        Vegetable consumption is associated with health benefits. Recently, the interest in these food groups has grown among due to the identification of new compound in their chemical composition. Most of the vegetables are cooked by blanching, boiling, steaming, microwaving before consumed. These cooking processes may change not only food physical characteristics but also chemical composition. The present study was undertaken to investigate the effect of different cooking methods on phytochemical content and antioxidant capacity in Ipomoea batatas (L.) Lam stem. The result of study, Total polyphenol of phytochemical in Ipomoea batatas (L.) Lam stem was 6.88-12.65 mg GAE/100 g and flavonoid was 3.16-10.46 mg CE/100 g. Compared with the raw of Ipomoea batatas (L.) Lam stem, all cooking methods were found to significant correlations between the antioxidant activity assessed by ABTS, DPPH and polyphenol(p<0.05). These results can be provide the basic data how to prevent lose of nutrition in Ipomoea batatas (L.) Lam stem when cooking.

        Inhibitory Effects of Butein on Adipogenesis through Upregulation of the Nrf2/HO-1 Pathway in 3T3-L1 Adipocytes

        Butein is reported to have many biological effects, including anti-fibrogenic, anti-cancer, and anti-inflammatory activities. This study investigated the effects of butein on adipocyte differentiation and the Nrf2/heme oxygenase-1 (HO-1) pathway’s involvement in its anti adipogenic mechanism. Butein treatment reduced protein expression of key adipogenic transcription factors such as CCAAT-enhancer-binding protein α (C/EBPα) and peroxisome proliferator-activated receptor γ (PPARγ). At a concentration of 5, 10, and 25 μM butein, PPARγ was decreased by 78.8, 68.3, and 31.4% and C/EBPα by 87.3, 71.7, and 42.1%, respectively. Butein also increased Nrf2 and HO-1 protein expression in a dose-dependent manner. Treatment with zinc protoporphyrin, a specific HO-1 inhibitor, abolished the inhibitory effects of butein on adipogenic transcription factor protein expression. Therefore, butein inhibits adipogenesis, at least partially, through upregulation of the Nrf-2/HO-1 signaling pathway in 3T3-L1 adipocytes.

      • Antioxidant Content and Properties of Commonly Consumed Dried Vegetables in Korea

        This study evaluated the antioxidant content and activity of fourteen different indigenous Korean vegetables, as well as the relationship between antioxidant content and activity. DPPH and ABTS radical scavenging activities, through their inhibitory effect on lipid peroxidation, as well as their reducing power, have been used to investigate the antioxidant activity of 14 vegetables extracts. Polyphenolic and flavonoid concentrations were measured using spectrophotometric methods. Ascorbic acid analysis was carried out using HPLC. The polyphenolic, flavonoid and ascorbic acid concentrations were measure to be 0.24-11.34, 0.0079-10.84 and 0-71.35 mg·100 g-1, respectively. The extracts of Aster scaber Thunb, Capsicum annuum L. leaves, Cirsium setidens, and Morus alba leaves demonstrated significantly high level of antioxidant activity and higher antioxidant content. In addition, these vegetables demonstrated significant positive correlations between antioxidant activity and polyphenolic and flavonoid content. However, no relationship was found between antioxidant activity and ascorbic acid. Therefore, polyphenolic and flavonoid compounds are major antioxidants in vegetables. Our results could have a direct impact on vegetable consumption by increasing consumer awareness of the health benefits of vegetables.

        Conversion of Rutin to Quercetin by Acid Treatment in Relation to Biological Activities

        De-glycosylation could be an important process for enhancing the biological activities of flavonoids. In this study we investigated de-glycosylation of rutin by acid treatment by comparing hydrolysis of rutin to quercetin with two different solvents and acid concentrations. Antioxidant activity was measured using chemical methods and biological activities were examined in cell-based systems. Rutin hydrolysis occurred more rapidly when 80% ethanol was used as the reaction solvent (as compared to water), and the rate of hydrolysis accelerated as acid concentrations increased. In reactions of rutin with 0.5 M HCl in 80% ethanol for 3 h, almost all the rutin was converted into quercetin. 2,2-Diphenyl-1-picrylhydrazyl, 2,2-azino-bis-3-ethylbenzothiazoline-6-sulfonic acid radical scavenging activities, and reducing powers were correlated with conversion rate. Protective activity in HepG2 cells, anti-inflammatory activity in RAW264.7 cells, and antiadipogenic activity were increased with increased conversion of rutin to quercetin. This study suggests that de-glycosylation of glycoside flavonoids may increase physiological activity and, therefore, enhance its use in various fields.

