Effects of plant extracts on microbial growth, color change, and lipid oxidation in cooked beef

<P><B>Abstract</B></P><P>The effects of butylated hydroxyanisole/butylated hydroxytoluene (BHA/BHT), grape seed extract (ActiVin<SUP>™</SUP>), pine bark extract (Pycnogenol<SUP>®</SUP>), and oleoresin rosemary (Herbalox<SUP>®</SUP>) on microbial growth, color change, and lipid oxidation were investigated in cooked ground beef. When compared to the control, 1.0% ActiVin<SUP>™</SUP> and Pycnogenol<SUP>®</SUP> effectively reduced the numbers of <I>Escherichia coli</I> O157:H7 and <I>Salmonella</I> Typhimurium, and retarded the growth of <I>Listeria monocytogenes</I> and <I>Aeromonas hydrophila</I>. Pycnogenol<SUP>®</SUP> resulted in reductions of 1.7, 2.0, 0.8, and 0.4log CFU/g, respectively, in numbers of <I>E. coli</I> O157:H7, <I>L. monocytogenes</I>, <I>S</I>. Typhimurium, and <I>A. hydrophila</I>, respectively, after 9 days of refrigerated storage. The color of cooked beef treated with ActiVin<SUP>™</SUP> was less light (L*), more red (a*), and less yellow (b*) than those treated with BHA/BHT, Pycnogenol<SUP>®</SUP>, and Herbalox<SUP>®</SUP>. ActiVin<SUP>™</SUP> and Pycnogenol<SUP>®</SUP> effectively retained the redness in cooked beef during storage. The control showed significantly higher thiobarbituric acid-reactive substances (TBARS) and hexanal content over storage. BHA/BHT, ActiVin<SUP>™</SUP>, Pycnogenol<SUP>®</SUP>, and Herbalox<SUP>®</SUP> retarded the formation of TBARS by 75%, 92%, 94%, and 92%, respectively, after 9 days, and significantly lowered the hexanal content throughout the storage period. Results of this work show that ActiVin™ and Pycnogenol<SUP>®</SUP> are promising additives for maintaining the quality and safety of cooked beef.</P>

Though sclerosing peritonitis(SCP)is rare, it is a serious complication of continuous ambulatory peritoneal dialysis(CAPD) patients. The pathogenesis of SCP, which appears to be multifactorial, is unclear even now. We report on two patients wo had been diagnosed with SCP presenting as a hung peritoneal cyst. They were transferred from CAPD to hemodialysis(HD) because of ultrafiltration failure and intractable peritonitis. Abdominal CT showed a hung fluid-filled cyst in the peritoneal cavity. Because of intractable ascites and abdominal discomfort, exploratory lapartomy with cyst removal and adhesiolysis were performed. The pathology confirmed the diagnosis of SCP. The patients have remained healthy without any complications or further treatment.

This paper examines the loanword adaptation patterns for laryngeal features in English, Thai and Korean. To this end, we observe how the English laryngeal features are adapted in Thai and Korean, and move on to the adaptation pattern of Thai words in Korean. Certain points are shared while others show disparities among these three languages. English and Korean belong to the aspiration type(Ahn & Iverson 2004), while Thai has the voicing distinction which Korean lacks. Furthermore, both Korean and Thai show three-way laryngeal contrast in stops. In this paper, we will claim that the loan adaptation of laryngeal features heavily depends on the language typology. More specifically, we argue that the phonemic vs. phonetic mapping patterns can be decided based on the laryngeal typology of the target and the recipient languages.
Loanword Adaptation of Russian Obstruents in Korean

This paper examines the loanword adaptation pattern of Russian obsturents in Korean. We observe the loan adaptation patterns of Russian in the Seonbong newspaper (published between 1922 and 1937) in Yeonhaeju (Primorskij Kraj). Based on the collected data, we first provide an extensive analysis on the loan adaptation of Russian obstruents into Korean and show the general loan adaptation pattern. We then focus on the adaptation pattern of the Russian /v/ showing the 〈p〉~〈ph〉~〈w〉 alternation. To investigate the mysterious variation, we conduct a perception test with 24 real Russian words in various phonological environments. The experimental result indicates that the variation is sensitive to the syllable position. Moreover, it resolves earlier controversy on the nature of the Russian /v/ (Avanesov 1956, Hayes 1984, Padgett 2002), showing that the Russian /v/ is phonetically [+sonorant].
