흑참깨분으로 착유한 참기름의 산화안정성

흑참깨분 참기름과 흰참깨분 참기름 및 흰통참깨로 제조한 상업용 참기름의 산화유도기간, 과산화물가, 전자공여능을 측정하여 각 참기름의 산화안전성을 비교하였다. 흑참깨분 참기름의 산화 유도기간은 평균 12.25시간으로 흰참깨분 참기름의 4.37시간에 비하여 2.8배 이상인 것으로 나타났으며, 상업용 참기름은 9.1시간이었다. 저장 12일 후 과산화물가를 비교해 보면 흑참깨분 참기름이 1.3 meq/㎏ oil, 흰참깨분 참기름이 18.2 meq/㎏ oil, 상업용 참기름이 1.7 meq/㎏ oil인 것으로 나타났다. 또한 전자공여능은 흑참깨분 참기름이 각 사용 농도 별로 흰참깨분 참기름에 비해 평균 9% 이상 높은 것으로 나타남에 따라, 동일한 조건에서 흑참깨분 참기름의 산화안전성이 흰참깨분 참기름이나 상업용 참기름에 비해서도 대등하거나 우수함을 알 수 있었다. 이는 흑참깨분 참기름에는 기존의 참기름에 함유된 sesamol 및 sesamolin과 같은 리그난류 뿐 만 아니라 흰참깨분 참기름에는 들어 있지 않은 적갈색 탄닌계 색소 성분이 존재하기 때문인 것으로 예측되었다. Oxidative stabilities of sesame oil prepared from black sesame flour and white sesame flour, and commercial sesame oil prepared from whole white sesame were compared by measuring oxidation induction periods, peroxide values and electron donating abilities of each oil. Oxidation induction period (12.25 hr) of sesame oil prepared from black sesame flour was longer than those (4.37 and 9.1 hr, respectively) of sesame oil from white sesame flour and commercial sesame oil. Peroxide values of sesame oil prepared from black sesame flour, sesame oil prepared from white sesame flour and commercial sesame oil were 1.3, 18.2 and 1.7 meq/kg oil, respectively. We ascertained that the oxidative stability of sesame oil prepared from black sesame flour was superior than sesame oil from white sesame flour as well as commercial sesame oil. This was based on the fact that electron donating ability of sesame oil prepared from black sesame flour was 9% higher than that of sesame oil prepared from white sesame flour at the same concentration. The superior oxidative stability of sesame oil prepared from black sesame flour was expected, not only because only it had lignans such as sesamol and sesamolin, but also because of its brownish coloring compounds such as tannin which were not contained in white sesame flour.

