        훈연 처리한 콩으로 제조한 청국장의 관능특성 변화

        본 연구는 고부가 청국장을 개발하기 위해 원료 콩을 훈연 처리하여 청국장을 제조하였고, 훈연 공정이 청국장의 관능 특성에 어떠한 영향을 미치는지 알아보고자 하였다. 증자 후 훈연기에서 2시간 동안 훈연한 대두에 B. licheniformis를 접종한 후 48시간 동안 발효시킨 후 유기산, 유리당, 유리아미노산, 지방산 함량 측정 및 관능검사를 실시하였다. 훈연 청국장의 총 유기산 함량은 $326.5{\pm}8.7mg%$로 미훈연 청국장의 $171.5{\pm}3.4mg%$에 비해 두 배 가량 증가하는 것으로 확인되었으며, 분석된 유기산 중 훈연 청국장과 미훈연 청국장 모두 succinic acid의 함량이 가장 많았다. 훈연 청국장의 총 유리당 함량은 미훈연 청국장에 비해 유의적으로 감소하는 것으로 확인되었으며, 미훈연 청국장과 훈연 청국장의 총 유리아미노산 함량은 훈연 공정에 따라 유의적으로 증가하는 것으로 확인되었다. 또한, Sweet taste, savory taste, bitter taste를 나타내는 아미노산 함량 역시 훈연 청국장에서 유의적으로 증가하는 것으로 확인되었다. 아미노산 18종 중 tryptophan과 cysteine를 제외한 16종이 훈연 청국장에서 유의적으로 증가하는 것을 확인할 수 있었다. 청국장 감칠맛의 주요 물질인 glutamic acid의 총 아미노산에 대한 비율은 미훈연 청국장에서 19.5%를 나타내었으며, 훈연 청국장에서 19.0%를 나타내었다. 미훈연 청국장과 훈연 청국장의 포화지방산, 단일불포화지방산, 다가불포화지방산 함량에서는 훈연에 따른 유의적인 차이는 없는 것으로 나타났다. 관능검사에서는 외관을 제외한 시험된 모든 항목(냄새, 맛 및 종합적 기호도)에서 원료 콩의 훈연에 따른 유의적인 차이를 확인할 수 있었다. This study investigated to changes in the sensory characteristics of cheonggukjang made with smoked soybean. The total organic acid content of cheonggukjang made with smoked soybeans (CSS) increased to about two times in comparison with cheonggukjang made with non-smoked soybeans (CNS). Among the organic acids, the amount of succinic acid was highest for both CSS and CNS. The total free sugar content of CSS ($228.6{\pm}8.8mg%$) was significantly reduced compared to that of CNS ($350.1{\pm}13.7mg%$). Further, the total free amino acid content of CSS ($10,123.3{\pm}301.4mg%$) was significantly increased compared to that of CNS ($8,912.5{\pm}286.5mg%$). The contents of sweet, savory and bitter taste compounds were significantly elevated in CSS when compared to that of CNS. However, there were no significant differences in the total content of fatty acids in CNS and CSS. The sensory evaluation of aroma, taste and overall quality of CSS were significantly increased compared to that of CNS. Taken together, it was expected that a smoking process is useful for the development of new fermented foods.

      • 단순 매트릭스 액정 표시기의 계조화 구동에 관한 연구

        In this paper, as a new grey scale method for simple matrix LCDs, the grey scale method using the new code scheme was proposed. The experiment and the characteristic estimation for the new grey scale method were performed by the simulation of the 16 and 32 grey patterns and the calculation of the driving voltages. As a result of the experiment and the characteristic estimation, the 16 grey mode using the 3 bits code scheme, (7, 5, 3) has the maximum driving voltage which is reduced by 19% and 9.6% each compared with the values in the conventional grey modes discussed in this paper. And the extent of improvement in the driving voltage characteristics is increased much as the number of grey levels increases. On the other hand, as a result of the grey image estimation through the grey pattern simulation, the 3 bits 16 grey mode degrades the characteristics of the grey image more or less compared with the conventional grey method but the extent of this characteristic degradation is much reduced with the increase in the number of grey levels such as 32 grey scale, etc. Consequently the grey scale method using the new code scheme proposed in this paper is confirmed as a method that it minimized the degradation of grey characteristics and improves the driving voltage characteristics effectively. 본 논문에서는 단순매트릭스 액정 표시기의 새로운 계조화 방식으로서 새로운 코드 체계를 사용한 계조화 방식을 제시하였다. 새로운 계조화 방식의 실험 및 특성 평가는 16계조 및 32계조 패턴의 시뮬레이션과 구동전압의 산출을 통하여 수행하였다. 실험 및 특성 평가 결과로서 3비트 코드 체계, (7, 5, 3)을 이용한 16계조 모드는 본 논문에서 고찰되는 기존의 계조 표시 모드들과 비교하여 각각 19% 및 9.6% 줄어든 최대 구동 전압을 갖는다. 이러한 구동 전압 특성의 개선 정도는 표시 계조 수가 증가할수록 더욱 증가된다. 한편 계조 패턴의 시뮬레이션을 통한 화질 평가 결과로서 3비트 16계조 모드는 기존 방식과 비교하여 계조 특성을 다소 저하시키나 이러한 특성 저하 정도는 32계조 등 계조 수가 증가할수록 크게 감소된다. 결과적으로 본 논문에서 제시하는 새로운 코드 체계를 이용한 계조화 방식은 계조 특성의 저하를 최소화하면서 구동 전압 특성을 효율적으로 개선할 수 있는 방식임을 확인하였다.

