꽃송이 버섯을 이용한 의약품 및 건강기능성 식품 개발을 위한 기초자료의 목적으로 자실체의 미네랄, 아미노산 및 비타민 함량을 조사하였다. 꽃송이버섯 자실체의 건조중량 100g을 기준으로 조사한 미네랄성분은 K, P, Na, Mg가 주성분을 이루었으며 이 중 K가 1,299.44 mg로 가장 많이 함유되어 있었다. 유리아미노산의 총 함량은 3,233.45 mg이며 이중 glutamic acid 724.46 mg로 함량이 가장 높았고 전체 유리아미노산의 22.5%를 차지하였다. 총 아미노산의 함량은 8,230 mg이며 이 중 glutamine와 glutamic acid의 합이 1,960 mg로 전체 구성아미노산의 23.8%를 차지하였고 구성아미노산 중 필수아미노산은 2,985 mg이었다. 검출된 8가지의 비타민 중 vitamin E 408.5 mg, vitamin C21.58 mg로 높은 함량을 보였고 특히 칼슘보충에 도움을 주는 vitamin $D_3$은 0.166 mg로 곰보버섯보다 3배 이상 높은 함량을 나타내었다. The nutritional composition of fruiting body of Sparassis crispa has been analyzed for medicinal and edible uses. Minerals in S. crispa were found to be as follows; potassium (1,299.44 mg), phosphorus (104.73 mg), sodium (98.21 mg), magnesium (54.86 mg), calcium (8.39 mg), iron (7.61 mg), zinc (6.37 mg), copper (1.31 mg) and manganese (0.63 mg) based on 100 g of mushroom dry weight. In 20 kinds of total amino acids found in S. crispa, sum of glutamic acid and glutamine content was the highest (1,960 mg/l00 g) and sum of aspartic acid and asparagine, tryptophan, leucine and alanine were followed. Concerning free amino acids, glutamic acid, tryptophan, glutamine and aspartic acid were dominant. Among 8 vitamins detected, the vitamin E content was the highest (408.5 mg) based on 100 g of mushroom dry weight, then vitamin C, niacin and pantothenic acid were followed.

For the development of functional food and cosmetics using hot water extract of Muraenesox cinereus’s skin, contents of vitamin, amino acid and element, and antioxidant activity were investigated. The results are shown as follows: among vitamins, A(0.21mg/100 g), C (78.12mg/ 100 g), D3 (0.03 mg/100 g), E (1.97 mg/100 g) and Niacin (2.53mg/100 g) were detected, respectively.Mineral contents were an order of K > P > Na >Mg > Ca > Fe and Zn. Contents of total amino acids were an order of Pro > Gly > Arg > Glu > Phe > Ala. Especially, the sum of total amino acids was 27.17 mg/100 mL, which was about 4.0 fold higher than that of free amino acid. DPPH radical scavenging activity of hot water extract of M. cinereus’s skin at 25 mg/mL was 63.5% and did not increase at above 50 mg/mL. Activities of antioxidant enzymes in the liver of ethanol-treated rats using hot water extract of M. cinereus’s skin were investigated. Compared to control group, activities of ADH and GSH-px were decreased. In the case of CAT and SOD activity, they were increased. These results showed that the hot water extract of M. cinereus’s skin can be applied to raw macterial for functional food and cosmetics.
