        교차성을 활용한 상호문화교육 연구-드라마 <SKY 캐슬>을 중심으로-

        Korean dramas (i.e., K-dramas) reveal cultural complexities, thus making themselves useful educational material. Taking the K-drama “SKY Castle” as an example, this study applies an intersectional lens to analyze educational issues within the Korean context and diverse cases of intercultural communication among international students in Korea. By applying intersectionality, it explores the possibilities of cultural education from the perspective of interculturalism to help international students better understand other cultures. The analysis results indicate educational content. Then, based on these suggested contents, we collect the responses of actual learners to research and explore the possibilities of educational application through case studies. Our findings show that the introduction of intersectionality into intercultural education allows learners to view and understand other cultures and individuals from various perspectives as well as recognize the structure of the society surrounding such individuals to create a three-dimensional space and opportunity for critical communication.

        This study aims to educate ethnic Korean learners to facilitate inner change and development by understanding the other and exploring the inner side of themselves. Reading poetry is to face a different kind of the other, and to discover oneself in a relationship with the other. Learners can shape their own experience in mutual communication with the other, and facilitate new self-understanding by comparing and evaluating themselves with others. At this moment, not only the meaning of the object will be different depending on how the learners experience and recognize the object, but also the value and direction of the learners’ life will be different. Therefore, this study aims to design reflective understanding education in Korean modern poetry based on the concept of ‘reflective understanding’ of learners who grasp the object in the course of poetry comprehension, realize the true meaning of it, understand themselves, and facilitate inner growth. In this study, ‘Self-reflection poetry’ is selected as a specific medium to communicate with learners. “Self-reflection poetry” is a work representing the inner story of a poet, which well embodies the poet’s life and reflective attitude toward life. In particular, the fact that reflections in the “self-reflection poetry” text and learners’ reflections through the poetry text are homology. is effective at drawing the learners’ reflective understanding. From this point of view, this study categorized aspects of the reflective understanding of ethnic Korean learners about self-reflection poetry, and suggested principles of the reflective understanding of Korean modern poetry as ‘recognition of the other as an object of comprehension,’ ‘reorganization of multiple experiences through engagement’ and ‘self-identification through communication.’ The aspect of reflective understanding of Korean modern poetry was categorized as follows through the analysis of ethnic Korean learners’ poetry report. First of all, in the course of ‘recognition of the other as an object of comprehension,’ learners used the inner information of poetry text or their own background knowledge to recognize the other. Next, in the course of ‘redefinition multiple experiences through negotiation,’ learners actively sought to explore factors within their experience range that could be common denominators with others, and showed themselves redefinding their multiple experiences by awareness of a problem or sociocultural factors of poetry text. Finally, in ‘meta self-reflection through communication,’ it was possible to identify aspects as learners objectify themselves by comparing with other, or reflection in poetry text was transferred to learners and reorganize their identity by self-referral. Based on these aspects of ethnic Korean learners, deterrent factors and facilitating factors revealed in reflective understanding of Korean modern poetry was analyzed. The deterrent factors of reflective understanding are the fixation of thought, limitation of experience, and conventionalized reflection. Then, the facilitating factor is self-referral through interaction with fellow learners. This study is meaningful in which it sought to facilitate the growth of learners as active reading subjects and to expand the learners’ vision toward the world by experiencing various perspectives through the poetry education, in consideration of justice such as arousing the interest of learners, and triggering creative thinking, and so on. Furthermore, it has a significance of devising poetry education to enhance self-understanding ability of ethnic Korean learners.

