        Soymilk를 이용한 요구르트 제조 및 저장기간 동안의 품질변화에 관한 연구

        This study was performed for analyzing the general composition and the change in the quality of soymilk-derived yogurts manufactured by adding skim milk and whey powder to soymilk heat-treated at 95℃/5 min and 120℃/10 min, respectively. 1. During the storage of soymilk yogurt, the concentrations of total solids, protein, fat, and lactose slightly decreased, whereas viscosity, content of ash and NPN, and the number of lactic acid bacteria remained unchanged. 2. The pH and titratable acidity changed rapidly in all soymilk yogurts after 3 h of incubation. 3. We found 7.8×108 lactic acid bacteria in the control sample, 4.7×108 and 5.02×108 in soymilk yogurt with skim milk, respectively, and 5.9×108 and 5.5×108, respectively in soymilk yogurt with whey powder according to degree of heat treatment with 95℃/5 min and 120℃/10 min. 4. The viscosity of yogurt samples became lower as the heat treatment increased in temperature and in the length of time. 5. The value of sensory evaluation was relatively high in soymilk yogurt with the added skim milk, which was heat-treated 95℃/5 min; however, the value was significantly lower than that of the control sample. 6. Lactose, glucose, and galactose were detected in all samples because lactose is degraded into glucose and galactose within 3 h of inoculation.

      • Curcumin protects retinal pigment epithelial cells against oxidative stress via induction of heme oxygenase-1 expression and reduction of reactive oxygen

        <P><B>Purpose</B></P><P>To determine whether curcumin induces expression of the defensive enzyme heme oxygenase-1 (HO-1) and protects cells against oxidative stress in cultured human retinal pigment epithelial cells.</P><P><B>Methods</B></P><P>Effective concentrations and toxicities of curcumin were determined after 3 h of curcumin treatment with the 3-(4,5-dimethylthiazol-2-yl)-2,5-diphenyltetrazolium bromide assay. Confluent human retinal pigment epithelium cell lines (ARPE-19) were preincubated with curcumin and oxidatively challenged with H<SUB>2</SUB>O<SUB>2</SUB>. HO-1 expression was determined with western blot analysis. To confirm the protective role of HO-1 in oxidative stress, small interfering RNA (siRNA) against HO-1 or inhibitor of HO-1 was treated with curcumin in retinal pigment epithelium cells. Intracellular levels of reactive oxygen species (ROS) were measured with flow cytometry and confocal microscopy. Apoptosis was evaluated with Annexin V-fluoroscein isothiocyanate staining.</P><P><B>Results</B></P><P>Curcumin had little cytotoxicity at concentrations less than 30 μM, and HO-1 expression was the highest at the 15 μM concentration. At this concentration, curcumin also increased the cytoprotective effect against the oxidative stress of H<SUB>2</SUB>O<SUB>2</SUB> through the reduction of ROS levels in human retinal pigment epithelial cells. Curcumin’s effect on the reduction of ROS was mediated by the increase in HO-1 expression.</P><P><B>Conclusions</B></P><P>Curcumin upregulated the oxidative stress defense enzyme HO-1 and may protect human retinal pigment epithelial cells against oxidative stress by reducing ROS levels.</P>