        미네르바 신드롬과 '시민 지성'의 조건 : 세계화와 정보화의 교차로에서

        This paper examines the 'Minerva syndrome' in the light of negative globalization and the online knowledge production system in South Korea. An online economic commentator, alias 'Minerva' gained fame as a 'citizen intelligence' by forecasting the collapse of Lehman Brothers and critically commenting on the Korean government's economic policies at the height of the 2008 global financial crisis. Minerva's early postings and internet users' responses to them are analysed through CDA(Critical Discourse Analysis) to investigate the way his identity as an economic expert was constructed and evaluated. Minerva achieved netizen's recognition and social authority by 1) maintaining minimal validity requirements of the conventional knowledge system, 2) giving reliable explanations of economic crisis on the verge, 3) expressing his compassion and affection to fellow citizen, and 4) sharing seemingly practical informations for surviving economic crisis for free. Implications of this findings for the changing conditions of intellectuals in Korea is discussed.

        실버타운 입지를 위한 집수구역별 일사량 비교평가

        It is usual to determine silver-town location by people"s experienced knowledge or intuition considering many different type of thematic variables simultaneously. This paper is primarily intended to locate sunny silver-town according to catchment-wide solar radiation as singlekey variable. GIS based solar simulation realistically identified catchment-wide solar radiation in the study area using large scale spatial precision. More than 90% over the worst catchment were identified shadow surfaces while the optimalcat chment was heavily covered by sunny radiation surfaces. It is confirmed that standard GIS technology can offers the viable method of measuring and comparing the catchment-wide solar radiation. Guidelines for a replicable methodology are presented to provide a strong theoretical basis for the standardization of factors involved in locating the sunny silver-town; delineation of catchment boundary, solar simulation, catchment-wide comparison etc. They could be used as an evidence to determine sunny catchment in comparison with other catchment, based solar simulation. It is anticipated that this research output could be used as a valuable reference to confirm the potential of introducing the new concept of "catchment specific solar radiation" to support more scientific and objective decision-making in the process of locating silver town.

        인터넷 토론에서 계급 담론과 그 효과

        While discourses on gender, ethnicity, race have been main objects of the Internet cultural studies, discourse on economic inequality and classes have been rarely explored. This blind spot of the internet cultural studies seems to correspond to the general tendency in cultural studies: the rise of identity politics(politics of recognition) and the marginalization of class analysis(politics of redistribution). Though some researchers insisted the necessity of the 'culturalist class analysis' and did conduct some inquiries into the field, the focus was the ambivalence rather than the expressions of (working) class identities. Adopting analytical concepts of the discoursive psychology and the critical discourse analysis, this article analyzes postings on three issues(the anti-prostitution law, sexual harassment and low fertility) from three internet discussion boards. Interpretative repertoires such as 'the rich get richer and the poor get poorer', 'exploitation of labor', and 'inheritance of poverty' were mobilized to construct the meaning of the issues and justify the opinions of internet users, though employing the language of class was proved to be somewhat ambivalent. 'Class' was articulated as an object of 'wounded attachment' and tended to run against feministic discourses on gender inequality, which suggests the possibility of identity politics of class and its limits.

        산자나무(Hippophae rhamnoides L.) 추출물, 오일 및 이들을 함유한 나노에멀젼의 주름개선 효능 평가

        This study was conducted to investigate antioxidant activity of fruit and leaf extracts of seabuckthorn (Hippophae rhamnoides L) by different solvents and then further evaluated the anti-wrinkle efficacy and cytotoxicity in seabuckthorn extracts, seabuckthorn oil, and the seabuckthorn seed oil nanoemulsion that emulsified the mixture of seabuckthorn leaf extract and seed oil. In total polyphenol and flavonoid contents, the contents of ethanol extracts were higher than that of water extracts. Especially, 70% ethanol extracts was the highest contents. Also, the total polyphenol and flavonoid contents of leaf extract were significantly higher than that of fruit extract. The flavonol and carotenoid contents were similar pattern as well. The DPPH radical scavenging activity of leaf extract was significantly higher than that of fruit extract and also increased in accordance with solvent concentrations. Therefore 70% ethanol extractions of fruit and leaf were optimum condition. In cytotoxicity and matrix metalloproteinase-1 (MMP-1) inhibitory activity, the seabuckthorn leaf ethanol extract and seed oil were no cytotoxicity and significantly MMP-1 inhibitory activity. Nanoemulsion that emulsified seabuckthorn leaf ethanol extract and seed oil has anti-wrinkle efficacy. In conclusion seabuctkorn leaf extract, seabuckthorn seed oil, and seabuckthorn nanoemulsion could be a potential functional source of cosmetics.

