찾아가는 커피 바리스타 및 제과제빵 프로그램에서 교육 환경에 대한 만족도가 학습향상 수준에 미치는 영향

본 연구는 찾아가는 커피 바리스타 및 제과제빵 평생교육 프로그램에서 교육 환경에 대한 학습자의 만족도가 학습향상 수준에 미치는 영향을 확인하는 것을 목적으로 한다. Y시에 거주하는 학습자를 대상으로 각각 10회기에 걸쳐 진행한 찾아가는 커피 바리스타 및 제과제빵 프로그램의 결과는 다음과 같다. 첫째, 강사에 대한 만족도가 가장 높고, 프로그램 내용에 대한 만족도는 그 다음이며, 프로그램 환경에 대한 만족도는 제일 낮게 평가되었다. 둘째, 사전-사후 평가를 통해서 분석한 결과 유의미한 수준의 학습효과 향상이 있는 것으로 나타났다. 셋째, 학습향상 수준에 미치는 영향을 분석한 결과 강사에 대한 만족도는 지식수준에 유의미한 영향을 미치고, 프로그램 내용에 대한 만족도는 태도수준에 유의미한 영향을 미치는 것으로 나타났다. 반면, 프로그램 환경에 대한 만족도는 지식, 기술, 태도의 모든 부문에서 유의미한 영향을 미치지 않는 것으로 나타났다. 결론적으로 찾아가는 커피 바리스타 및 제과제빵 프로그램에서 교육 환경적 요인이 열악하더라도 강사 및 프로그램 내용에 대한 만족도가 높으면 유의미한 학습향상이 나타난다고 할 수 있다. 본 연구를 계기로 찾아가는 커피 바리스타 및 제과제빵 교육이 더욱 활성화되기를 기대한다.
먹물버섯 에탄올추출물이 Benzo(a)pyrene 투여에 의한 마우스의 간 손상에 미치는 영향

간 독성물질인 benzo(a)pyrene을 투여한 마우스에서 먹물버섯 에탄올 추출물의 간 손상 억제에 미치는 영향을 살펴본 결과, 마우스에 B(a)P 투여로 증가된 혈청 aminotransferase의 활성, 간 조직의 과산화지질 함량과 cytochrome P-450의 활성은 먹물버섯 에탄올 추출물 투여에 의해 유의적으로 감소하였다. 반면에 B(a)P의 투여에 의해 활성이 감소된 glutathions S-transferase와 glutathione 함량은 먹물버섯 에탄올 추출물 투여에 의해 다시 증가되었다. 또한 superoxide dismutase, catalase 그리고 glutathione peroxidase의 활성은 B(a)P의 투여시 그 활성이 각각 유의적으로 증가하였다가, 먹물버섯 에탄올 추출물 투여로 인하여 감소하는 경향을 나타내었다. 이상의 결과에서 먹물버섯 에탄올 추출물은 B(a)P 투여로 감소된 glutathione 함량과 glutathione S-transferase의 증가와 함께 B(a)P 투여로 증가된 지질과산화물 생성의 감소와 여러 항산화적 방어계의 작용을 가진 효소 활성에 영향을 주어 지질과산화 및 간 손상 억제 효과를 가지는 것으로 사료된다. This study was carried out to investigate the inhibiton effects of Coprinus comatus ethanol extract of edible mushroom on liver damage in benzo(a)pyrene (B(a)P)-treated mice. The activities of serum aminotransferase, cytochrome P-450 and hepatic content of lipid peroxide after B(a)P-treatment were increased than those of control, but those levels were significantly decreased by the treatment of Coprinus comatus ethanol extract. Whereas, the hepatic glutathione content and glutathione S-transferase activity were decreased by B(a)P-treatment than those of control, but those were increased by the treatment of Coprinus comatus ethanol extract. Also the activities of superoxide dismutase, catalase and glutathione peroxidase after B(a)P-treatment were markedly increased than those of control, but those levels were decreased by the treatment of Coprinus comatus ethanol extract. These results suggest that Coprinus comatus ethanol extract have a protective effect on liver damage by benzo(a)pyrene through the mechanisms of decreasing lipid peroxide and activities of free radical generating enzymes.
향신료 에탄올 추출물이 김치에서 분리한 Lactobacillus plantarum과 Leuconostoc mesenteroides의 항균성에 미치는 영향

김치의 좋은 맛을 오랫동안 유지하면서 보존성을 증진시키는 방안의 일환으로 김치의 초기 숙성균인 Leuconostoc mesenteroides의 생육에는 무관하면서 김치의 산패에 관여하는 Lactobacillus plantarum을 선택적으로 저해할 수 있는 항균제를 탐색하기 위하여 김치로 부터 젖산균을 분리, 동정하고 10여종의 향신료로부터 얻은 에탄올 추출물의 항균효과를 조사하였다. Paper disc법에 의한 향신료 추출물의 항균력을 측정한 결과 10여종의 향신료 추출물 중 cardamon, thyme 및 cumin의 에탄올추출물이 김치 산패의 주 원인균인 Lac. pantarum을 선택적으로 저해시키는 항균효과를 나타내었다. 또한 cardamon, thyme 및 cumin 추출물의 농도별에 따른 항균활성을 조사한 결과 cardamon 및 thyme 추출물은 4% 이상의 농도에서, cumin 추출물은 1% 이상의 농도에서 항균효과를 나타내었으며, 이들의 추출물들은 김치보존성에 실용적인 가치가 있을 것으로 사료된다. This study was carried out to investigate antimicrobial activities of ethanol extracts from 12 kinds of spices against Lactobacillus plantarum and Leuconostoc mesenteroides related to kimchi fermentation. Lactic acid bacteria were isolated from fermenting kimchi, which were identified as Lea mesenteroides, Lac. sake, Lac. plantarum and Pediococcus pentosaceus. The ethanol extracts of cardamon, thyme and cumin among 12 spices showed antimicrobial activities against Lac. plantarum, while they did not showed the activities against Lea mesenteroides through paper disc method. In addition, the growth of Lac. plantarum was inhibited in MRS broth containing each of cardamon(>4%), thyme(>4%) and cumin(>1%).
