감마선 조사된 난백 함유 White Layer Cake의 돌연변이원성 평가

감마선 조사 기술을 이용하여 계란의 알러지성을 감소시키기 위한 실증 연구의 일환으로 제조한 감마선 조사된 난백함유 white layer cake의 독성학적 안전성을 검증하고자 본시험을 실시하였다. 시험 시료의 물 가용분 및 methanol 가용분을 대상으로 in vitro 단기 시험인 S. typhimurium TA98과 TA100을 이용한 유전자 복귀돌연변이 시험(Ames tset) 결과, 감마선 조사 난백 함유 white layer cake이 직접변이원이나 간접변이원으로 작용하지 않음을 알 수 있었다. Mutagenicity of white layer cake including 20 kGy-gamma irradiated egg white manufactured as a research on the practical approaches of gamma irradiation for the reduction of egg allergy was evaluated by Salmonella typhimurium reversion assay (Ames test). The water-soluble and organic solvents mixture of methanol : chloroform (2 : 1)-soluble fractions of the white layer cake including 20 kGy-gamma irradiated egg white were examined in S. typhimurium TA98 and TA100. Both with and without metabolic activation, the number of revertant colonies were not increased in each extract compared with negative controls. No significant difference in the formation of the colonies was observed at the non-irradiated and 20 kGy-irradiated samples. The results indicate that there is no evidence of mutagenicity in white layer cake including 20 kGy-gamma irradiated egg white.

인터넷에 공개된 수 많은 웹 문서들에는 유익한 정보를 제공하는 웹 문서들뿐만 아니라, 음란 정보와 관련된 불건전한 유해 웹 문서들이 다수 포함되어 있으며, 본 연구에서는 이러한 유해 웹 문서들을 효과적으로 검출할 수 있는 방법을 제안한다. 즉, 유해 웹 문서들의 분석을 통하여 유해 웹 문서 선정을 위한 평가 항목들을 도출하고, 각 평가 항목별 유해 점수 부여를 위한 평가 기준을 제시한다. 그리고, 유해 점수들의 총합이 임계값 이상인 웹 문서를 유해 웹 문서로 검출한다. 본 연구의 결과는 유해 웹 문서들로부터 이용자를 보호하고 인터넷 사용의 안전성을 향상시키는데 기여할 것으로 기대된다. A huge amount of web documents, which are published on the Internet, provide to users not only helpful information but also harmful information such as pornography. In this paper we propose a method to detect the harmful web documents effectively. We first analyze harmful web documents, and extract factors to determine whether a given web document is harmful. Detail criteria are also described to assign a harmfulness score to each factor. Then the harmfulness score of a web document is computed by adding the harmfulness scores of all factors. If the harmfulness score of a web document is greater than a given threshold, the web document is detected as harmful. It is expected that this study could contribute to the protection of users from harmful web documents on the Internet.

감마선 조사기술을 이용하여 계란의 알러지성을 감소시키기 위한 실증 연구의 일환으로 감마선 조사된 난백을 함유한 cake의 물성학적, 관능적 품질을 평가하였다. 전란에서 난백을 분리한 후 10과 20 kGy의 흡수선량을 받도록 감마선을 조사하였다. 감마선 조사된 난백을 첨가한 white layer cake, pound cake와 sponge cake를 제조하여 시험하였다. 10과 20 kGy로 조사한 난백을 첨가하여 제조한 모든 제품에서 경도가 높은 것이 관찰되었다. 저장 중 감마선 조사된 난백을 함유한 pound cake와 sponge cake의 노화가 지연되어 물성학적 저장성 측면에서 더 우수한 것으로 나타났다. 감마선 조사된 난백이 cake의 관능적 품질에 미치는 영향은 제품의 특성에 따라 다르게 나타났고, 모든 처리구에서 방사선 불쾌취(off-odor)가 관찰 되어서 제품 제조시 관능적인 품질을 유지하기 위한 적절한 방법이 이용되어야 할 것이다. As a research on the practical approaches of gamma irradiation for the reduction of egg allergy, cakes including gamma-irradiated egg white were manufactured, and rheological characteristics and sensory qualities of the cakes were evaluated. Egg white was separated from whole egg and then gamma-irradiated with the absorbed dose of 10 or 20 kGy. White layer cake, pound cake and sponge cake were made with irradiated egg white and used to the subsequent experiments. Firmness of all samples containing irradiated egg white was higher than that of control. Retrogradation of pound and sponge cakes containing irradiated egg white was delayed, and the result showed that the usage of irradiated egg white was better at the point of rheological storage ability. Effects of irradiated egg white on the sensory quality were different depending onto the properties of each product. Radiation off-odor was observed in the all samples containing irradiated egg white. To maintain the sensory quality, adequate methods such as masking effects should be developed during manufacture.

