        멸치액젓을 이용한 양조간장의 발효과정 중 이화학적 성분변화

        양조간장은 탈지대두와 소맥을 혼합하여 만든 제국 즉 코오지에 염수를 혼합하여 발효숙성시킨 제품으로 오래 전부터 가정에서 많이 이용되고 있다. 그러나 양조간장을 발효한 후 간장의 맛을 내기 위해서는 산분해간장(아미노산간장)을 혼합하고 또 물엿, 과당 등의 조미성분을 혼합하여 제조한다. 소비자들은 이러한 인위적인 첨가물에 의해서 맛을 내는 것에 거부감을 가지고 있다. 따라서 천연 그대로에서 다량의 맛 성분을 함유하고 있는 멸치액젓을 양조간장의 원료로 사용함으로써 간장의 질도 향상되며, 맛에 있어서도 천연의 맛을 가질 수 있기 때문에 소비자들로 하여금 보다 신뢰를 받을 수 있으리라 생각한다. 따라서 본 실험은 양조간장의 품질향상을 목적으로 맛을 내는 핵산 성분이 다량 함유된 멸치액젓을 이용하여 양조간장을 제조하여 발효 중 이화학적 품질변화를 측정하였다. 발효 중 총질소, 가용성질소 뿐만 아니라 모든 실험구에서 높게 나타났다. 미생물 변화에 있어서는 호기성균, 젖산균 그리고 혐기성균 모두 비슷한 경향을 나타내고 있다. 핵산과 아미노산 함량도 대조구에 비교해서 처리구가 높게 나타났다. 따라서 양조간장의 제조시 염수를 대신하여 멸치액젓을 이용하는 경우 발효기간의 단축의 가능성을 보여주고 있으며 양조간장의 질의 향상에 있어서도 우위를 가지는 것으로 나타났다. Soy sauce has a long history used as a food ingredient. However, hydrolyzed vegetable protein, mono-sodium glutamate, starch syrup, and fructose are added to soy sauce during fermentation for the taste and flavor of product. But consumers have been reluctant to the taste of these artificial additives. In this experiment, anchovy sauce was used to prepare soy sauce to enhance the quality and brine was used as a control. To evaluate the quality of soy sauce added with anchovy sauce, total nitrogen (TN) and soluble nitrogen contents, total solid contents, total sugar and reducing sugar, lactic acid content and protease activity were monitored during fermentation. Total microbial numbers and lactic acid bacteria were not significantly changed among the cases. Aerobic and anaerobic microorganisms, and lactic acid bacteria were not significantly changed among the cases we studied. For the total sensory test, it was also estimated that the cases using anchovy sauce were superior to the control. From the results mentioned above, we could obtain shorter fermentation period as well as the quality improvement in the case of using anchovy sauce instead of salty water in the fermented soy sauce production.

        함평군 주민의 수돗물불소농도조정사업에 대한 인식 변화

        Objectives: The purpose of this study was to assess changes in local residents` awareness of the water fluoridation program in Hampyung-County for making basis to expand the water fluoridation program to other cities. Methods: A total of 1,206, 647 and 1,334 parents of primary and middle school children in Hampyung-County participated in a self-reported survey in the years 2002, 2005 and 2008. Questionnaires contained items dealing with mainly drinking water, awareness of the water fluoridation program, medium of recognition, approval rate of the program, awareness level of the program`s goals and awareness level of the safety of the program. Results: Awareness of the water fluoridation program in 2008 decreased by 25.0%p compared to 2002. The Proportion of subjects who recognized water fluoridation from neighborhood was increased by 27.5%p after 3 years and 40.0%p after 6 years from the inception of the program. But the mass media decreased by 20.3%p after 3 years and 22.1%p after 6 years from the inception of the program. The approval rate of the program was 64.4% after 3 years and 54.8% after 6 years. The awareness of the program`s goal, which was prevention of dental caries, was 61.3% after 3 years and 48.2% after 6 years. Conclusions: The residents` awareness of water fluoridation program decreased as time goes by from the inception. Programs which will vigorously promote the benefits of the water fluoridation with respect to oral health education should be in implemented.

