함초 추출물 첨가가 요구르트 저장 중의 품질 특성에 미치는 영향

This study was performed in an effort to create a functional and stable yogurt product containing slander glasswort extract. The extract was added to milk at concentrations of 0.25, 0.5, and 1.0% (w/v), which was then fermented with lactic acid bacteria (Lactobacillus bulgaricus and Streptococcus thermophilus) at $42^{\circ}C$ for 6 hr. During a period of 15 days of storage, the quality characteristics of the yogurt samples were evaluated in terms of acid production (pH and titratable acidity), levels of lactic acid bacteria, color values, viscosity, and sensory characteristics. There were no significant differences in pH during the storage period; however, the control yogurt presented the highest pH value. The 1.0% slander glasswort yogurt had the highest titratable acidity; but again, there were no significant differences among the yogurts. The 1.0% slander glasswort yogurt also had the highest level of lactic acid bacteria, and both the control and slander glasswort-containing yogurts had increasing levels of lactic acid bacteria over the storage period. The 1.0% slander glasswort yogurt had the lowest L-value and highest a- and b-values. And the slander glasswort yogurts presented lower viscosity values than the control. In sensory evaluations, the 0.25% slander glasswort yogurt scored higher than the other groups for color, flavor, viscosity, sweetness, sourness, and overall palatability. The final sensory results indicated that the 0.25% slander glasswort yogurt was superior.
18세기 후반 오와리(尾張) 지역 일본인과 조선·류큐인의 필담창화 - 『표해영화(表海英華)』와 『평수기상(萍水奇賞)』을 중심으로-

This study compared the written conversations and poetry exchanged between the Japanese and their neighbors, the Koreans and Ryukyuans, as a method of studying written conversation and poetry exchange anthologies. Choson and Ryukyu both sent diplomatic missions to Edo and maintained relations with Edo period Japan. Both the entourages of Choson and Ryukyuan missions exchanged written conversations and poetry with Japanese scholars on their journey to Edo, and as their paths crossed, there were Japanese group who met members of both missions. One representative example is the meeting of the Japanese scholars in the Owari (尾張) region with members of both the Choson and Ryukyuan missions. Okada Shinsen(岡田新川), a renowned scholar of Owari famous for his poetry, and other Japanese nearby met with and exchanged written conversations and poetry with members of the 1764 Choson mission and 1791 Ryukyuan mission. Illustrious Verses of the Shore(Hyokai eiga, 表海英華) and Admirable Appreciation of Flotsam and Jetsam(Heisui kisho, 萍水奇賞) remain today as records of those meetings. Although they are from different time, the two collections have various elements that can be compared with one another. Thus this study examined the origins of these anthologies as well as the awareness of countries other than Japan and the criteria of such awareness in the two texts.

함초 추출물의 장내 이동 효과를 살펴보기 위하여 함초 추출물을 식수에 첨가하여 장 이동률을 살펴본 결과 대조군에 비해 함초 추출물을 처리한 군에서 활성탄 식이의 장 이동률은 8.5-16.4% 증가되었다. 함초 추출물의 변비해소효과는 함초 추출물을 식수에 녹여 공급한 결과 대조군에 비해 함초 추출물을 3 ㎎/㎖ 처리한 군에서의 변량이 식수 섭취량과 관련하여 최대 156% 증가하였다. 또한 함초 요구르트의 변비해소효과는 0.25% 함초 요구르트의 공급으로 변비 유발기간 내 변량이 최대 150% 증가 되었으며 처리군에 비해 loperamide를 계속 섭취함에도 불구하고 변비가 해소되었음을 알 수 있었다. 이상의 결과로 볼 때 함초 추출물은 장 이동률을 증가시켜 장운동을 촉진할 수 있으리라 생각되며 또한 변비 해소작용까지 나타내어 장 기능 개선에 효과를 나타내는 물질이라 생각된다. This study investigated the effects of dietary slander glasswort extract on improvements in bowel function and constipation relief. Balb/C mice were used to measure transit movement of a charcoal meal after slander glasswort extract was added to their drinking water at 0.36, 0.72, and 1.5 ㎎/㎖ concentrations. The extract’s constipation relief effects were investigated in Sprague-Dawley rats with loperamide-induced constipation by adding 2, 3, and 4 ㎎/㎖ of the extract to their drinking water, and by feeding yogurt containing 0.0, 0.25, and 0.50% slander glasswort extract mixed into a 10-fold amount of water. The mice receiving the extract at 1.5 ㎎/㎖ via drinking water had a 16.4% increase in the rate of transit as compared to the controls. In addition, the rats receiving the extract via drinking water and yogurt had increased in constipation relief from 128 to 156% and from 107 to 150%, respectively, as compared to the controls. Based on the results, slander glasswort is considered to have effects on improving bowel function and relieving constipation.

