        탈염 공정이 단무지의 물리화학적 및 관능적 특성에 미치는 영향

        단무지 제조 과정 중 탈염 공정이 단무지에 물리화학적 및 관능적 특성에 미치는 영향을 알아보기 위해 4가지의 소금농도(5, 10, 15, 20%)에서 3개월간 염장한 후 무우의 소금 농도, Ca 함량, 텍스쳐 및 관능적 성질을 25℃에서 탈염기간에 따라 조사하였다. 무우 중 소금농도는 탈염시간이 증가함에 따라, 염장농도가 낮을수록 급격히 감소하여 소금농도의 감소와 탈염시간의 대수값 간에는 직선적인 관계가 성립되었으며, Ca 함량도 비슷한 경향을 보였다. 무우 조직의 견고성은 탈염시간이 증가할수록 견고성도 증가하여 일반적인 김치류 실험과는 상이한 결과를 보였다. 또한 관능적 특성 비교결과 짠맛, 짠냄새 그리고 신맛, 신냄새가 탈염기간 중 감소하였고, 군덕내 및 맛은 거의 변화가 없었으나 염장 농도가 높을수록 그 강도가 매우 낮았다. 덱스쳐 중 사각사각한 성질은 5, 20%염장농도에서 탈염 2일째까지 증가한 후 감소하였고 10% 염장농도에서는 계속 감소한 반면, 15% 염장농도에서는 계속 증가하였다. 따라서 종합적인 기호도 측면에서 보면 탈염 3일째의 염장농도 20% 단무지를 가장 선호하는 것으로 나타났다. Radish roots were salted in 4 different salt concentrations (5, 10, 15, 20%) for 3 months followed by desalting. The effects of desalting process on salt concentration, Ca content, texture and sensory characteristics were investigated during 3 days of desalting period at 25℃. NaCl content in danmuji salted in lower NaCl concentrations decreased rapidly and a linear relationship was found between the decrease in NaCl content and the logarithmic value of desalting time. Changes in Ca content of danmuji also exhibited a similar trend to that of NaCl content. Hardness of radish root tended to increase with an increase in desalting time up to 2 days of desalting and then decreased slightly at the 3ed day of desalting. The results of sensory evaluation revealed that regardless of salt concentration used acidic, salty odor and taste on danmuji decreased significantly during desalting, however, there was very little change in yeast-moldy odor and taste with the intensity being very low in danmuji salted in higher salt concentrations. Among the textural properties, the crispness of danmuji salted in 5, 10 and 20% NaCl concentrations increased up to 2 days of desalting and decreased slightly thereafter, whereas that of radish salted in 15% NaCl concentration increase continously during 3 days of desalting. Total acceptibility was best in danmuji salted in 20% NaCl concentration and desalted for 3 days.

        수삼저장중 이화학적 및 기생물학적 변화

        Physical, chemical and microbiological changes were periodically studied during six-month storage of fresh ginseng under N2, CO2 gas or subatmospheric pressure condition. The results were summarized as follows. 1. The moisture contents of fresh ginseng gradually decreased during the first 2-month storage and thereafter generally reached at equillibrium. 2. There was no significant change in the reducing sugar content in 1-month storage, followed by$.$a decrease in between 2-and 3-month storage. Thereafter, the reducing sugar content increased at the end of 4-month storage. 3. The total sugar content increased significantly during the first 3-month storage. Under CO2 and Nr gas storage, the total sugar content gradually decreased after 3-month storage, while no significant change was observed in the samples stored under subatmospheric Pressure. Amylase activity gradually decreased as storage period increased 4. The content of saponin decreased as storage period increased, but ginsengoide Rf, Rd, Rc and Rb2 increased significantly in 1-month storage. 5. Regardless of storage methods, sprouting of ginseng and growth of microorganisms were inhibited in all samples during the first 4-month storage. However, growth of microorganisms was observed in the rhizome and injured areas of ginseng after 5-month storage in the N2 and CO2 gas atmosphere.

