To screen biologically active components of the higher fungi of Korea, the carpophores of Auricularia polytricha, a well-known edible mushroom, were extracted with 0.14M NaCl solution. The extractive was successively fractionated by adding ammonium sulfate in various amounts, the respective precipitates being weparated by centrifugation, dialyzed and freeze-dried. When a dose of 60mg/kg of each was, i.p., injected into ICR mice, the fraction shich was precopitated at 20% (NH$_{4}$)$_{2}$SO$_{4}$ showed the highest toxicity, killing seven mice within two days. The fraction obtained at 40% (NH$_{4}$)$_{2}$SO$_{4}$ showed the second highest toxicity. The two fractions were named auratoxin I and II after the genus name. The symptoms of the intoxication were convulsion during the first 30 minutes after the injection, then sleeping within an hour, and tremor, lacrimation, nasal and ophthalmic bleeding, congestion and death in 24 hours. Particularly the spleen of the mice was fonud to be enlarged remarkably. The chemical analysis of the toxins showed that auratoxin I consisted of 4.4% protein and 84.5% polysaccharide and that auratoxin II 35.8% protein and 48.0% polysaccharide.

Korean traditional fermented foods have been diversely developed to enhance taste and flavor while preserving them on a long term basis. For those furthur utilization and development, more efforts to commercialize these products focusing to the consumer's needs should be proceded. In that sence, the fermented foods might be classified into the bioproduct (biofood) and the sterilized. The former defines the non-sterilized such as Kimchi, Jeotkal (fermented fishes), and Jang (fermented soybean products) so as to include various kinds of microorganisms, enzymes and the unknown bioproducts, while the latter defines the sterilized such as soysauce and vinegars proper to the commercialization. In this paper, present R & D status has been reviewed laying stress on Kimchi, Jeotkal and Jang and the mixed fermentation system by the microflora was suggested as a Korean style model for the future R & D direction in these fields.

우리나라 경제는 과거 70년대까지는 주로 노동집약적인 기술에 의존하여 량적 팽창을 하여왔으나 80년대 이후는 대내외 여건상 고부가치의 고급기술에 의한 질적 향상으로 성장해 나아가야 할 형편이다. 이것은 우리나라와 같이 자원및 자본이 부족하고 상대적으로 우수한 인력이 많이 가지고 있는 나라가 선진국으로 도약하기 위해서는 필연적으로 추구해 나가야 할 방향이 아닌가 생각한다. 생물공학은 그특성으로 볼때 이러한 방향에 가장 적합한 분야의 하나로 생각되기 때문에 우리나라가 필수적으로 추구해 나가야 할 것으로 믿는다.