        COPA(cuffed oropharyngeal airway)를 이용한 마취 유도 시 근이완제 사용 유무에 따른 반응

        Background : COPA (cuffed oropharyngeal airway) is a convenient device for airway management in patients undergoing general anesthesia for elective surgery in supine position. It causes less pharyngeal trauma than LMA(Laryngeal mask airway). The purpose of this study was to compare the effect of COPA with and without muscle relaxant. Methods : Forty patients with ASA physical status I and II for elective surgery were randomly assigned to two groups. Anaesthesia was induced with propofol (2 mg/kg) and vecuronium (1.5 mg/kg) and was administered intravenously in Group I but not in Group II. Mask ventilation was done for 5 min with 0: 5 L/min. COPA was placed and heart rate, and systolic, mean, diastolic blood pressure and peak inspiratory pressure were measured at 1 min interval for 5 min. Anaesthesia was maintained with pro- pofol 150 ㎍/kg/min, fentanyl 1 ㎍/kg/hr, O_2 2 L/min and N_2O 2 L/min. Results : There were no significant differences between Group I and Group II in heart rate, systolic, mean and dstolic blood pressure. PIP (Peak inspiratory pressure) was increased and hiccups occurred significantly (p $lt; 0.05) in Group II. Complete airway obstruction occurred in one patient of Group I and severe coughing, body movements and gagging occurred during induction and insertion in Group II. conclusions : With the use of appropriate muscle relaxant, we can use COPA without increased inspiratory pressure or significant complication.         This study is to synthesize analyzed contents of Gui (Jock) , centering around 51 cookbooks written about them, published during the period of 300's from 1600's and 1990. This is designed to helo improve the culture of dietary life by scientifically systematizing. Gui is devided as broil and pan frying as the way of baking. There is Salt Gui, Seasoning soysauce Gui and Seasoning red pepper paste Gui as what season was added. Ganjub Gui is the method of baking not on an openfire but by pan. There were San Jock, Nurumjock and Jijim nurm jock(Nurumi) in Ganjub Gui. Nurumi was the method of pouring juice on boiled or baked materials. Nurumi is found in cookbooks till 1700's and today called in the name Nurumjock. There were 43 types of meat and poultry Gui in all, among them Nobiani(Bulkoki) was most of all. The kinds of meterial used were beef, veal, pork, lamb, deer, rabbit, chicken, duck, pheasant, pigeon, sparrow. The kinds of seasoning used were soysauce, oil, sugar, garlic, powdered sesame, black pepper, green onion, salt, ginger, red pepper paste, soybean paste, liquor, honey, powdered red pepper, the juice of tiny salted shrimps, spices. Other ingredients used include flour, starch, pear juice, citrus juice, grape juice.

      • 부착단백질이 사람 치수세포의 부착 및 증식에 미치는 영향에 관한 연구

        The purpose of this vitro study was to evaluate attachment and proliferation of human pulpal cells to the attachment glycoprotein-coated and non-coated culture dishes. Well known adhesive glycoproteins were used, such as type I collagen, type IV collagen, fibronectin, laminin, and vitronectin. Each adhesive glycoproteins applied onto the culture dishes. In this study, the protein coated and non-coated dishes were classified as each groups. Human pulpal cells cultured onto each culture dishes. After 90 minute, 4 hour and 24 hour incubation attached cells in each group were counted with hematocytometer for evaluation of the attachment of human pulpal cells. The configurations of attached human pulpal cells were done by SEM observation. The results as follows 1. After 90 minute incubation the score of attachment of human pulpal cells was best in laminin-coated group among groups. Then fibronectin, type IV collagen group were better, and allproteins were higher than control. 2. After 4 hour incubation the numbers of attachment of human pulpal cells were most in fibronectin coated group. 3. After 24 hour incubation all of adhesive glycoproteins showed high and similar attachment effect to human pulpal cells. 4. In SEM observation, fibronectin and type IV collagen groups showed well spreaded human pulpal cells, then laminin group was moderately spreaded, and vitronectin group was mildly spreaded as well as control group.

        This study was to synthesize analyzed contents of baked marine products (Gui, Jock ), centering around 47 cookbooks written about them, published during the period of 300's from 1600's and 1990. This was 50 types of Gui in all, among them fish Gui was most of all. The first published book which introduced about the Gui in 「Ju Bang Moon」(16C)& the book which introduced the most various types 13 of marine products Gui is 「Woo ri eumsik」(1948). Materials for marine products Gui were fish, shellfish, crustacean, mollusks and seaweeds. The kinds of seasoning used were soysauce, oil, sugar, garlic, powdered sesame, black pepper, green onion, salt, ginger, red pepper paste, soybean paste, liquor, honey, powdered red pepper, threaded dry red pepper, the juice of tiny salted schrimps, spices. Other ingredients used include flour, starch, pear juice, citrus juice, powdered sticky rice, grape juice.

