Seventy-nine strains of Enterobacteriaceae isolated from 117 slaughtered pigs (bile, urine, small intestine, cecum and rectum) in 1995 were examined for biotypes and susceptibility to 19 antibiotics with MicroScan WalkAway 40/96. The obtained results were as follows: 1. Among the twenty-two species isolated from the samples, Proteus mirabilis, E. coli and Enterobacter cloacae were commonly encountered. 2. The distribution frequency of isolates from cecum, small intestine, rectum, bile, and urine was 31(38.8%), 25(31.3%), 18(22.8%), 3(3.7%), and 2(2.5%), respectively. 3. A majority of isolates were sensitive to 16 antibiotics, singly or in combination. And these isolates were commonly susceptible to various antibiotics such as Cp, Ts, Azt, Caz, To, Gm, Cfz, Crm, Am and Cfx, in order. Whereas the Salmonella spp was susceptible to Cf, Ti and Pi, and Proteus mirabilis to Imp, Tim, Cft and Cz. Meanwhile, no effect was found to Cf, Ak and Cax. 4. Among the antibiotic resistant strains, a total of 17 reistant patterns was noted and of these Ak Tim 45(57.0%), Ak Am Cf Cfx Cfz Tim 8(10.1%) and Ak Ti Tim 6(7.6%) were frequently encountered.
한국 유아에서 분리한 Bifidobacteria에 의한 발효유의 Conjugated Linoleic Acid (CLA) 함량 증가

인체의 장관에서 유래한 200여 Bifidobacteria 균주를 대상으로 CLA 생산능을 조사한 결과, 공시균주 1종과 국내의 유아로부터 분리한 12개 균주가 기질로 첨가한 LA를 CLA로 전환하였으며, 각 CLA 생산 균주들에 의한 CLA 이성체는 90% 이상이 cis-9, trans-11 CLA이었다. CLA 생산능과 전환율이 가장 높은 Bifidobacterium sp. KHU 141 균주를 사용하여 발효유를 제조하였을 때, 발효유의 CLA 함량은 대조구보다 39.6 ㎎/100 g 증가하여 CLA의 생리활성 효과를 기대할 수 있는 발효유의 생산에 사용할 수 있는 균주로 나타났다. Bifidobacterium sp. KHU 141에 의한 fermenter에서의 발효유 제조 시 lauric acid, myristric acid, palmitic acid, oleic acid 및 linolenic acid 함량은 큰 변화를 보이지 않았으나, LA 함량은 감소하고 CLA 함량은 증가하여 배양 24시간 및 48시간 후에 각각 소비된 LA의 86.0% 및 84.8%가 CLA로 전환되었다. Bifidobacterium sp. KHU 141에 의한 CLA 생산은 배양 24시간과 48시간 사이에 큰 차이가 없었으며, fermenter에서의 CLA 생산능도 bottle이나 시험관을 이용하여 발효한 경우와 같이 안정적으로 유지되었다. More than 200 Bifidobacterium sp. originated from human intestine were investigated for their ability to produce conjugated linoleic acid (CLA). Of the Bifidobacteria tested, 1 of culture type strain and 12 isolated strains from Korean infants showed CLA producing ability. cis-9, trans-11 octadecadienoic acid presented more than 90% of the total CLA isomers produced by the Bifidobacteria. CLA content in fermented milk by Bifidobacterium sp. KHU 141 increased by 39.6 ㎎/100 g, which showed the potential use for producing fermented milk containing high content of CLA. In fermented milk, little changes showed in lauric acid, myristric acid, palmitic acid, oleic acid, and linolenic acid contents, whereas the content of linoleic acid (LA) decreased and the content of CLA increased. Bifidobacterium sp. KHU 141 converted 86.0% and 84.8% of LA consumed to CLA for 24 hr and 48 hr fermentation, respectively. Prolonging incubation from 24 to 48 hours did not appear to enhance CLA formation and CLA producing ability was stable whether bottle, test tube, or fermenter was used for making fermented milk by Bifidobacterium sp. KHU 141.
시판 요구르트 제품 중 Conjugated Linoleic Acid (CLA) 함량 분석 및 상업용 Dairy Starter에 의한 CLA 생산

국내에서 시판 중인 요구르트의 CLA 함량과 상업용 dairy starter 유산균의 CLA 생산능을 조사하였다. 시판 요구르트 중의 CLA 함량은 4.1∼14.8 ㎎/100 g이었으며, 원료 우유 사용비율이 낮아질수록 제품에 함유된 CLA 함량도 낮아지는 경향을 보였다. CLA 함량과 stearic acid, oleic acid, linoleic acid 및 linolenic acid의 함량, CLA 함량과 지방함량간에는 정의 상관관계를 보였다. 상업용 dairy starter 유산균 67균주 중 L. acidophilus 1종, L. casei 1종 및 Streptococcus thermophilus 3종 등 모두 5 균주가 기질로 첨가한 linoleic acid로부터 CLA를 생성하였다. 또한 생성된 CLA는 cis-9, trans-11 이성체가 70% 이상으로 대부분을 차지하였다. 이들을 이용한 발효유는 대조구에 비해서 1.7∼2.6 ㎎/100 g의 CLA 함량의 증가를 보였으며, CLA 전환율은 6.1∼8.6%<br/> 였다. Conjugated linoleic acid (CLA) concentrations of commercial yoghurts and the ability of dairy starter cultures to produce CLA were investigated. The CLA contents of yoghurts were in the range of 4.1∼14.8 ㎎/100 g. CLA contents in yoghurts depended on the amount of milk used for raw material. Regression test showed positive correlations between CLA concentrations and selected fatty acids (stearic acid, oleic acid, linoleic acid and linolenic acid) of lipids in yoghurts. Among the 67 commercial dairy starter cultures tested, one of Lacto-bacillus acidophilus, one of Lactobacillus casei and three of Streptococcus thermophilus were found to be capable of converting free linloeic acid to CLA and cis-9, trans-11 octadecadienoic acid presented more than 70% of the total CLA formed. The CLA conversion rate of the screened strains ranged from 6.1% to 8.6% in whole milk for 24 hours at 37℃.
