식물성 단백질 자원으로 참깨의 유지 추출 후 분리되는 박은 단백질 함량이 높으며 질 또한 우수하여 단백질 자원으로서 이용 가치가 높이 평가되고 있으나 종실박에 함유된 oxalate와 phytate는 무기질과 결합하여 단백질의 이용과 기능성을 저해하고 페놀 화합물은 유지 추출 과정에서 높은 열 처리로 인해 변색을 유발아여 참깨박의 이용을 비료나 동물 사료로 제한하고 있다. 따라서 본 연구는 참깨박에 존재하는 비 영양성분을 제거시킬 목적으로 한외여과에 의해 농축 단백질을 제조하여 이들의 항영양 성분과 기타 성분을 기존의 산침전 분리단백질과 비교 검토하여 다음과 같은 결과를 얻었다. 산침전 참깨박 분리단백질의 조단백질 함량은 88.7%로서 18.32%의 단백질이 회수되었으나 10K, 30K, 100K 막을 사용하여 한외여과에 의해 제조된 참깨박 농축단백질들의 조단백질의 함량은 각각 84.2%, 82.7%와 76.4%로 단백질 회수율은 36.44%, 34.69%, 31.43%로 각각 나타났다. 참깨박의 알칼리 용액으로 추출한 다음 한외여과에 의한 단백질의 농축은 oxalate와 phytate의 함량을 상당량 감소시켰으며 분획 분자량 100K의 막을 사용한 한외여과의 경우 oxalate는 85%, phytate는 94%까지 제거되었으나, 페놀화합물의 함량은 산 침전 및 한외여과 공정에 의해 감소되지 않았다. 참깨박의 칼슘과 아연의 칼슘은 한외여과 공정에 의해 감소되었으며 특히 칼슘은 한외여과에 의해 99%나 제거되었다. 한외여과에 의해 제조된 참깨박 농축단백질의 필수아미노산 함량은 분리단백질에 비해 약간 감소되었다. Defatted sesame flour is the by-products obtained after oil extracting process. Although this flour has high quality and quantity of protein, its use is limited only for animal feed and fertilization. Sesame seeds contain antinutrients such as oxalate, phytate and phenol compounds and these compounds lower their nutritive value. Recently, ultrafiltration(UF) has been used to concentrate protein from various food sources. This study was carried out to examine the effects of UF with different membrane pore size on the components of sesame protein concentrates including antinutrients and to compare with that of conventional acid-precipitated sesame protein isolate. The protein contents of sesame protein concentrates prepared by UF using 10K, 30K, 100K were 84.2%, 82.7%, 76.4% and the protein yields were 36.44%, 34.69, 31.43% on the basis of defatted sesame flour, respectivily. Whereas sesame protein isolate was recovered 18.3% and the protein contents was 88.7%. Alkali extraction process at pH 9.0 followed by UF technique reduced oxalate and phytate content. There were 85% and 94% reduction of oxalate and phytate content by UF with membrane pore size of 100K daltons, respectively. However, the content of total phenol compounds was not reduced by this method. About 99% of calcium and 50% of zinc were removed by UF with membrane of 100K daltons. Total essential amino acid contents of sesame protein concentrates prepared by UF were decreased slightly when compared with acid-precipitated sesame protein concentrate.
밀크세라마이드와 저분자 피쉬콜라겐 복합 섭취에 의한 피부보습 시너지 효과