정부산하 비형식교육기관에서의 다문화교육프로그램 개발을 위한 방향성 탐색 : Banks의 성찰적 학습전략을 바탕으로

우리나라가 본격적으로 다문화사회에 접어든 이래로 다문화교육에 대한 다양한 정책에 기반한 실천적 활동이 점차 확대되고 있다. 특히 학교교육에서의 다문화교육은 교육정책이나 교육의 방향에 대한 논의가 활발한 편이나, 비형식교육기관에서는 전국적으로 광범위하게 다문화교육이 실시되고 있음에도 불구하고 다문화교육의 방향에 대한 연구는 별로 이루어지지 않고 있다. 이에 본 연구에서는 국내외 정부산하 비형식교육기관에서의 다문화교육 현황을 분석하고 그에 따라 다문화교육의 대표적인 학자인 Banks의 다문화교육 방법론과 성찰적 활동을 강조하는 Kolb의 경험적 학습이론에 기반한 비형식교육기관을 위한 다문화교육프로그램의 방향성을 제안하였다. 이를 정리하면 교육대상으로서는 이주민과 내국인이 함께 참여할 수 있어야 하며, 내용적으로는 다양한 문화의 평화로운 공존과 문화적 감수성을 익힐 수 있는 내용이며, 방법론적으로는 교육 참여자가 보다 다양한 구성원의 관점에서 사회와 현실을 바라볼 수 있도록 하는 변혁적 접근을 목표로 하여, 단순한 이해의 단계를 넘어서 인식변화와 실천적 행동으로 이어질 수 있도록 해야 한다. 이를 위해 정부산하 비형식교육기관의 특성을 반영하여 지역과 기관의 특성에 따라 다양한 집단의 관점에서 사안을 바라볼 수 있는 교육프로그램의 운영이 필요하다. 궁극적으로 이러한 요소를 대입한 다문화교육프로그램을 통해 다문화교육이 단순한 문화체험이나 교류를 넘어서 사회 구성원 간의 오해, 차별과 편견을 해소하고, 나아가 우리 사회 구성원들의 다양한 문화적 배경이 우리 사회를 보다 풍부하게 하는 자원임을 함께 인식하며 공존하고자 하는 사회 통합의 역할을 할 수 있어야 할 것이다. Since Korea has been regarded as a multicultural society in 2006, various governmental policies on multicultural education have been actively practiced. Especially multicultural educations in schools are comparatively more active than those in informal educational institutions affiliated with government in terms of research and practices. However, the nation-wide distribution and diverse educational populations of informal educational institute affiliated with governments take advantage in spreading out and activating multicultural educations to people. This study, therefore, suggested to analyze the current status quo of multicultural education in informal education institutions affiliated with government, which was followed by new directions of multicultural education program development. The educational strategies employed in designing the multicultural education program were based on mostly Banks’ multiculural education methodology which wre supportbed by Kolb’ experiential learning cycle theory. The findings of this study are as follows: First, multicultural education should include both immigrants and local peoples as its participants, while dealing with contents from which participants can learn harmonious coexistence and cultural sensitivity and grasp the society and reality from viewpoints of various members; Secondly, both contents and methods of the multicultural education should bring about the perception changes and behavioral practice of people. To achieve that goal, the education program should employ education strategies based on reflective thinking and activity theories of both Banks and Kolb. Ultimately, the multicultural education program developed by these two features might increase the possibility of social integration where misunderstanding, discrimination, and prejudice among social members can be resolved, and all of social members with multicultural backgrounds are considered as beneficial resources for the development and richness of our society.

문화다양성 역량강화를 위한 연수 프로그램 개발 및 적용 연구 : 문화기반시설 종사자를 대상으로

Enhancing cultural competence of the staffs of culture-based public organization is important because their authentic understanding of cultural diversity will lead to the better opportunity of providing culturally appropriate services to the community. This research in this context purposed to develop an educational program of cultural diversity for the staffs of the culture-based public organization and to analyze the result of implementation. As for the contents, this program deals, beyond focus on race and ethnicity, with diverse cultural groups and categories which include gender, generation, class, sexuality, language, North Korea defectors and ethnicity as well. Learning resources used in this program are basically from genres of art and culture, for the purpose of providing both fun and seriousness to the program. The methods of this program also attempts to employ educational methods such as continuous self-reflective thinking and actions, equal and active participation of the learners within collaborative learning environments, and experiential learning for self-expression, which have been emphasized by many researchers of multicultural education. This program consists of total 30-hour four sessions. Yet, 10-hour pilot program as a pilot study was implemented on February 22-23 in 2013 to 29 persons. Through the analysis of both the pre- and postmindmaps, and reflection journals, it was found that the participants enhanced mindset changes as well as understanding of cultural diversity. 21세기 문화다양성의 사회를 사는 우리에게는 다양한 문화의 가치를 인정하고 그것을 자신과 사회의 발전을 위한 창의적, 생산적 에너지로 바꿀 수 있는 문화적 감수성과 문화적 문해력이 필수 역량이 된다. 이러한 때, 다양한 대상에게 문화다양성 프로그램을 제공하는 문화기반시설 종사자들의 문화다양성 역량강화가 중요하게 된다. 이에 본 연구에서는 문화기반시설의 종사자를 대상으로 인식변화 및 공감에 기반한 문화다양성 역량강화 연수프로그램을 개발하여 시범 운영하고 그 결과를 분석 평가하였다. 본 연구에서의 문화다양성의 개념은 UNESCO의 문화다양성 협약에 근거하였으며 언어, 성, 계급, 북한이탈주민, 인종, 장애 등의 세부적인 주제를 중심으로 개인과 사회를 아우르는 본질적인 접근을 시도하였다. Banks의 다문화교육이론 중 성찰적·변혁적 접근에 기반하여 연수프로그램을 설계하였으며, Kolb의 경험적 학습사이클을 활용하여 성찰적 교육 프로그램 개발을 구체화하였다. 또한, 팀 중심의 협력적 학습 환경 안에서 적극적인 자기표현과 체험, 자기 성찰과 반성적 활동 등이 지속되도록 구성하였다. 연수 프로그램은 총 30차시로 개발되었으며, 개발된 프로그램을 10차시로 압축하여 2013년 2월 22~23일 양일에 걸쳐 29명을 대상으로 시범연수를 운영하였다. 연수의 평가는 마인드맵과 성찰일지 분석을 통해 이루어졌으며, 그 결과, 연수 참여 후 문화다양성에 대한 이해가 추상적인 이해에만 그치는 것이 아니라, 연수생의 삶과 업무현장에서의 변화와 적용의 의지로 확장되는 것을 확인하였다.