        치과대학 예방치학 교과목 교육과정 개편 후 강의,실습평가 결과 변화

        To improve effective curriculum of preventive dentistry instruction at dental school, the authors developed the evaluation questionnaire of ``preventive dentistry`` subject in the sophomore class. 252 dental students of Chosun University responded to 36 items with a 5-point-Likert response format after the close of a school term at year 2007, 2008 and 2010. The questionnaires were about general feature of instruction, content of instruction, loads of task, attitude of students to the instruction and the practice exercise. The evaluation was performed at the end of final term periods from 2007, 2008, 2010. The results were as follows. 1. The respondents were generally satisfied with general processing or instruction and contents of preventive dentistry instruction. 2. The respondents took a relatively negative view of attitude of themselves on instruction. 3. More provocative instruction is needed in preventive dentistry instruction and practice. 4. To improve preventive dentistry instruction, development of problem-based learning package at dental schools could be helpful.

        일반모와 미세모의 형태에 따른 인조치면세균막 제거 효과

        Objectives. Toothbrushing is the most fundamental self-help oral care, essential for the removal of dental plaque and food debris which can lead to caries or periodontal diseases. In order for patients to effectively select ideal toothbrush and maintain oral health, this study investigated the efficacy of different toothbrushes available on the market in the removal of dental plaque. Methods. A total of 156 pieces, from each of the three different types of standard manual toothbrushes and three slim-bristle type brushes for adults were randomly selected to be used as experiment units. The bristles of the different brushes were analyzed through a number of different processes. Data analysis was performed with Kruskal Wallis test and Man-Whitney`s U-test, Multiple linear regression at the significance level of alph=0.05. Results. The average surface area from which the artificial dental plaque was removed using the standard manual toothbrushes was 116.41 mm2 and using the slim bristle toothbrushes it was 121.82 mm2. The average buccal surface area from which the artificial dental plaque was removed using the standard manual toothbrushes was 86.93 mm2, and 88.11 mm2 using the slim bristle the slim bristle toothbrushes. The average dental sub-gingival area from which the artificial dental plaque was removed using the standard manual toothbrushes was 4.95 mm2 and 5.32 mm2 for the slim bristle toothbrushes. The average proximal surface area from which artificial dental plaque was removed using the standard manual toothbrushes was 24.79 mm2, and 28.38 mm2 for slim bristle ones. A statistically significant difference between the standard manual toothbrushes and the slim bristle was detected in the proximal surface (p<0.05). For the group consisting of the standard manual toothbrush, It was found that the smaller the difference in the length of implant brush, the greater the amount of plaque that was removed (p<0.05). Conclusions. According to the findings of the study, the factors influencing effective toothbrushing and brush designed indicate a need for further studies.