Tea is one of the most widely consumed beverages in the world. Green tea-induced occupational asthma among green tea factory workers is caused by inhalation of tea dust. Epigallocatechin gallate (EGCg) is known as a major causative allergen. A 41-year-old man started to work at the green tea factory in 2005. He experienced sneezing and rhinorrhea since 2006. He also had nasal obstruction, chest discomfort and dyspnea with wheezing since 2008 after exposure to green tea dust. Skin prick tests with extracts of several green teas and EGCg (100 mM/mL) showed a strong positive reaction to EGCg only. Bronchial provocation tests with EGCg (2.5 mg/mL) showed a dual asthmatic response. With these results, we confirmed that the patient had green tea-induced occupational asthma and rhinitis. This journal aims to examine the status of Chinese poems in the age of enlightenment through the exchanged poems which were written by the first and second Sushinsa. The first Sushinsa intended to recover the relationship between Chosun and Japan and they also intended to explore the condition of Japan. Compared to the first Sushinsa, the second Sushinsa were more concerned to solve the diplomatic issues between Chosun and Japan. Therefore, Kim Gi-soo and Kim Hong-jip who were the leader of each Sushinsa had different attitudes to the duty of Sushinsa. The Japanese people whom Sushinsa met were different from the past times. The Japanese people whom Sushinsa met were government officials or noblemen who had no more political power or other kinds of common people. Sushinsa exchanged and shared some ideas with Japanese(who were mentioned above) by writing Chinese poems. Compared to Chosen Tongshinsa(朝鮮通信使) of the past, Sushinsa had a different purpose to visit Japan. Also, Sushinsa did not have enough time to exchange Chinese poems because they could take the better transportation than the past. Moreover, Japan did no longer consider that Sushinsa had a role for the cultural exchange like before. The tendency(the purpose of cultural exchange between Chosen and Japan had been shifted to the diplomatic level from the cultural level) were continued after the age of Kim Gi-soo and Kim Hong-jip. These kinds of condition led to descend the status of Chinese poems gradually.

The characteristics of cold-pressed sesame oil (CPSO), virgin sesame oil (VSO), commercial heat-press extracted sesame oil (CHPESO) and commercial supercritical fluid extracted sesame oil (CSFESO) were investigated. The total phenolics of CPSO, VSO, CHPESO and CSFESO were 31.27, 68.33, 60.65 and 31.44 ㎎/100 g, respectively. Their γ-tocopherol contents were 32.82, 31.66, 29.26 and 26.87 ㎎/100 g, respectively. The sesamol, sesamin, and sesamolin contents of VSO were the highest. The oxidation induction period (4.53 hr) of CPSO was lower than that of VSO, CHPESO and CSFESO (19.90, 16.50, and 12.23 hr, respectively). CPSO was rapidly oxidized during storage at 60℃ in the dark, and its peroxide value (POV) was increased about 14 times. Although there were few differences in electron-donating abilities at low concentrations (below 100 ㎎%), VSO showed the highest electron-donating abilities at higher concentrations (77.76% at 10,000 ㎎%). Contents of linolenic acid and oleic acid were 40.35~43.98 and 31.59~33.46 g/100 g, respectively. CPSO contained the highest amount of oleic and linoleic acid among the variously extracted sesame oil.
