        Variations of Bioactive Compound Contents and Antioxidant Capacity of Asparagus Seedlings in 23 Varieties

        Antioxidant activity (DPPH and ABTS), bioactive compounds (total phenolic content, totalflavonoid content, rutin, and nicotiflorin), and free amino acids were analyzed in 23 asparagus(Asparagus officinalis L.) varieties at the seedling stage 1 month after sowing. Except for nicotiflorin,the antioxidative activity and bioactive compound content were similar among five varieties(‘MAM’, ‘UC7’, ‘TEM’, ‘POM’, and ‘HEM’). ‘MAM’, ‘HEM’, ‘UC7’, ‘TEM’, and ‘GRM’ containedthe most nicotiflorin among the 23 varieties. Rutin was strongly correlated with antioxidantactivity, especially ABTS activity. The major amino acids in asparagus seedlings were proline,GABA, aspartic acid, and alanine. ‘ASM’, ‘GUM’, ‘MOO’, ‘AVM’, and ‘PUP’ showed the highestfree amino acid contents, and they were different from the varieties with high antioxidant activity. Interestingly, the free amino acid content of ‘MAM’ was the lowest, even though this variety hadthe highest antioxidant activity and bioactive compound content. In contrast, ‘ASM’ showed thehighest free amino acid content, while the antioxidant capacity and rutin and nicotiflorin contents inthis variety were the lowest. The differences in major efficacy among the varieties of asparagus maybe a main factor in variety selection by producers.

        Influence of Temperature during Transport on Shelf-life Quality of Highbush Blueberries (Vaccinium corymbosum L. cvs. Bluetta, Duke)

        Quality changes of highbush blueberry cultivars (Vaccinium corymbosum L. cvs. Bluetta, Duke) were evaluated as influenced by transport temperature. Neither cultivar remained marketable after 6 days or 16 days at room temperature or 10℃. The ‘Duke’ cultivar had slightly lower weight loss than ‘Bluetta,’ but difference between the cultivars was not significant after 12 days of storage. Decrease of fruit firmness was delayed by storage at 10℃for both cultivars, with ‘Duke’ blueberries being firmer than ‘Bluetta’. Soluble solids content was 9.9 ± 0.3 oBrix for both cultivars, which was lower than previous reports, probably as a result of weather conditions before harvest. Organic acid content declined in both cultivars during storage. Hue value of the ‘Bluetta’ cultivar was higher (more purple-blue) than the ‘Duke’ cultivar, but Hunter L and hue angle did not change during storage. Fruit characteristics at harvest and postharvest maintenance of low temperature are clearly important factors affecting the post-harvest fruit quality during transportation and storage.