        학교구강보건실 운영 평가에 관한 연구

        School dental clinic programs is the most active and effective programs to prevent the oral disease for school-children and it is one of the recommended programs by the advanced and welfare countries. In Korea, 15 primary schools have been established the school dental clinics in 1999 as one of the public oral health programs supported by the Ministry of Health and Welfares, and expanded more every year. 11 school dental clinics among 15 were participated for 2-years evaluation project. Such items as the structure, the process, the supply of dental services, the promotion of the health level and the community supports were evaluated through the standardization by governmental suggestions. Average score for 2-years evaluation was estimated as 81.35% as considerably good remark. In detail, score 4.74 for the structure, 22.10 for the process, 19.77 for supply of dental services, 26.22 for promotion of the oral health level and 8.53 for the community supports were calculated. In conclusion, school dental clinic programs in Korea were evaluated considerably good and they should be extended to all primary schools as possible.

      • 석재산업체에서 발생하는 분진의 특성 및 저감방안에 관한 연구

        석재 및 골재를 생산하는 석산사업장은 노천에서의 공정으로 발파, 파쇄, 선별, 운반과정에서, 석가공업체는 절삭 및 가공공정에서 주요한 공해요인으로서 분진이 발생한다. 국내에 분포하는 석·골재업체 중 석산에서 발생하는 분진의 평균농도가 약 3배 이상 높게 나타나며, 작업장의 위치별로는 발파를 위한 천공작업장 부근과 석판재를 절삭하는 갱쏘 작업장 부근에서 가장 높은 부유분진의 농도를 보였다. 채취한 강하 분진시료의 참비중은 전체적으로 2.46~2.72의 범위를 나타내었으며, 평균 입도는 11.6~116 ㎛의 범위를 보였다. 강하분진의 pH는 전체적으로 7.28~9.45의 범위값을 보여 약 알카리성 특징을 나타내었었고, 작열감량(loss on ignition; LOI)은 0.28~6.24 wt%의 범위를 보였으며, 강하분진의 화학조성은 광물조성에서와 같이 대상암석돌의 일반적인 화학조성과 유사한 특성을 나타내었다. 석산에서 부유분진이 대기로 확산되는 것을 억제하기 위하여는 분진의 발생을 최소화 할 수 있는 발파 설계법을 도입하고, 분진의 배출 방향을 통제하여 배출구 부근에서 집진장치나 방진망을 설치하면 효과가 있을 것이다. 석·골재 파쇄, 석가공, 운반 등 전 관정에서 분진의 발생과 확산을 억제하기 위하여 적절한 살수, 분진발생지점에서의 집진, 확산경로에 방진망의 설치 및 운반과정에서 제 규정 준수는 분진이 대기로 확산되는 것을 상당량 억제할 수 있을 것이다. Particulate matters, major pollutants discharged from rock quarries and stone manufacturing plants producing stones and aggregates, are originated in the processes of outdoor blasting, crushing, separation and transportation, and indoor cutting and processing. The average concentration of airborne dust from rock quarries is about three times higher than that from stone manufacturing plants, and drilling sites at rock quarries and gang saw areas show the highest concentration of airborne dust, respectively. Samples of fallen dust whose mineralogical and chemical compositions are related to parent rocks have true specific gravity of 2.46 to 2.72, average grain size of 11.6 to 116 ㎛, pH of 7.28 to 9.45 and LOI of 0.28 to 6.24wt%. A controlled blasting method should be adopted and dust collectors or dustproof nets in the course of dust dispersion will be effective to reduce emission and dispersion of airborne dust from rock quarries. Appropriate water spray, dust collection at dust emission points, dustproof nets, and speed limit of transportation vehicles are helpful schemes to mitigate emission and dispersion of airborne dust discharged in the processes of crushing, processing, transportation and etc. from stone and aggregate industries.