우렁쉥이 껍질로부터 정제한 식이섬유 급여 Rat의 영양학적 특성 및 혈청지질함량의 변화

우렁쉥이 추출 불용성 식이섬유를 5%, 10%, 20% 첨가한 식이 후 실험쥐 집단의 영양생리학적 특성변화를 조사하였다. Cellulose 급여에 따른 총 식이량에는 차이가 없었으나 식이 중 cellulose의 함량이 높아짐에 따라 체중은 감소하였으며 식이효율의 조절, 배변량 증가, 변의 수분 증가, 식이의장 통과시간 단축, 장 길이의 증가 등의 유의적인 효과를 나타내었다. 우렁쉥이 식이섬유를 급여한 실험쥐의 혈청분석 결과 total cholesterol, LDL-cholesterol, 중성지질 및 인지질, 혈당은 식이섬유의 함량이 높아짐에 따라 감소하였으며 HDL-cholesterol은 식이섬유의 함량이 높아짐에 따라 증가하였다. 따라서 우렁쉥이 식이섬유를 첨가한 가공식품을 섭취할 경우 배변량의 조절, 변비 및 비만조절, 혈청 지질의 감소와 같은 유용한 생리적 효과가 있을 것으로 기대된다. The effects of dietary fiber isolated from ascidian (Halocynthia roretzi) tunic on the changes of weight, total gut transit time, serum cholesterol and glucose level were investigated in rats. Twenty four male rats were divided into 4 groups and were fed a control diet and three fiber supplemented diets with 5, 10 and 20% of ascidian insoluble cellulose for 4 weeks, respectively. Food intake was not affected by the supplemented diet of ascidian cellulose but the body weight gain and food efficiency ratio were reduced in proportion to a feeding amount of ascidian cellulose. The fecal output and fecal water content were increased, gut transit time was shortened, and length of gut was elongated in all dietary fiber groups. Serum cholesterol, LDL-cholesterol, neutral lipid, phospho-lipid and serum glucose concentrations were lowered and HDL-cholesterol was increased in rats fed the ascidian insoluble cellulose diet in proportion to a feeding amount of ascidian cellulose.

온라인 담배 마케팅 분석을 통한 담배규제정책의 향후 과제

Objectives: Tobacco marketing encourages smoking initiation of non-smokers, especially adolescents, and it hinders quit intention of those who smoke or who attempt to quit smoking. Article 13 of the WHO Framework Convention on Tobacco Control(WHO FCTC) requests a comprehensive ban on tobacco advertising, promotion and sponsorship(TAPS). Ratified the Convention in 2005, Korea has partially implemented the provisions. However, online marketing regulations are still insufficient. Methods: Based on relevant national and international regulations, this research designed monitoring mechanism for online tobacco marketing and studied 1,404 websites to identify current situation of online sales and advertisement of tobacco in Korea. Results: This study found that online trade of tobacco products are overtly conducted, while tobacco advertising with flavoring and misleading descriptors are also prevalent. Also, online tobacco marketing facilitate adolescents’ access to tobacco product and that advertising and promotion activities lead to tobacco purchase without difficulties. Conclusions: Fundamental solution to prevent online tobacco advertisement and promotion is banning online sales of tobacco and conducting a regular monitoring for compliance. Korean government should consider establishing an official surveillance system for online tobacco advertisement, followed by a comprehensive ban on TAPS to fulfill its obligation as a Party to the FCTC.