        데이터 마이닝 기반 대학입시를 위한 학교생활기록부 분석시스템

        대한민국 교육과정과 입시제도는 수많은 변화들을 통해 진화해 왔다. 현재 우리나라 대학진학률이 약 70%에 육박하고 있고, OECD회원국 중 가장 높다. 이러한 환경 속에 대학진학에 관심이 높고 또한 우리나라 교육제도에서 가장 비율이 높은 수시전형 중 학생부종합전형에 필요한 학교생활기록부의 중요성을 높아져가고 있다. 행복은 성적순이 아니지만 적극적인 학교생활을 통해 나의 미래와 행복을 동시에 찾을 수 있다. 학교생활기록부 분석시스템을 통해 자신에게 맞는 흥미와 진로를 찾을 수 있고, 가고자하는 대학, 학과에 맞는 요소들을 분석하고 보완하여 성공적인 진학에 한발 더 나아갈 수 있다. 학교생활기록부의 각 항목을 3가지로 분리시켜 필요 단어와 불필요한 단어들을 구분해 분석한다. 분석한 데이터를 시각화&수치화 하여 학교생활에서 보완할 수 있는 분석시스템을 구축한다. 기존 선행연구로 단어빈도와 유사도 분석을 이용한 다중주제 회의록 요약시스템을 응용하여 다른 요소의 문장을 간결하게 요약하고 단어를 추출함으로써 데이터 마이닝을 통한 분석시스템을 활용할 수 있다. The Korean curriculum and admission system have evolved through numerous changes. Currently, the nations college entrance rate stands at nearly 70 percent, and it is the highest among OECD members. Amid this environment, the importance of school life records is increasing among students who are interested in going to college and who have the highest percentage in the nations education system. Happiness is not the order of grades, but I can find my future and happiness at the same time through active school life. Through the analysis system of school life records, you can find interests and career paths suitable for yourself, and analyze and supplement factors suitable for the university and department you want to go to, so that you can take a step further in successful advancement. Each item in the school records is divided into three categories to analyze the necessary and unnecessary words. By visualizing and numericalizing the analyzed data, an analysis system is established that can be supplemented in school life. An analysis system through data mining can be utilized by concisely summarizing sentences of different elements and extracting words by applying the multi-topic minutes summary system using word frequency and similarity analysis as an existing prior study.

        녹차분말 첨가가 쌀밥의 항산화 활성 및 물성에 미치는 영향

        본 연구는 소비자가 추구하는 기능성 식품의 다양한 개발을 위해 녹차를 쌀밥에 접목시킴으로써 녹차의 생리활성이 부여된 기능성 쌀밥의 개발 가능성 검토를 위해 실시하였다. 녹차분말을 첨가한 쌀밥의 항산화 활성과 생리활성 물질의 변화 및 물성 변화를 알아보기 위해 취반 시 사용되는 물에 녹차분말을 1, 2, 3%로 첨가하여 취반하였다. 이후 제조된 밥은 동결건조 후 메탄올 추출물을 이용하여 항산화 성분 및 항산화 활성을 분석하였다. 또한, 취반 후 물성을 측정하여 그 변화를 알아보았다. 취반 후 녹차분말의 함량이 증가할수록 폴리페놀과 플라보노이드의 함량이 농도 의존적으로 증가하는 경향을 보였다. 쌀밥의 항산화 활성은 첨가한 녹차분말의 농도에 의존적으로 ABTS 및 DPPH 라디칼 제거능력이 증가하는 경향을 보였으며 환원력 및 지질과산화억제 효과에서도 첨가된 녹차분말에 의존적으로 활성이 증가하였다. 반면 녹차분말을 첨가한 쌀밥의 물성을 측정한 결과 녹차를 첨가하였을 때 경도가 증가하는 경향을 보였으나 유의적인 차이를 보이지 않았다. 이 연구 결과를 통해 녹차분말을 첨가하여 취반할 경우 식감을 유지하면서 녹차의 생리활성 물질도 부여할 수 있어 기능성 쌀 가공식품으로서의 적극적인 활용이 가능할 것으로 생각된다. Green tea (Camellia sinensis L.) is consumed as a popular beverage worldwide, particularly in Asia. In this study, the effects of green tea powder addition on the antioxidant activities and texture properties of cooked rice were investigated. Texture analysis was carried out by texture profile analysis. Total polyphenols and total flavonoids were determined using spectrophotometric methods, and antioxidative activities were determined based on DPPH and ABTS radical scavenging activities, reducing power, and lipid peroxidation inhibitory activity. Antioxidant contents and antioxidative activities increased with a higher amount of green tea powder. However, there was no difference in texture properties between cooked rice with green tea powder and the control group. In conclusion, addition of green tea powder to cooked rice would be useful to increase antioxidant contents and antioxidative activities without alteration of texture properties.