        정식시기에 따른 고랭지 양배추의 수확 및 저장중 품질변화

        본 연구는 해발 750m 이상의 고랭지에서 재배된 양배추의 정식시기 및 수확 시 기상환경이 품질에 미치는 영향과 수확 후 저장 중 품질변화를 조사하기 위해서 수행하였다. 수확 된 양배추의 품종 별 구중은 정식시기 및 수확시기가 늦으면 구중이 감소하는 양상을 보이며 상품성이 낮았다. 반면 8월 23일(3차)에 수확된 양배추 품종은 정식시기 및 수확시기가 8월 3일(1차)과 8월 13일(2차)에 비해 늦었음에도 불구하고 수확기의 기상환경이 좋아 경도 및 가용성 고형물의 함량이 높았다. 가용성 고형물의 함량은 수확 전후의 기상환경에 영향을 받아 수확 전 3일 이상 강우가 없을때 수확하는 것이 높게 유지하였고, 경도는 늦은 정식 시기가 경도를 낮추는 것으로 나타났다. 양배추의 색도는 수확기에 따른 변화는 일정한 경향이 없었으며, 품종간에도 유의적인 차이는 보이지 않았다. 공시품종 중 수확 시 품질은 ‘Speed king’과 ‘Minix 40’ 품종이 가장 우수하였다. 양배추 저장은 8월 3일(1차), 8월 23일(3차), 그리고 9월 10일(4차)에 수확된 양배추를 상온(25℃, 60% RH)과 저온(3℃, 85% RH)에 각각 저장하여, 수확시기와 수확기의 기상환경이 상온 및 저온저장에 미치는 영향을 확인하였다. 양배추의 생리장해는 수침, 시들음, 냉해가 저장기간 4일경부터 발생하여 상품성을 상실하였다. 양배추 6개 품종의 저장기간은 수확 시 기상환경에 따라 상온저장의 경우 3~5일, 저온저장의 경우 9~10일 정도 가능하였다. 특히 8월 3일(1차)에 수확한 양배추는 수확일 전후의 열악한 기상환경으로 실온 및 저온 저장기간이 가장 짧아 실온 2일 그리고 저온은 4일의 저장기간을 보였다. This study was conducted to investigate the effect of climate conditions during cultivation and harvesting on the quality and storability of fresh bulb cabbage (Brassica oleracea L. var. capitata). Plug seedlings of six cabbage cultivars were transplanted to Gangneung-Wonju University high elevation research station in Gangwon province (780 m above sea level, lat. 37.5°N.) and harvested with four different harvest times like August 3 (1<SUP>st</SUP>), August 13 (2<SUP>nd</SUP>), August 23 (3<SUP>rd</SUP>), and September 10 (4<SUP>th</SUP>), respectively from 50 days after transplanting. Weight loss, Hunter color factors, firmness, and soluble solids content (SSC) of the cabbage bulbs were investigated during storage at 3℃ (85% RH) and 25℃ (60% RH). Decreased bulb weight and poor quality cabbages were apparent at the late transplanting (July 14) and harvest (September 10) respectively. Quality index such as firmness and SSC at August 23 (3<SUP>rd</SUP>) harvested cabbage was better than August 3 (1<SUP>st</SUP>) and August 13 (2<SUP>nd</SUP>) cabbages due to the good weather condition just before harvesting. The cv. ‘Speed king’ and ‘Minix 40’ showed good qualities among the cultivars, especially when the bulbs were harvested during sunny day conditions from one week before harvesting. Also SSC was influenced by weather condition before harvesting rather than transplanting date, while firmness was influenced by transplanting and harvest date. However, the differences among the cultivars were not significant. The potential of storage as maintaining the quality was different, depending on weather conditions at harvest time. Generally the storage periods of six cultivars were around 3~5 days and 9~10 days at room and low temperature, respectively. However, the August 3 (1<SUP>st</SUP>) harvested cabbage lost their marketable quality very fast because of rainy and cloudy weather condition before harvesting and also storability of bulbs was 2 days and 4 days at room temperature and 3℃, respectively. Quality index was also not significant difference among cultivars.

        고랭지 여름배추 품종간 품질 비교 및 저장온도 최적화

        This study was conducted to investigate the quality characteristics of eight Kimchi cabbage cultivars and the effect of cold storage on the quality of two kinds of cabbage cultivars, such as ‘CR-Nongshim’, and ‘Ryouckgwang’. Early planted and harvested cultivars at July showed that fresh weight was lower than late harvested cultivars at September, because early harvesting time of July was heavy rainy season at highlands of Gangwon province. The firmness was more than 10 N for all cultivars and ‘Cheongock’, ‘Sanjanggoon’, and ‘Ryouckgwang’ cultivars had high value of firmness among them. No differences among the cultivars were found in appearance, freshness, and texture evaluations at harvest. Sweetness and bitterness had statistical differences and showed high value in ‘Ryouckgwang’ and in ‘CR-Nongshim’ and ‘Sooho’. Two Kimchi cabbage cultivars such as ‘CR-Nongshim’ and ‘Ryouckgwang’ were stored at 0℃, 2℃, 5℃, and room temperature (25℃) with more than 90% RH. Significant difference was found in weight loss during room and low temperature storage. In general, weight loss of the Kimchi cabbages at room temperature was significantly increased by 15% within 3 days, whereas it was delayed at low temperature until 3 weeks on all Kimchi cabbage cultivars. Firmness of ‘CR-Nongshim’ was higher than ‘Ryouckgwang’ but there was no difference within low storage temperatures. Appearance among the sensory factors was a critical indicator to estimate storage periods. On the point of appearance, storage period at 0℃ was 1 week and 2℃ and 5℃ was 3 weeks and 1 week in ‘CR-Nongshim’ cultivar, respectively. The storage period of ‘Ryouckgwang’ cultivar was 2 weeks, 4 weeks, and 2 weeks, respectively. Conclusively, storage at 2℃ with more than 90% RH was recommended as optimum temperature to maintain quality in both cultivars.