        추출 온도와 시간이 옻나무 추출물의 항산화활성에 미치는 영향

        추출 온도와 시간에 따른 옻나무 부위별 추출물의 총 페놀 및 플라보노이드 함량과 항산화활성을 측정하였다. 옻나무 추출물의 총페놀 함량은 추출 온도 160℃에서 47.82 mg GAE/g으로 가장 높았으며, 100℃ 이하의 추출 온도에서는 유의적인 차이가 없었으나 120℃ 이상의 추출 온도에서는 추출 시간 3시간까지는 증가하다가 5시간에서는 감소하였다. 총 플라보노이드는 추출 온도가 증가함에 따라 증가하여 140℃, 1시간에서 8.04 mg CE/g으로 가장 높은 함량을 나타내었다. DPPH 라디칼 소거활성은 추출 시간의 증가에 따라 증가하여 140℃, 3시간에서 34.23 mg TE/g으로 가장 높았으며, 그 이후에는 감소하였다. ABTS 라디칼 소거활성은 DPPH 라디칼 소거활성과 유사하였고 140℃에서 3시간 추출한 수피 추출물에서 51.58 mg AEAC/g으로 높게 나타났다. 총 페놀과 총 플라보노이드 함량과 DPPH와 ABTS 라디칼 소거활성을 감안할 때 옻나무 부위별 효율적인 추출 조건은 추출 온도 140℃와 추출 시간 3시간이었다. Rhus verniciflua was extracted at different temperatures and times, and the extracts were evaluated for contents of total phenolics and flavonoids, and antioxidant activities using DPPH and ABTS radical scavenging activities. Extraction temperatures and times were 80, 100, 120, 140 and 160℃, and 1, 3 and 5 hr. The total phenolic and flavonoid contents as well as antioxidant activities by DPPH and ABTS increased as the extraction temperature increased. The total phenolic contents did not significantly increase at less than 100℃ with different extraction times. However, they were increased at 3 hr and decreased at more than 120°C. The total flavonoid contents reached a high value of 8.04 mg CE/g at 140℃. The antioxidant activity by DPPH increased as the extraction temperature increased and reached high values of 34.28 mg TE/g at 140℃. The total antioxidant activity by ABTS was similar to DPPH. These results presumed that the optimum extraction temperature and time in the process of Rhus verniciflua extraction are 140℃ for 3 hr.

        추출조건에 따른 옻나무 부위별 Phenolics 함량

        추출 온도와 시간에 따른 옻나무의 주요 페놀화합물의 함량을 부위별로 분석하고 이들의 효율적인 추출조건을 확립하였다. 옻나무 추출물의 gallic acid 함량은 추출 온도가 증가함에 따라 증가하여 수피의 160°C, 5시간 처리구에서 385.33 mg%로 가장 높았다. Protocatechuic acid 함량은 수피의 120°C, 1시간 처리구에서 9.25 mg%로 높았지만 그 이상의 온도에서는 크게 감소하였다. Fustin은 120°C 이상에서는 감소하였으며 목질의 100°C, 3시간 처리구에서 206.97 mg%로 가장 높았다. Fisetin은 추출 온도가 증가함에 따라 증가하여 목질부의 160°C, 5시간 처리구에서 가장 높았다. Sulfuretin은 fisetin과 유사한 경향을 나타내었으며, 목질부의 160°C, 3시간 처리구에서 16.40 mg%로 가장 높았다. Butein은 추출 온도 및 추출 시간이 증가함에 따라 증가하였으며, 목질부의 160°C, 5시간 처리구에서 1.49 mg%로 가장 높았다. 통계분석 결과 옻나무의 주요 페놀화합물 추출에 영향을 미치는 요인은 추출 온도가 가장 큰 것으로 나타났다. 유효성분, 추출 수율, 경제성 등을 감안할 때 옻나무 부위별 효율적인 추출조건은 추출 온도 140℃와 추출 시간 3시간이었다. This study investigated changes in phenolic contents of different parts of Rhus verniciflua Stokes (RV) according to extraction conditions. Bark and xylem parts of RV were extracted at 80, 100, 120, 140, and 160°C for 1, 3, and 5 h, respectively. Major phenolic compounds (gallic acid, protocatechuic acid, fustin, fisetin, sulfuretin, and butein) of RV were analyzed. The gallic acid, fisetin, sulfuretin, and butein contents significantly increased as extraction temperature increased. Protocatechuic acid and fustin contents increased as increasing extraction temperature to 120°C and decreased afterward. The gallic acid, protocatechuic acid, and butein contents of bark were higher than those of xylem extracts. The optimal extraction conditions of gallic acid, protocatechuic acid, fustin, fisetin, sulfuretin, and butein were 160°C/3 h (380.22 mg%), 120°C/1 h (9.25 mg%), 100°C/3 h (206.97 mg%), 140°C/5 h (93.84 mg%), 140°C/5 h (16.07 mg%) and 160°C/5 h (1.49 mg%), respectively. These results suggest that the optimum extraction temperature and time considering RV extraction yield and cost are 140°C and 3 h, respectively.

        Effects of high hydrostatic pressure treatment on the enhancement of functional components of germinated rough rice (<i>Oryza sativa</i> L.)