        고려인삼학회의 발전사

        고려인삼학회는 1975년 9월 26일 회원 100여 명으로 창립되었고, 1976년 12월 1일 고려인삼학회지(Korean Journal of Ginseng Science) 창간호를 야심차게 영문으로 발간하였다. 그러나 1977년 Vol. 2 발간 이후 국·영문 혼용으로 변경하였고, 1978년에는 학회 내부사정으로 학술지를 발간하지 못하였다. 1998년부터 학회지명을 Journal of Ginseng Research(JGR)로 변경하여 연 4회 발간하였다. JGR은 2010년 Vol. 34부터 33년 만에 다시 영문 전용으로 출판되었으며, 2010년에 SCIE 및 SCOPUS에 등재되었다. 2012년에는 PubMed Central에 등재되었으며, 2016년부터 Elsevier사에서 JGR을 출판하게 되었다. JGR은 Impact Factor가 계산된 첫해인 2012년에 IF 2.259를 기록하였고, 2015년에 3.898로 3.0을 넘어섰으며 2019년에 5.487에 달해 SCI에 등재된 우리나라 학술지 122개 중 2위를 기록하였다. 한편, Integrative & Complementary Medicine 분야에서 세계 1위를 기록하였다. 고려인삼학회는 1998년부터 4년마다 국제인삼심포지엄을 주관하여 개최하고 있고, 심포지엄 프로시딩을 발간하고 있다. 2007년 인삼정보지인 『고려인삼과 산업』을 연 2회씩 발간하여 현재 제14권 1호를 발간하였다. 2019년 고려인삼학회는 인삼의 인문사회과학적 연구를 조명하기 위한 『인삼문화』를 창간하였다. 고려인삼학회는 『고려삼의 이해』, 『고려인삼연구 20년사』, 『고려인삼학회 30년사』, 『생활속의 고려인삼』 등 많은 도서를 출판하였다. The Korean Society of Ginseng (KSG) was founded on September 26, 1975 with approximately 100 members. The first issue of the Korean Journal of Ginseng Science was published in English on December 1, 1976. However, the journal in English version lasted only one year, and the journal was instead published in Korean from 1978. In 1998, the names of the ginseng society and the journal were changed to the Korean Society of Ginseng and Journal of Ginseng Research (JGR), respectively. Four issues ofJGR were published in that year. JGR has again been published in English from Vol. 34 starting in 2010 and has been indexed in SCIE and SCOPUS since 2010 and PubMed Centralsince 2012. Since 2016, JGR has been published by the Elsevier. The impact factor (IF) of JGR has continuously increased - from the first IF of 2.259 in 2012 to 3.898 in 2015, and 5.487 in 2019. This year, the IF ofJGR ranked second among 122 domestic SCI journals and won first place worldwide in Integrative & Complementary Medicine category. The Society has published the semi-annual news magazine, Korean Ginseng Research and Industry since 2007. In March 2019, in addition to the scientific JGR, the Korean Society of Ginseng published the first issue of the Journal of Ginseng Culture on humanities and social sciences related to ginseng. To enhance international academic exchanges of ginseng, KSG organized for the first time, the 7th International Symposium on Ginseng (ISOG) in 1998. Afterwards, the ISOG has been held every four years, and the proceedings have been published. The KSG has also published various books, including Understanding of Korean Ginseng, Ginseng Research during the Past 20 Years, and 30-year History of the Korean Society of Ginseng, etc.