        국내 중국인 유학생의 구강건강관리행태에 따른 구강건강 삶의 질

        구강건강 삶의 질에 영향을 미치는 구강건강관리행태를 파악하여 중국인 유학생의 구강건강 삶의 질을 향상시키기 위한 방안을 마련하고자 전북 소재 대학교 중국인 유학생 236명을 대상으로 2013년 4월 2일부터 5월 9일 동안 자기기입식 설문조사를 실시한 결과 65.3%가 1년 이내 치과내원 경험이 없었으며, 82.6%가 1년 이내 치석제거를 받지 않았고, 68.2%가 구강보건교육을 받은 적이 없는 것으로 나타났다. 일반적 특성에 따른 OHIP-14는 학년, 건강보험 가입여부, 유학생활 만족도 에서 유의한 차이가 있었고(p<0.05), 구강건강관리행태에 따른 OHIP-14는 주관적인 구강건강상태, 1년 이내 치과내원 경험과 치석제거 경험에서 유의한 차이가 있었다(p<0.05). 구강건강 삶의 질에 영향을 주는 요인으로는 주관적인 구강건강 상태와 1년 이내 치석제거 경험으로 나타났다(p<0.05). 중국인 유학생들의 구강건강 문제 발생 시 의료기관의 편리한 이용을 위해 자국어 번역 안내서 및 의료 전문 통역자의 배치와 대학 차원에서 학교구강보건실의 운영 및 구강건강증진을 위해 실질적으 로 도움이 되는 구강보건교육이 요구된다. To prepare a method for improving the oral health-related quality of life for Chinese foreign students by examining the oral health care behavior affecting the oral health-related quality of life, a self-administered survey was conducted with 236 Chinese foreign students at an university located in Jeonbuk during April 2 -May 5, 2013. The results showed that 65.3% had not visited the dentist within one year, 82.6% had not received scaling within one year, and 68.2% had not received oral health education. In regards to the OHIP-14 according to the general characteristics, there was a significant difference in the school year, health insurance enrollment status and overseas study life satisfaction (p<0.05). In regards to the OHIP-14 according to the oral health care behavior, there was a significant difference in the subjective oral health condition, the experience of having visited a dentist within one year and an experience of having received scaling (p<0.05). As for the influencing factors on the oral health-related quality of life, they were found to be the subjective oral health condition and the experience of having received scaling within one year (p<0.05). For the purpose of helping Chinese foreign students to conveniently use medical institutions when oral health-related problems arise, there is a need for a translated version of the guidebook in their native language, the availability of medical professional interpreters, the availability of a university level oral health service center, and practical oral health education to enhance oral health.

        일부 군인의 구강건강상태인식과 구강증상의 관련성

        본 연구는 일부 군인의 구강건강상태인식과 구강증상의 관련성을 파악하여 추후 군인들의 구강건강향상과 삶의 질 증진에 기초자료로 활용하고자 하였다. 연구의 취지를 설명하여 참여를 희망하는 군인 263명을 대상으로 자기기입식 설문조사를 수행하였다. 수집된 자료는 연구대상자의 일반적인 특성에 대해 빈도분석을 실시하였고, 일반적인 특성과 구강건강상태인식을 교차분석 하였으며, 구강증상이 구강건강상태인식에 미치는 영향을 파악하기 위해 회귀분석을 실시하였다. 그 결과, ‘건강하지 않음’은 29.7%, ‘보통’은 52.9%, ‘건강함’은 17.5%로 나타났다. 구강건강상태인식에 영향을 주는 증상으로는 ‘치아가 아프다(β=0.262), ‘잇몸에서 피가 난다(β=0.170)인 것으로 나타났다. 앞으로 군인들에게 지속적인 구강보건교육을 실시하여 군인들이 구강건강에 관심을 가질 동기부여의 기회를 제공하고, 또한 구강건강에 대한 긍정적인 태도를 갖게 함으로써 구강건강에 대한 지식과 인식도를 높여야 할 것이다. This purpose of study is to develop basic data in improving quality of life along with the enhancement in oral health by evaluate the correlation between perceived oral health status and oral health related symptoms among the Korean soldiers. Questionnaire survey was carried out targeting 263 soldiers. The collected data was performed frequency & percentage, chi-square test and multiple regression analysis. 29.6% of Korean soldiers rated their oral health as poor, 52.9% as fair, and 17.5% as good. According to the regression analysis result of the Symptoms to Perceived Oral Health Status there was statistical significance in ‘tooth pain(β=0.262)’, ‘gingival bleeding(β=0.170)’. Accordingly, the purpose is to offer an opportunity of motivation that soldiers will have interest in oral health, by carrying out continuously oral health education, and is also to increase knowledge and awareness level on oral health by allowing them to have positive attitude toward oral health.