        Nitric Oxide 처리가 저온 저장된 키위과실의 상온 유통 중 품질에 미치는 영향

        The effect of nitric oxide (NO) treatment on the quality of kiwifruit, cv. Hayward, was studied at room temperature after cold storage for one or three months at 0℃. Kiwifruits cold-stored for one month were treated with 200 μL·L<SUP>-1</SUP> NO and subsequently transferred to room temperature to monitor quality changes over the course of their shelf life. Weight loss was high in fruits not treated with NO. Ethylene production was delayed for two days by NO treatment, and respiration rate was reduced to less half than that of the control. The kiwifruits stored for three months were treated with N₂ and 100, 200, or 500 μL·L<SUP>-1</SUP> NO, or air alone. The highest weight loss was observed in kiwifruit treated with 100 μL·L<SUP>-1</SUP> NO. While ethylene production was high in fruits treated with 100 μL·L<SUP>-1</SUP> NO and without the treatment, it was relatively low in the kiwifruit treated with 200 and 500 μL·L<SUP>-1</SUP> NO. Firmness was abruptly decreased in fruits not treated with NO, while the kiwifruit exposed to 200 μL·L<SUP>-1</SUP> NO maintained the s ame level of f irmness for 9 days a t room t emp erature. In addition, growth o f Botrytis cinerea was inhibited by NO as compared with the air and N₂ treatments. Our findings indicate that NO can be used effectively for prolonging shelf life and maintaining fruit quality during distribution after cold storage. The optimum NO concentration for cold-stored kiwifruits was found to be 200 μL·L<SUP>-1</SUP>.

      • 공영도매시장에 반입되는 무의 재배시기에 따른 최적 유통조건 구명

        공영도매시장으로 반입되는 무는 계절과 관계없이 상온으로 유통되며 상온에 노출된 상태에서 경매가 진행되고 있다. 국내에서 사계절 재배되는 무는 재배 및 수확시기에 따라 품질특성이 다르므로 유통 시기의 온도에 따라 환경조건을 달리하면 신선도를 효과적으로 유지할 수 있다. 본 연구에서는 재배시기를 달리한 월동무, 봄무, 여름무의 도매시장에 반입시 최적 유통조건을 설정하기 위해서 실시하였다. 월동무와 봄무는 전라북도 고창지역에서 수확된 것으로 월동무는 1°C 저장고에 저장된 것을 이용하였으며, 봄무는 5월 중순에 수확된 무를 이용하였고, 하절기의 여름무는 고랭지 지역에서 8월말에 수확된것을 실험에 이용하였다. 각각의 월동무, 봄무, 여름무는 상온탑차를 이용하여 공영도매시장으로 운송한 후 다양한 온도조건(월동무, 봄무: 10°C, 15°C, 20°C, 25°C, 상온; 여름무: 15°C, 20°C, 25°C, 30°C, 상온)과 습도 조건(저습, 고습)에 48시간 저장하면서 품질 변화를 관찰하였다. 48시간의 단기간은 무의 중량감모율에는 영향을 주지 않았으나, 골판지 상자로 포장된 무의 경우 저장시간이 경과됨에 따라 골판지상자가 수분을 흡수하여 종이가 찢어지는 등의 문제점이 발생하였다. 월동무와 봄무는 20°C와 상온에 노출될 경우 호흡량의 급격한 증가를 야기한 반면 여름무는 25°C 저온에서 48시간 경과되면서 호흡량의 증가를 보였다. 포장재별로 PE 필름으로 포장한 월동무에서 호흡량이 가장 높았으나 종이상자로 포장된 월동무와 봄무의 호흡량은 높지 않았다. 48시간의 유통기간 동안 품질변화양상을 살펴보면 경도변화와 외관변화의 경우 월동무, 봄무, 여름무 모두 유의적 차이가 없었다. 저장고내 고습유지는 이산화탄소 발생량을 낮추었다. 이상의 결론으로 공영도매시장내 반입되는 월동무와 봄무의 적정 유통조건은 15 ‒ 18°C, 80 ‒ 90% RH처리, 그리고 여름무는 20 ‒ 23°C, 80 ‒ 90% RH처리가 적합한 것으로 판단된다.
