울릉도산 참홍어(Beringraja pulchra)의 관능 및 영양 특성

This study compared the sensory and nutritional characteristics of mottled skate Beringraja pulchra caught off Ul-leung Island (U-MS), Korea, with those caught off Daecheong Island (D-MS). Based on their trichloroacetic acid-soluble nitrogen content, free amino acid content, and taste value, the taste of intermediate weight female U-MS was superior to that of both other U-MS and D-MS. The urea content of U-MS was higher in females than males and increased in the order heavy>intermediate>light individuals. There was, however, no difference in urea content between U-MS and D-MS. The taste and flavor characterization results suggest that the level of ammonia, which was converted from urea, influenced the quality of fermented U-DS. With the exception of the light U-DS, the other U-MS exhibited no difference in terms of hardness. The total amino acid content of U-MS was higher in females than males and increased in the order intermediate > heavy > light individuals. The total amino acid content of U-MS was also higher than that of D-MS. The major amino acids of all MSs were aspartic acid, glutamic acid, leucine, and lysine.

The spatial distribution and abundance of fish species was estimate near Dok-do, East Sea of Korea by conducting midwater trawl survey with hydroacoustic method. Acoustic and midwater trawl data were collected onboard the R/V Tamgu 21 during 7-8 March 2016. Acoustic data were collected at the frequencies of 38 and 120 kHz and converted to nautical area scattering strength ($m^2/nmile^2$). Species are distributed mainly over an extent of 30-55 m, generally around southwest of Dok-do; the squid Watasenia scintillans was the dominant species found. The length-weight function and target strength of squid and other fishes were used to estimate the W. scintillans stock at 2499.1 tons and other fish at 43.8 tons during the winter season. The hydroacoustic method offers an approach for the determination of the biomass and vertical and spatial distributions of species aggregating near Dok-do, East Sea of Korea.

Demersal fishery resources were collected by an otter trawl in May, August and November 1996 at 9 stations off Youngkwang. And they were compared with the data obtained by a stow net. Of 73 species identified, assemblages were consisted of 63.0% in fish, 14% in shrimps, 14% in crabs, 5% in cephalopods and 3% in gastropods. Johnius grypotus, Palaemon gravieri, Crangon hakodatei, Cynoglossus joyneri, Collichthys niveatus predominated in abundance, consisting of 64.4% in the number of individuals. Catch by an otter trawl consisted mainly of demersal fishery resources, while catch by a stow net consisted mainly of pelagic fishery resources.

Seasonal species composition of fishery resources was determined using samples collected by a stow net from April 1995 through January 1996 at 9 stations off Youngkwang. Catch data obtained from a set net using strong tidal current could be used for a quantitative analysis of dominant species. Of the 98 species identified, assemblages were consisted of 52.0% in fishes, 44.6% in shrimps, 2.0% in cephalopods, 1.4% in crabs and <0.1% in gastropods. Thryssa kammalensis, Crangon hakodatei, Metapenaeus joyneri and Johnius grypotus predominated in abundance, consisting of 68% in the number of individuals. The abundance and species composition fluctuated seasonally, and species could be distinguished by life history pattern with seasons. Seasonal variation in species composition was greater than the spatial variation in a sampling period. As the fine sediment was predominated in the study area, the species composition were significantly different from those of other coastal waters of West Sea, Korea.