MapAppGen: Drupal 기반 맵 응용 생성기

Google을 시작으로 포털 사이트들이 Maps API를 공개하면서 맵 응용에 대한 수요가 급증하고 있다. 맵 응용의 개발은 대부분 수작업으로 이루어지고 있기 때문에 맵 응용의 생산성이 떨어질 뿐만 아니라 유지·보수에도 많은 시간과 노력이 요구되고 있다. 우리가 설계하고 구현한 MapAppGen은 ModuleGen, IndexGen, MapGen으로 구성되며 맵 응용을 자동으로 생성한다. MapAppGen은 Google Maps API를 사용하여 CMS(Content Management System) 중의 하나인 Drupal에 적용 가능한 모듈들을 생성해 맵 응용에 대한 생산성을 향상시켜 준다. MapAppGen처럼 맵 응용을 위해 Drupal 모듈을 생성하는 생성기는 현재 존재하지 않으며 Gmap이나 NodeMap과 같이 고정된 맵 인터페이스 모듈들은 존재한다. 그러나 Gmap이나 NodeMap 모듈은 Drupal의 기본 컨텐츠 타입 모듈에 의존하기 때문에 사용자는 원하는 지형/지물 컨텐츠 타입을 생성해 활용할 수 없고 지형/지물들을 유형별로 맵 상에 표시하고 연관된 컨텐츠들을 검색할 수도 없다.

맵 응용을 위한 Drupal 모듈 생성기(MapModuleGen)

맵 응용은 단순한 맵 검색을 뛰어 넘어 사용자의 특정 기호에 맞게 발전하고 있으며 Google을 시작으로 포털 사이트들이 Map API를 공개하면서 맵 응용에 대한 수요가 급증하고 있다. 그러나 현재 대부분 맵 응용의 개발이 수작업으로 이루어지고 있기 때문에 맵 응용의 생산성이 떨어질 뿐만 아니라 유지ㆍ보수에도 많은 시간과 노력이 요구되고 있다. 우리가 설계하고 구현한 MapModuleGen은 ModuleGen, IndexGen, MapSearchGen으로 구성되는 맵 응용을 위한 Drupal 모듈 지동 생성기이다. MapModuleGen은 Google Map API를 사용하여 CMS(Content Management System) 중의 하나인 Drupal에 적용 가능한 모듈들을 생성해 맵 응용에 대한 생산성을 향상시켜 준다. MapModuleGen처럼 맵 응용을 위해 Drupal 모듈을 자동 생성하는 생성기는 현재 존재하지 않으며 Gmap이나 NodeMap과 같이 고정된 기능을 제공하는 맵 인터페이스 모듈들은 존재한다. Nowadays, map applications are supporting not only map search functions but also user demand-oriented functions. The need for map applications has been even more increased since the Google opens up their Map API. But, it takes much time and effort to write and maintain a map application because most job for writing a map application is manually done, resulting in the poor map application productivity. We designed and implemented a Drupal module generator that consists of the ModuleGen, IndexGen and MapSearchGen tools for map applications. The MapModuleGen that uses Google Map API enhances the map application productivity by generating the modules that can be applied to the Drupal that is one of Content Management Systems(CMS's). For map applications, there exists no module generators like the MapModuleGen even though the Drupal supports the Gmap and NodeMap modules that have fixed map functions.