        <P><B>Abstract</B></P> <P>This study was performed to evaluate the enhancement of functional components of germinated rough rice. Rough rice was germinated at 37°C for 6days, and subjected to a high hydrostatic pressure treatment (HPT) at 30MPa for 24h (HP24) and 48h (HP48). Germinated rough rice without HPT (HP0), HP24, and HP48 were analysed for their functional components. The highest γ-aminobutyric acid, total arabinoxylan, and tricin 4′-<I>O</I>-(<I>threo</I>-β-guaiacylglyceryl) ether contents were 121.21mg/100g, 10.6%, and 85.82μg/g, respectively, after HP48 for 2days. γ-Oryzanol contents increased from 23.19–36.20mg/100g (at HP0) to 31.80–40.32mg/100g (at HP48). The highest vitamin B (60.99mg/100g) and E (4.07mg/100g) contents were observed after HP24 for 5 and 2days, respectively. These results suggest that a combination of HPT and germination efficiently enhances the functional characteristics of rough rice.</P> <P><B>Highlights</B></P> <P> <UL> <LI> High pressure treatment (HPT) increased the extractability of functional components. </LI> <LI> HPT accelerated the biosynthesis as an enhancement of the enzymatic reaction rate. </LI> <LI> HPT provided the useful information for utilization of germinated rough rice. </LI> </UL> </P>

        숙성온도와 기간에 따른 도라지의 이화학적 특성과 항산화 활성

        가온숙성조건에 따른 도라지의 이화학적 특성 및 항산화 활성의 변화를 살펴보기 위하여 도라지를 알루미늄호일필름에 포장한 후 60~80°C에서 5~50일간 숙성시켜 pH, 총산도, 갈변도, 5-HMF 함량, 총 폴리페놀 함량, DPPH 및 ABTS 라디칼 소거활성을 측정하였다. 숙성온도와 기간이 증가함에 따라 도라지 물 추출물의 pH는 5.22에서 4.17까지 감소하였으며, 총산도는 0.265에서 0.998 lactic acid eq%까지 증가하였다. 갈변도와 5-HMF 함량은 숙성온도 및 기간에 따라 각각 0.092~1.002와 0.00~50.40 mg/g 범위에서 증가하였다. 총 폴리페놀 함량은 숙성이 진행됨에 따라 0.589~2.358 mg/g 범위에서 증가하였으며, DPPH 및 ABTS 라디칼 소거활성도 각각 0.149~1.244 및 0.354~1.509 mg Trolox eq/g 범위에서 증가하였다. 숙성조건에 따라 이화학적 특성 및 항산화 활성들 간에 높은 상관관계가 있었으며, pH와 총산도는 -0.910(P<0.01), 갈변도와 5-HMF 함량은 0.880(P<0.01), 총 폴리페놀 함량과 DPPH 및 ABTS 라디칼 소거활성은 각각 0.885(P<0.01)와 0.745(P<0.01)로 높은 양의 상관관계를 나타내었다. 이처럼 숙성온도와 기간이 증가함에 따라 페놀성 화합물의 증가로 인하여 항산화 활성 역시 증가하였으며, 80°C에서 15일간 가온숙성 하였을 때 도라지의 항산화 활성을 최대로 높일 수 있을 것으로 판단된다. We investigated the physicochemical characteristics and antioxidant activities of Doragi (Platycodon grandiflorum) at different aging temperatures (60, 70 and 80°C) and for various periods of duration (5, 10, 15, 30 and 50 days). As the temperature and duration were increased, the pH of Doragi water extracts decreased from 5.22 to 4.17, whereas total acidity increased from 0.265 to 0.998 lactic acid eq.%. In addition, browning index went up from 0.092 to 1.002 and 5-hydroxymethylfurfural (HMF) content steeply rose to 50.40 mg/g from its initial zero value with an increase in temperature and duration. The radical scavenging activity of ethanol extracts was enhanced with a rise in temperature and duration as evident from the value of total polyphenol content (0.589 to 2.358 mg/g), DPPH (0.149 to 1.244 mg Trolox eq/g) and ABTS (0.354 to 1.509 mg Trolox eq/g). The correlation between physicochemical characteristics and antioxidant activities was high; the correlation between pH and total acidity showed a r value of -0.910 (P<0.01), whereas between browning index and 5-HMF content, the r value was 0.880 (P<0.01). Total polyphenol content and DPPH and ABTS radical scavenging activity were highly correlated with the r value of 0.885 (P<0.01) and 0.745 (P<0.01), respectively.
