더덕(Codonopsis lanceolata Bench. et Hook.)은 예로부터 한방에서 염증을 제거하는 작용이 있고, 인후염이나 림프절 결핵에 효과가 있으며 오랫동안 먹어도 독성이 없는 상품(上品)의 한약자원이다. 민간에서는 고혈압 및 당뇨병 치료에도 이용하며, 최근에는 항암효과와 변비 예방 및 치료에 효능이 있는 식이섬유가 다량 함유되어 있는 것이 밝혀져 약용을 겸한 건강식품으로 주목을 받는 산채이다. 본 연구는 등급 외 더덕을 이용하여 발효더덕을 제조한 후 약이성 음식으로의 활용을 위한 가능성을 타진하고자 계획ㆍ수행되었다. 따라서 발효더덕의 영양성분 분석을 통한 식품영양학적 접근을 하고자 분석을 하였다. 식품영양학적 접근에서의 일반성분은 건량기준으로 당질(79.3%) 조단백질 (13.0%), 조지방(2.40%) 및 조회분(5.3%)이었고 각 시료 100 g의 함유 열량은 390.5 ㎉로 분석되었으며, 총 식이섬유소 함량은 건량기준으로 총 당질 중 47.4%를 나타내었다. 또한, 총 18종의 아미노산으로 구성되었으며 필수아미노산(8,118.18 ㎎)과 비필수아미노산(10,913.42 ㎎) 함량을 나타내었으며, 무기질 중 칼륨의 함유량이 가장 높았고 그 다음이 인, 칼슘, 마그네슘 순으로 나타나 알칼리성 재료임을 알 수 있었으며, 지방산 함량의 경우 총 포화지방산(37.86%), 단일불포화지방산(3.84%) 및 다가불포화지방산(35.64%)으로 구성되어 있어 다른 식물류에 비해 불포화지방산의 함량이 높은 것으로 나타났다. 조사포닌의 경우 60.1 ㎎/g이 함유되어 있는 것으로 나타났다. 또한, 유리당 함량의 경우 maltose(15.4%), glucose(8.9%), fructose(0.8%)의 함량을 나타내었다. Dodok (Codonopsis lanceolata Bench. et Hook) root contains abundant pharmaceutical substances and is widely used as a food and a medicinal herb. To identify the major components, fermented Codonopsis lanceolata was analyzed for its chemical compositions prior to their pharmaceutical substances, which were used as the fundamental data. The contents of carbohydrate, crude protein, crude lipid and ash are 79.3%, 13.0%, 2.40% and 5.3%, respectively. The calories of fermented Codonopsis lanceolata was 390.5 ㎉l. Total dietary fiber was 47.4% of total carbohydrates. The protein was composed of 18 different amino acids. The contents of essential and non-essential amino acids were 8,118.18 ㎎ and 10,913.42 ㎎. The K was the largest mineral followed by P, Ca and Mg, which means fermented Codonopsis lanceolata is alkali material. The contents of saturated fatty acids, monounsaturated fatty acids and polyunsaturated fatty acids were 37.76%, 3.84%, and 35.64%, respectively. Therefore, the amount of the total unsaturated fatty acid was higher than that of any other plant. The content of crude saponin in fermented Codonopsis lanceolata was 60.1 ㎎/g. It is expected that a follow up study on fermented Codonopsis lanceolata through development and evaluation of processed foods for their functional properties would provide useful information as a source of medicinal foods.

Purpose: The purpose of this study was to examine the effects of plank exercises with resistance of one-sided hip adduction on abdominal muscle thickness. Methods: Thirty subjects were divided into a group that underwent plank exercises with one-sided hip adduction resistance (n=15) and a group that underwent plank exercises only (n=15). Their changes in abdominal muscle thickness before the experiment (n=15) and three and six weeks after the experiment were analyzed using a two-way repeated analysis of variance at a statistical significance level of ${\alpha}=0.05$. When there was any interaction between the time of measurement and each group, post hoc t-tests were conducted at a statistical significance level of ${\alpha}=0.01$. Results: The results of the experiment showed statistically significant differences in the thickness of the rectus abdominis, internal oblique muscle, and transversus abdominis, depending on the time of measurement and the interaction between the time of measurement and each group (p<0.05). Statistically significant differences were observed in the thickness of the external oblique, depending on the time of measurement, the interaction between the time of measurement and each group, and variances between the groups (p<0.05). Conclusion: The results of this study indicated that plank exercises with resistance of one-sided adduction are effective for increasing abdominal muscle thickness. The study's overall findings will likely be used as basic data for lumbar stabilization exercises and rehabilitation treatment.

Ginsenoside Rp1 (G-Rp1) is a saponin derivate that provides anti-metastatic activities through inhibition of the NF-κB pathway. In this study, we examined the effects of G-Rp1 on regulatory T cell (Treg) activation. After treatment of splenocytes with G-Rp1, Tregs exhibited upregulation of IL-10 expression, and along with dendritic cells (DCs), these Tregs showed increased cell number compared to other cell populations. The effect of G-Rp1 on Treg number was augmented in the presence of lipopolysaccharide (LPS), which mimics pathological changes that occur during infl ammation. However, depletion of DCs prevented the increase in Treg number in the presence of G-Rp1 and/or LPS. In addition, G-Rp1 promoted the differentiation of the memory types of CD4+Foxp3+CD62Llow Tregs rather than the generation of new Tregs. In vivo experiments also demonstrated that Tregs and DCs from mice that were fed G-Rp1 for 7 d and then injected with LPS exhibited increased activation compared with those from mice that were injected with LPS alone. Expression of TGF-β and CTLA4 in Tregs was increased, and upregulation of IL-2 and CD80/CD86 expression by DCs affected the suppressive function of Tregs through IL-2 receptors and CTLA4. These data demonstrate that G-Rp1 exerts anti-infl ammatory effects by activating Tregs in vitro and in vivo.

Changes in antioxidant activity of Rubus coreanus fruit of 3 clones (S13, S14, and S16), which were selected from different sites, were studied at different ripening stages. Antioxidant activities (free radical scavenging activity and reducing power) were determined and their relationships to total phenolic contents and ascorbic acid were analyzed. The highest free radical scavenging activities of 3 clones (S13, S14, and S16) were 79.39, 75.80, and 81.16% at 125 μg/mL, respectively. In general, the antioxidant activity and the related parameters, including total phenolic content and vitamin C content decreased during fruit ripening. Total phenolic contents of the R. coreanus fruits (S13, S14, and S16) were correlated with free radical scavenging activity (R<sup>2</sup>=0.8114, 0.9186, and 0.9714). These results improve knowledge of the effect of ripening on the antioxidant activity and related compounds contents that could help to establish the optimum R. coreanus fruit harvest data for various usages.
