Current status and prospect of quality evaluation and utilization research on rice in Japan

Rice is one of the most important cereals as long as wheat and corn in the world. Japanese people use about 10 million tons of rice grains per year. We use about 9.2 million tones for cooked rice as staple foods and 973,000 tones for processing, such as rice wine (sake), rice crackers and miso fermentation, etc. For the quality evaluation of rice, sensory test and physicochemical measurements are adopted. As physical measurements, chemical component analyses, such as amylose contents and protein contents, pasting properties, cooking qualities and physical properties of cooked rice grains are important. Recently, NIR system for the evaluation of eating qualities, such as "Taste Analyzer", are utilized widespread in Japan. Processing suitability of rice differs depending on the products. Low amylose rice is more suitable for soft rice crackers and high amylose rice is preferred more for rice noodle. Pre-cooked rice products, such as frozen cooked rice, retort-pouched rice and aseptic rice, are increasing recently in Japan. In our laboratory, relationship between freezing condition and palatability of cooked rice was investigated,. Bio-functional aspects of rice grains are kept watchful eyes in Japan. Dietary fiber, vitamin E, γ-aminobutyric acid (gaba) contained in rice grains are believed in effective to maintain our health condition good.
1600V, 300A STATIC INDUCTION (SI) THYRISTOR

Static Induction (SI) thyristors were invented by NISHIZAWA in 1973 (I). Since then, intensive researches have been made to put them into practice in various fields as large power devices (2) {3). Among them, 1200V, 300A SI thyristor has been developed to be applied to a high frequency application equipment (4). This device has bee applied to develop a high frequency inverter (6), active filter {7), current source high frequency inverter (8), etc. These applications proved that the items of device tosses considerably varied depending on the circuit design and operation mode of the voltage source inverter, current source inverter and an e-quipment using a resonance circuit. It is expected, therefore, that a device be designed to meet a particular circuit and operation mode to improve the equipment conversion efficiency. We have recently developed two types of 1600V, 300A class SI thyris-tors whose peak turn-off current is 800A so as to apply them to the voltage source and current source inverters for PWM circuit and for resonance circuit respectively. Their device characteristics will be outlined as follows .

A simple and highly sensitive method for the determination of _L-3-dihydroxyphenylalanine (_L-DOPA) in human plasma and urine is described which employs high-performance liquid chromatography with fluorescence detection. After cation-exchange chromatography on a Toypak IC-SP S cartridge, _L-DOPA and α-methyldopa(an internal standard) in 300㎕ of plasma or 10㎕ of urine are converted into the corresponding fluorescent compounds by reaction with 1, 2-diphenylethylenediamine. These compounds are separated by reversed-phase chromatography on a TSK gel ODS-120T column with isocratic elution. The detection limit for _L-DOPA is 10 fmol in a 100-㎕ injection volume.