        자궁경부암 환자의 림프절 전이판정에서 CT 유도하 세침흡인술의 유용성

        Purpose: The purpose of this study was to evaluate the usefulness of CT-guided percutaneous needle aspiration(PCNA) of paraaortic and pelvic lymph nodes in patients with uterine cervical carcinoma. Materials and Methods: CT-guided PCNA was performed in 18 patients with treated cervical carcinoma. Initial clinical stages were CIS in one, Ib in three, IIb in ten, and IIIb in four cases. We used 20 gauge Westcott needles for aspiration. Mean depth from skin to lymph nodes was 10.0 cm in paraaortic group (n=13) and was 7.9 cm in pelvic group (n=5). The size of lymph nodes ranged 1.0-3.0 cm (mean: 1.8) and 1.5-5.0 cm (mean: 2.6 cm), respectively. Results: All cases with paraaortic lymph node enlargement were proved to be metastatic lymphadenopathy. In five cases with pelvic lymph node enlargement, three were proved to be malignancy and two were negative. Among 16 cases with metastatic lymphadenopathy, eight patients were treated with chemotherapy, five with radiation therapy, and three with chemotherapy and radiotherapy. In two cases with negative results lymph nodes were disappeared or unchanged on follow up CT scans. No complications were encountered during CT-guided PCNA procedure. Conclusion: CT-guided PCNA of paraaortic and pelvic lymph nodes is a useful method in determining metastasis from cervical carcinoma and in planning further treatment.

        일제강점기 중 1920-1930년대 신문에 실린 인삼 광고 분석

        The influx of modern culture in the early 20th century in Korea led to numerous changes in the country's ginseng industry. With the development of ginseng cultivation technology and commerce, the production and consumption of ginseng increased, and various ginseng products were developed using modern manufacturing technology. Consequently, competition for the sales of these products became fierce. At that time, newspaper advertisements showed detailed trends in the development and sales competition of ginseng products. Before 1920, however, there were few advertisements of ginseng in newspapers. This is thought to be because newspapers had not yet been generalized, and the ginseng industry had not developed that much. Ginseng advertisements started to revitalize in the early 1920s after the launch of the Korean daily newspapers Dong-A Ilbo and Chosun Ilbo. Such advertisements in this period focused on emphasizing the traditional efficacy of Oriental medicine and the mysterious effects of ginseng. There were many advertisements for products that prescribed the combination of ginseng and deer antler, indicating the great popularity of this prescription at the time. Furthermore, advertisements showed many personal experience stories about taking such products. Mail order and telemarketing sales were already widely used in the 1920s . In 1925, there were advertisements that ginseng products were delivered every day. The advertisements revealed that ginseng roots were classified more elaborately than they are now according to size and quality. Ginseng products in the 1920s did not deviate significantly from the scope of traditional Oriental medicine formulations such as liquid medicine, pill, and concentrated extract. In the 1930s, ginseng advertisements became more active. At this time, experts such as university professors and doctors in medicine or in pharmacy appeared in the advertisements. They recommended ginseng products or explained the ingredients and medicinal effects of the products. Even their experimental notes based on scientific research results appeared in the advertisements to enhance the reliability of the ginseng products. In 1931, modern tablet advertisements appeared. Ginseng products supplemented with vitamins and other specific ingredients as well as ginseng thin rice gruel for the sick appeared at this time. In 1938, ginseng advertisements became more popular, and advertisements using talents as models, such as dancer Choi Seunghee or famous movie stars, models appeared. Ginseng advertisements in the 1920s and 1930s clearly show a side of our rapidly changing society at the time.

        Saponin을 이용한 크림 중의 Cholesterol 제거조건

        In order to prepare low cholesterol cream by treatment with saponin, the optimal conditions of saponin conc., pH of saponin solution, temperature and amount of celite addition were investigated. The results revealed that the optimal conc. and pH of saponin solution were 5% and 5.5 removing 71.67% and 73.40% of cholesterol, respectively. The temperature of reaction with saponin was best at 60$^{\circ}C$, removing 74.34% of cholesterol in this condition. The addition of celite was more effective than non-addition in the removal of cholesterol from cream. The results of this study indicate that saponin is effective on cholesterol removal from cream.
