pylori 감염률을 조사하였다. 조사 대상자는 40∼69세까지의 지역주민 169명으로 남자 79명, 여자 90명이었으며 그 결과는 다음과 같다. 조사 대상자의 학력은 65.7%가 초등학교 이하였으며, 월수입은 60%가 50만원 이하였다. 대상자의 62.7%가 농업에 종사하였고 자녀수는 64.3%가 3∼5명이었으며 대상자의 34.5%가 흡연을 하고 있었고 68.4%가 음주를 한다고 대답하였다. 대상자의 전체 평균신장은 156.7㎝로 여자는 150.1㎝, 남자는 164.4㎝ 이었다. 평균체중은 61.1㎏으로 여자의 체중은 57㎏, 남자는 65.7㎏이었으며 BMI는 전체 평균 25.5%로 여자는 24.8%, 남자는 20.1%이었다. Helicobacter pylori의 감염률은 전체 조사대상자의 66.3%이었으며, 여자의 67.7%, 남자의 64.6%가 감염되었고 연령별로는 40대의 70%, 50대의 62.2%, 60대의 69.4%가 각각 감염된 것으로 나타났다. 일상 생활 요인에 따른 Helicobacter pylori의 감염률은 흡연의 정도가 심하고 학력이 낮으며 월수입이 낮을수록 높은 경향을 보였다. Helicobacter pylori의 감염여부에 따라 감염자와 비감염자의 영양섭취량을 조사해 본 결과 비감염자는 감염자와 비교해서 에너지, 총단백질, 동물성 단백질, 칼슘, 비타민 C 섭취량이 높은 경향을 보였으며 철분과 niacin의 섭취량은 낮은 경향을 보였다. To examine the relationship between the casual infection of gastric cancer and lifestyle and nutritional status, we surveyed 169 persons, 90 females and 79 males, aged 40∼69 years from June 7 to June 14, 1997, in Whachon area, Kang-Won Do, Korea. For this purpose, we investigated Helicobacter pylori infection and identified the effect of sex, age, smoking, alcohol consumption, economic status, occupation, life-style and food intake on Helicobacter pylori infection. Helicobacter pylori status was evaluated using an enzyme-linked immunosorbant assay(ELISA) for anti-Helicobacter pylori immunoglobulin G(IgG). Helicobacter pylori infection was present in 66.3% of total subjects, namely, 67.7% of female and 64.6% of male and its prevalence increased with smoking, low education level and low monthly income. Energy, total protein, calcium and vitamin C intakes in the negative Helicobacter pylori infection group were higher than those in positive Helicobacter pylori infection group. However iron and niacin intakes were lower in the Helicobacter pylori negative group than in the positive group.
식용대두유에 대한 Chelating agent 의 항산화 효과

Some chelating agents are evaluated as an antioxidant for the autoxidation of soybean oil. Soybean oil is autoxidized under a mild condition (the flow rate of 67㎖ O₂/min and 50℃). The antioxidant effect is measured by active oxygen method, and the spectral change of autoxidized soybean oil examined. The antioxidant effect of chelating agents is increased in order of diphenic acid, naphthoquinone, pyromellitic acid, quinolinic acid and naphthalic acid, and particularly the effect is low in diphenic acid and naphthoquinone. It is found that the effect is more clearly demonstrated by NMR rather than IR and UV and that the effect is dependent on the functional group and geometric molecular structure of chelating agents.

메밀가공식품의 개발을 위해 발아에 따른 rutin성분 This study was carried out to investigate the chemical change of rutin and fatty acids of buckwheat (Fagopyrum esculentum) during germination. The content of rutin in buckwheat before germination was 31.5㎎% and that after 7 days was increased to l,660.3㎎%. The content of stearic acid was increased slightly after 3 day during germination but those of other fatty acids were decreased gradually.

Edible rapeseed oil containing about 30% erucic acid was hydrogenated using nickel catalyst under 1 atm. and other various reaction conditions. Physicochemical change of the reaction products was examined by measuring iodine value, refractive index and melting point. Also, the kinetics was studied by measuring iodine value. The results obtained are as followed: It was found that the hydrogenation of rapeseed oil at 170℃ and 0.1% catalyst level was followed the first-order kinetic, and the rate constant was calculated to be 3.9×10^-3 min^-1·Iodine value was decreased with an increase of reaction temperature, time and catalyst concentration. Refractive index and melting point were increased with a decrease of iodine value. The correlation factor between refractive index and iodine value was RI=0.00015 IV+1.4512.

The synergistic antioxidation effect of α-tocopherol and soybean phospholipid was examined by measuring peroxide value at 100℃, 150℃ and 200℃ with time. Various concentrations of tocopherol and phospholipid were added to the edible soybean oil respectively. When phospholipid was not added the antioxidation effect of tocopherol was more found at 0.01% addition level than 0.05% or 0.1% addition level. In the case of phospholipid was added the antioxidation effect was more significantly found than phospholipid not added and, when the addition level of tocopherol was increased the antioxidation effect of phospholipid was found at higher phospholipid addition level. But at the low addition level of tocopherol, the high phospholipid addition level was decreased antioxidation effect. When the 0.05% tocopherol and 0.1% phospholipid was added to the edible sobean oil at 100℃, the antioxidation effect was exhibited to maximum and also, 0.05% tocopherol and 0.05% pbospholipid at 150℃ too. The antioxidation effect was increased with an increase phospholipid addition level at 100℃ but at the low addition level of topherol, the antioxidation effect was decreased with an increase phospholipid concentrations at 150℃. The antioxidation effect was not significantly different from phospholipid and tocopherol at 200℃.
