The purpose of this study is to estimate the fluidity of mortar with a new viscosity modifying admixture. For this pupose, selected test variables were the ratio of water to cement and cement to fine aggregate, contents of superplasticizer and viscosity modifying admixture. As a rusult of this study, it is considered that the loss of flow with time of mortar occurs much faster with a superplasticizer and no viscosity modifying admixture. Also, it has been found that addition of viscosity modifying admixture to mortar modfies its fluidity and reduces its segregation by increasing the mortar viscosity.

In order to determine optimum condition of the manufacture and the storage for Japanese apricot wine, this experiment was carried. The Japanese apricot wine was manufactured by different ethanol concentration variety{20% (a), 25% (b), 30% (c), 35% (d), 40% (e) and 50% (f)}and added 20% (B) or 30% (C) per Japanese apricot weight. We examined the physicochemical properties and sensual evaluation of the Japanese apricot wine at the different stored days (30 day, 50 day, 60 day, 70 day, 90 day, 120 day, 180 day and 360 day). 1. The physicochemical properties and sensual evaluation of the Japanese apricot wine was manufactured by ethanol concentration from 30% to 40% and added 20% sugar per Japanese apricot weight for extraction is good. Also the Japanese apricot wine was stored 90∼120 days at room temperature is good. 2. The optimum condition of the manufacture and the storage for Japanese apricot wine are ethanol concentration for extraction, 30∼40% and ethanol volume, twice of Japanese apricot weight.

두유의 유리당 및 amino acids의 함량을 HPLC 및 AAA를 이용하여 분석한 결과는 다음과 같다. 시중 유통 두유에서는 단당류중 fructose와 glucose, 이당류중 sucrose, maltose 및 lactose를 분석하였고, sucrose는 0.78∼9.2 mg/mL의 범위로서 모든 시료에서 측정되었다. 17종의 amino acids를 확인하였으며, 그 조성은 모든 시료에서 비슷하였다. Glutamic acid를 비롯한 산성 amino acids가 전체 amino acids의 40.94%로서 가장 많은 함량이었고, threonine을 포함한 필수 amino acids는 31.78%로 측정되었다. Free sugars and amino acids that contained in soybean milk were analyzed with HPLC and AAA(amino acid analyzer), the results were as follows. Fructose and glucose of monosaccharides, and sucrose, maltose and lactose of disaccharides were detected in soybean milk that collected in market. Sucrose was ranged as 0.78∼9.21 mg/mL and showed in all soybean milk. Amino acids were detected 17 varieties, and the compositions were alike in all soybean milk Contents of acidic amino acids including glutamic acid were 40.94% of total amino acids, and the next order was neutral amino acids as 24.62%. Basic amino acids and aromatic amino acids were 10.83% and 9.20%, respectively. Seven varieties of essential amino acids excluding tryptophan analyzed into 31.78% of total amino acds.
Production of Shikonin by a Hairy Root Culture of Lithospermum erythrorhizon

Shikonin production was examined in a bubble column bioreactor system with the hairy roots of Lithosphermum erythrorhizon. The volumetric productivity was higher than those obtained from other reactor configurations with free or immobilized cells of the same cell line. The productivites of the bubble column reactor, with and without a product absorption trap, were 7.4 and 4.5㎎ of shikonin/ℓ/d, respectively. This indicated the importance of the product removal in the design and operation of the shikonin production system with hairy root culture.

The potential probiotic of a total of 15 Bacillus species isolated from Korean soybean paste (doenjang) was evaluated. Among those tested, the CSY191 and CSY388 strains were selected as probiotic bacteria due to their acid and bile tolerance, respectively. These strains were classified as Bacillus subtilis based on morphological, physiological, and chemotaxonomic features as well as on phylogenetic analysis based on their 16S rDNA sequences. These strains CSY191 and CSY388 showed a significant survival with rate range of 30.0 to 58.3% and of 31.0% to 58.1%, respectively, under artificial gastric acidic conditions at pH 3.0. These CSY191 and CSY388 strains appeared to have high antimicrobial activity against Salmonella Typhimurium, Bacillus cereus and Listeria monocytogenes. Also, methanol extractions (surfactin-like compounds) of strain CSY191 and strain CSY388 activated RAW264.7 microphages and induced the production of nitric oxide (NO) in a concentration-dependent manner, respectively. Therefore, strain CSY191 and strain CSY388 can be used as potential probiotics.

Agrobacterium sp. ATCC 31750으로 부터 glucose가 베타-1,3 결합으로 연결된 미생물 균체외 다당인 curdlan 생산에 관한 연구를 수행 하였다. 탄소원과 질소원으로서 각각 sucrose와 ammonium chloride로 구성된 curdlan 생산 최적배지가 개발 되었다. 실험실 규모의 발효조에서 최적 가동 조건은 pH 조절없이 교반속도 400rpm, 통기량 0.5 vvm이었으며, 96 시간 배양시 54 g/l의 curdlan을 대당수율 52%로 생산할 수 있었다. Production of curdlan-type exopolysaccharide, a microbial polysaccharide composed of β-1,3-linked glucose, by Agrobacterium ATCC 31750 was studied. The fermentation medium was optimized for cell growth and curdlan-type exopolysaccharied production. Sucrose and ammonium chloride were found to be the most efficient carbon and nitrogen sources, respectively, for the production of curdlan-type exopolysaccharide. Optimal agitation speed and aeration rate in a bench-top jar fermenter were found to be 400 rpm and 0.5 vvm, respectively. The pH control was not necessary. As a results, 54 g/l of curdlan-type exopolysaccharide with an yield of 0.52 g/g sucrose was obtained after 96 h of batch culture.

Their applications depend on the properties provided by large molecules in various states of hydration, but mostly depend on the properties they impart to solutions and gels. This article outlines aspects of extracellular microbial polysaccharides. EPSs, in their biosynthesis, properties and developments in special applications.
Isolation and Identification of a High Phenylethanol Producing Yeast

A yeast strain SWT-8, which produces a high phenylethanol from L-phenylalanine, was isolated from plant materials. By morphological, physiological, and biochemical studies, strain SWT-8 was identified Candida sp. and it was named Candida sp. SWT-8. From the fermentation studies with this strain, glucose was most effective carbon for phenylethanol production and its production in a semi-synthetic medium containing 2 g/l of L-phenylalanine reached 1.26 g/l during 48 hrs of cultivation.
