Hydrogels are crosslinked hydrophilic polymers which show the excellent water-uptake property. The effects of nonprotein polymers on the swelling properties of fish protein-based hydrogel have been studied. Unlike other natural polymers such as cellulose, proteins contain several reactive groups, including amino, hydroxyl, phenolic, and carboxyl groups. These reactive groups can be used as sites of chemical modification and cross-linking to produce novel polymeric structures. In this research we studied jellyfish protein-based hydrogel capable of binding a large amount of water by chemically modifying the lysyl residues of Jellyfish protein with ethylenediaminetetraacetic dianhydride (EDTAD) followed by cross-linking with glutaraldehyde. The protein-based hydrogel prepared was able to absorb more than 20g of water/g of dry gel. The porous structure and its relevance to swelling properties of the gel are discussed in this work.