본 연구에서는 밀크세라마이드와 저분자 피쉬콜라겐의 복합 섭취가 피부의 수분 및 탄력 변화의 시너지 효과를 나타내는지 연구하였다. 만 39~50세 여성을 밀크세라마이드, 저분자 피쉬콜라겐, 밀크세라마이드 및 저분자 피쉬콜라겐 혼합 섭취군으로 나누어 각 7명씩 4주간 섭취하도록 한 후 밀크세라마이드와 저분자 피쉬콜라겐의 혼합 섭취의 시너지 효과를 평가하고자 하였다. 섭취 전후 피부보습 인자(피부수분량, 경피수분손실량) 및 피부탄력 인자(피부탄력, 진피치밀도)의 변화를 측정하여 섭취군 간 및 섭취 전후 변화량을 비교하였다. 피부수분량과 경피수분손실량에서 밀크세라마이드 및 콜라겐 혼합 섭취군의 변화량이 밀크세라마이드군, 저분자 피쉬콜라겐군 단독 섭취 대비 개선된 것으로 나타났다. 또한 피부탄력 변화에서는 밀크세라마이드 및 저분자 콜라겐 혼합 섭취군의 탄력 증가율이 가장 높게 나타났으나, 군 간의 변화량에서 유의적인 변화는 나타내지 않았다. 진피치밀도 역시 밀크세라마이드군, 저분자 피쉬콜라겐군에서 감소하였으나, 밀크세라마이드 및 저분자 피쉬콜라겐 혼합 섭취에서 진피치밀도가 상승하였다. 다만 콜라겐과 세라마이드의 섭취 기간과 농도에 따라 탄력 섬유망의 형성기간, 피부의 수화 정도에 변화를 줄 수 있기 때문에 섭취기간 및 섭취 양에 따른 추가 연구가 필요할 것으로 사료된다. 본 연구에서는 밀크세라마이드와 저분자 피쉬콜라겐의 복합 섭취가 개별 섭취 대비 피부보습 및 피부탄력 향상에 시너지 효과를 나타냄으로써 피부 건강 소재로 활용될 수 있는 근거가 될 것으로 생각된다. The milk-derived milk ceramide (MC) and low molecular fish collagen (LFC) are materials that are effective in skin hydration and elasticity, and are widely used as skin functional ingredients. This study undertook a clinical trial to evaluate the synergistic effects of MC and LFC complex on skin hydration and elasticity. Participants (n=21) were randomly assigned to receive either MC, LFC, or a complex of MC and LFC, twice a day for 4 weeks. Skin hydration, transepidermal water loss (TEWL), elasticity and dermis density were assessed before and after the 4 weeks administration. Compared to the MC and LFC groups, skin hydration and TEWL were significantly improved (P<0.05) in the MC+LFC group after 4 weeks. Both skin elasticity and dermis density also showed improvement in the MC+LFC group after 4 weeks, but was not significantly different. Taken together, these results indicate that the mixture of MC and LFC exerts a synergistic effect in improving human skin hydration, as compared to MC and LFC administration individually.

This study was carried out to examine optimum operation conditions of ultrafiltration for the preparation of sesame protein concentrates. The feed for ultranltration was prepared by alkali extraction of sesame flour at pH 9.0.The permeate rate was improved linearly by increasing the operation temperature and transmembrane pressure, up to 40℃ and 2.0kgf/cm2, but noticeable increase was not observed above this conditions. However, the permeate rate was diminished with increasing the operation time and the removal volume of whey. The permeate rate tended to increase as increasing the membrane p ore size. The average permeate rates of ultrafiltration were 7.49L/m2hr, 10.93L/m2hr, 13.07L/m2hr, respectively, when ultrafiltration was concentrated to VCR 5 by membranes with molecular weight cut-off of 10 K, 30 k, 100 K daltons membrane at the operating temperature 40℃, under transmembrane pressure 2.0 kgf/cm2.

Purpose: To investigate the association of carotid intraplaque hemorrhage (IPH) with acute cerebral ischemic events and progression of stenosis using magnetic resonance (MR) imaging. Materials and Methods: From April 2014 to December 2016, 53 patients underwent carotid plaque MR imaging, including magnetization-prepared rapid acquisition with gradient-echo (MPRAGE) sequence. A total of 66 carotid arteries in 53 patients had carotid stenosis, and they were included in this study. Carotid arteries were classified according to the presence of IPH, the age of hemorrhage, and degree of stenosis. We assessed ipsilateral cerebrovascular event rates and progression of stenosis between the IPH and no-IPH groups. Results: Of the 61 carotid arteries assessed, 34 (56%) had IPH, and 27 (44%) had no IPH. Acute cerebral ischemic events were more frequent in the IPH group (47% vs. 22%, P = 0.045), especially in the < 30%-stenosis group (100% vs. 0%, P = 0.028). However, there was no significant difference in the incidence of ischemic events according to the age of hemorrhage (50% vs. 44%, P = 0.492). Among the 61 carotid arteries, 20 carotid arteries had previously undergone carotid artery imaging and were evaluated for plaque progression. The trend for progression of stenosis favored the IPH group versus the no-IPH group, with a marginal P-value ($20%{\pm}12.7$ vs. $9.6%{\pm}5.7$, P = 0.063). Conclusion: IPH was associated with an increased incidence of acute ischemic events, especially in the mild-stenosis group and it was also associated with progression of stenosis. Evaluation of the carotid IPH by carotid plaque MR could improve discrimination of carotid plaques that cause ischemic events and progression of stenosis.

A family of some capability indices { $C_{p}$(.alpha.,.beta.); .alpha..geq.0, .beta..geq.0}, containing the indices $C_{p}$, $C_{{pk}}$, $C_{{pm}}$, and $C_{{pmk}}$, has been defined by Vannman(1993) for the case of two-sided specification interval. By varying the parameters of the family various capability indices with suitable properties are obtained. We derive tha asymptotic distribution of the family { $C_{p}$(.alpha.,.beta.); .alpha..geq.0,.beta..geq.0} under general proper conditions. It is also shown that the bootstrap approximation to the distribution of the estimator $C_{p}$(.alpha., .beta.) is vaild for almost all sample sequences. These asymptotic distributions would be used in constructing some bootstrap confidence intervals.tervals.
