        This study was conducted to compare the quality characteristics of pork loin from crossbred combination in pigs. The crossbred combination were Y×Y, YL×Y, YL×D and YL×L(L:Landrace, Y:Yorkshire, D:Duroc). In the proximate composition, the moisture content of YL×D was higher compared with the other crossbred combination. The fat content of YL×Y was significantly higher compared with the other crossbred combination(p<0.05). There ware no significantly difference in share force, WHC, dip loss and cooking loss. The lightness (L<SUP>*</SUP>) value of YL×Y was significantly higher compare with the other crossbred combination(p<0.05). The redness (a<SUP>*</SUP>) values of Y×Y was higher compared with the other crossbred combination. In sensory characteristics, the juiciness, tenderness, flavor and overall acceptability of YL×D were higher compared with the other crossbred combination. As results, it is considered that this information about crossbred combination pigs would be used as a basic data for improvement of pork quality.

        This study was conducted to compare the physico-chemical meat quality characteristics of longissimus muscle among domestic purebred pigs. A total of 94 longissimus muscle(20 Duroc, 43 Landrace, and 31 Yorkshire) were used for analysis of meat quality characteristics. Landrace and Yorkshire pigs were significantly higher in the lightness (L*) values than Duroc (p<0.05), whereas redness (a*) and yellowness (b*) values were not significantly different (p>0.05). There were no significant differences in the shear force, water holding capacity and cooking loss among the pigs. The drip loss (48hr) value of Duroc was significantly lower than the Landrace and Yorkshire pigs (p<0.05). The fat content of Duroc was higher than Landrace and Yorkshire pigs (p<0.05). The fat content of Duroc was higher than Landrace and Yorkshire pigs significantly (p<0.05). However, there were no significant differences in the moisture, protein, and ash contents. In the subjective evaluation, the color, marbling and hardness values of Duroc were higher than those of the other pigs (p<0.05). As a result, it is suggested that Duroc pigs is superior in terms of drip loss, marbling and meat color compared with the other two breeds, and this information about domestic purebred pigs would be as a basic data for production of high-quality pork.

        This study was conducted to compare the quality characteristics of pork loin among Varieties of Domestic Purebred Pigs. A total of 336 pork loin (62 Duroc, 90 Landrace, 155 Yorkshire, and 29 Three-way crossbred pigs) were used for analysis of meat quality characteristics. In the proximate composition, the moisture content of Landrace and LYD was significantly higher compared with the other varieties(p〈0.05). the fat content was the highest in Duroc. The pH of pork loin was the highest in Duroc. Share force was the lowest in Yorkshire, while water holding capacity was high in Duroc, Landrace and Yorkshire. Cooking loss was lowest in LYD, Drip loss (24hour) was lowest in Duroc, and LYD was lowest in 48 hours and 14 days. In the subjective evaluation of pork loin according to the varieties, Duroc was the highest in color and marbling, and there was no significant difference in texture(p〈0.05). In sensory characteristics, Duroc showed the highest level in all traits (juiciness, tenderness, flavor, overall acceptability). As results, it is considered that this information about pork loin among varieties of domestic purebred pigs would be used as a basic data for improvement of pork quality.

        발정재귀일령 및 초교배 일령이 돼지의 번식성적에 미치는 효과

        On the basis of the data from 3,127 litters of Landrace and Large white breeds farrowed at S. Swine Breeding Farm from January, 1998 to December, 2000, the effects of weaning to estrus interval(WEI) and age at first mating(AFM) on reproductive traits were estimated. Total number of pigs born and number suckled per litter tended to decrease as the WEI increased from 4 to 10 days, with an estimated regression coefficient of -0.278±0.027 for the total number born and -0.217±0.025 for the number suckled on WEI in day. Litter weight at birth was heaviest in the WEI of 4-5 days and the birth weight of pig was heaviest in the WEI of 7 days. Total number of pigs born was largest in the AFM of 291∼320 days, and was also large in the AFM of 188∼200 days. Number suckled per litter and litter weight at birth were largest in the AFM of 188∼200 days. In this study the breeding females with the AFM of 188∼200 days showed relatively good performance in the total number born, number suckled, litter weight at birth and birth weight of pig, indicating the possibility of breeding the gifts as early as at the age of about 200 days if adequate managements can be provided for the gifts of the improved stocks.

        다형질 개체모형에 의한 한우의 생시 체중과 이유전 증체량의 유전 모수의 추정

        Genetic parameters of birth weight and preweaning gain were estimated using multiple trait animal model on the basis of the data from Hanwoo raised at Hanwoo Improvement Center, National Agricultural Cooperatives Federation from 1990 to 1998. Heritabilities of direct and maternal genetic effects estimated were 0.15 and 0.02, respectively, far birth weight and 0.17 and 0.16 for preweaning gain. Genetic correlations between direct and maternal genetic effects were -0.28 for birth weight and -0.45 for preweaning gain. Genetic correlation between direct genetic effect of birth weight and direct genetic effect of preweaning gain estimated was 0.42 and the correlation between maternal genetic effect of birth weight and maternal genetic effect of preweaning gain was 0.34. The genetic trend estimated as the regression of the breeding value of the trait on year of birth was 0.004±0.0008㎏ per year for birth weight and 0.047±0.0052㎏ for preweaning gain.

        젖소의 체세포 지수와 생산형질에 대한 환경효과와 유전모수의 추정

        Effects of environmental factors and genetic parameters for somatic cell score(SCS) and production traits were estimated based on 4,722 records of Hostein cows at 113 test farms measured from January, 1994 to June, 1999. Calving year, calving season, cooperative and farm had significant effects on the five traits studied, SCS, milk, fat, protein and SNF(solid not fat) production, except for the farm effect on protein production. The SCS was significantly higher in the cows calving in summer than in other seasons. Milk production was highest in the cows calving in winter and lowest in summer. Heritabilities estimated by multiple trait animal model were 0.03, 0.28, 0.28, 0.30 and 0.29, respectively for SCS, milk, fat, protein and SNF production. Genetic correlations of SCS with milk, fat, protein and SNF production estimated were 0.18, 0.21, 0.25 and 0.22, respectively. Genetic correlations among fat, protein and SNF production were positive and high. Phenotypic correlations of SCS with milk, fat, protein and SNF production estimated were very low.