        연구논문 : 명조건에서 발아시킨 콩의 발아특성 및 isoflavone함량 변화

        This research was conducted to investigate changes in isoflavone contents and sprouting characteristics of germinated soybeans [Glycine max.] under light condition. The relative wet weight of soybeans increased as germination progressed, and it reached 291.1±14.3% at 60 h after beginning of sprouting. On the other hand, relative dry weight slowly decreased as germination progressed. The length of sprouting rapidly increased as germination progressed. The sprouting rate sharply increased from 12 h to 48 h and reached 96.4±2.5% at 60 h after sprouting. In terms of color, L value did not change until 24 h after the beginning of germination, but it rapidly increased from 24 h to 36 h and did not change thereafter. The a value rapidly increased at 24 h after the beginning of germination and decreased thereafter. The b value rapidly increased at early and last stages and reached 9.0±0.7 at 60 h after the beginning of sprouting. Total isoflavone reached a maximum level at 12 h after the beginning of germination and consistently decreased thereafter. Among isoflavone compounds, m-genistinhad the highest content followed by daidzin and m-daidzin.

        훈연 처리한 콩으로 제조한 청국장의 품질 특성

        본 연구에서는 고부가 청국장을 개발하기 위해 원료 콩을 훈연 처리하여 청국장을 제조하였고, 훈연 공정이 청국장의 품질에 어떠한 영향을 미치는지 알아보고자 하였다. 이를 위하여 증자 후 훈연기에서 2시간 동안 훈연한 대두에 B. licheniformis를 접종한 후 48시간 동안 발효시킨 청국장의 품질 특성을 관찰하였다. 훈연 청국장의 아미노태 질소와 pH는 미훈연 청국장에 비해 유의적인 증가를 나타낸 반면, 수분 함량은 유의적인 감소를 나타냄을 확인할 수 있었다. 색도 측정 결과, 훈연 청국장의 L값과 b값은 미훈연 청국장의 비해 유의적인 증가를 나타낸 반면, a값은 미훈연 청국장에 비해 유의적으로 감소하였다. ${\Delta}E$값은 훈연 청국장이 미훈연 청국장에 비해 유의적인 증가를 나타내었다. 미훈연 청국장과 훈연 청국장의 isoflavone 함량은 각각 $1,590.6{\pm}59.3{\mu}g/g$과 $1,624.6{\pm}53.2{\mu}g/g$으로 훈연 시 약간 증가한 것으로 나타났다. 함량별로는 훈연 청국장과 미훈연 청국장 모두에서 genistin의 함량이 가장 많았으며, glacitin, daidzein의 순으로 나타났다. 훈연 청국장의 세균 개체수는 $7.3{\pm}0.3\;log\;cfu/g$으로 미훈연 청국장($8.1{\pm}0.4\;log\;cfu/g$)에 비해 성장이 억제되었다. 이상의 연구 결과를 바탕으로 원료 콩을 훈연 처리했을 때, 연기성분 중 phenol류의 흡착과 청국장의 수분 감소에 의해 미생물의 성장이 억제되어 저장성이 향상될 것이라 판단되며, 추후 훈연 처리 시 톱밥 종류 및 온도 등 조건을 달리하여 미생물의 생육변화 및 이에 따른 각종 발효산물의 변화에 대한 연구가 진행되어야 할 것으로 판단된다. The objective of this study was to investigate the fermentation characteristics of cheonggukjang made with smoked soybeans. The study found that the amino nitrogen content and pH of cheonggukjang made with smoked soybean (CSS) were significantly elevated compared to that of cheonggukjang made with non-smoked soybeans (CNS). On the other hand, the moisture content of CSS was significantly lower when compared to that of CNS. Moreover, there were no significant differences in the viscous substance content between CNS ($5.8{\pm}0.2%$) and CSS ($5.6{\pm}0.3%$). In terms of colour, the L and b values of CSS were higher than that of CNS, whereas the a value of CNS was higher than that of CSS. Hence, it was confirmed that the total isoflavone contents in CSS ($1,624.6{\pm}53.2{\mu}g/g$) were higher than that in CNS ($1,590.6{\pm}59.3{\mu}g/g$). In both CSS and CNS, the content of genistin was highest followed by glacitin and daidzein. Also, the number of aerobic bacteria in CNS ($8.1{\pm}0.4\;log\;cfu/g$) was higher than that in CSS ($7.3{\pm}0.3\;log\;cfu/g$). Taken together, a smoking process can useful for the development of new cheonggukjang products.
