라면은 1960년대 초까지도 비교적 조리법이 제한되어 있었던 밀가루를 활용한 한국 최초 편의식품으로 중국, 일본, 미국, 한국 음식문화가 섞여 있는 밀가루 음식이다. 본고는 우리나라에서 1960년대 후반부터 본격적으로 소비되기 시작한 라면 변화모습을 고찰하기 위하여 1963~2012년을 6개 시대로 분류하여 대중매체(동아일보, 경향신문, MBC 뉴스) 기사분석을 통하여 정치, 경제, 사회, 문화, 국제 관점에서 변화 모습을 고찰하였다. 총 기사건수는 3,823건, 연평균 76.46건이었다. 각 분야는 다음과 같이 소주제로 정리되었는데 정치분야에서는 〈선거〉 , 〈대북관계〉 , 경제는 〈가격〉, 〈경기〉 , 사회는 〈분식장려〉 , 〈사건사고〉 , 〈기부·봉사〉 , 생활문화는 〈라면소비〉 , 〈극한상황〉 , 〈영양〉 , 국제 분야에서는 〈수출국〉 으로 요약되었다. 이상의 내용을 바탕으로 1기 60년대를 ‘태동기’, 2기 70년대를 ‘기반확충기’, 3기 80년대를 ‘내수성장기’, 4기 88올림픽 이후를 ‘해외진출기’, 5기 IMF 이후를 ‘고급화기’, 6기 2000년대 이후를 ‘전환기’로 명명하였다. 본고 결과를 통해 라면은 50년간 음식의 기본가치인 생리적 가치에 더하여 사회적 가치를 띠고 사회와 밀접하게 관련지어 변화했음을 알 수 있었다. Ramyeon is a wheat-food that has been mixed a dietary culture of China, Japan, American and Korea. Simultaneously it was the first convenience food that made of flour in Korea, which had been relatively few recipes until the early 1960‘s. To examine the changes of Ramyeon which has been consumed in large quantities since the late 1960s, this paper classified 1963~2012 into 6 periods. From political, economic, social, cultural and international perspectives we considered the changes of Ramyeon through the articles analysis of mass media(DongaIlbo, The KyunghyangShinmun, MBC news). The total number of articles was 3,823 with an average of 76.46/y. Each field was summarized as following sub-topics; In political(Election, North Korea), in economic(Price, Economy), in social(Promotion campaign for eating of flour, Incidents, Donation), in cultural(Consumption, Extreme situations, Nutrition) and in international field(Exporting). Each period was named according to the feature; Early stage, Expansion stage, Domestic growth stage, Overseas stage, Advanced stage, Transition stage. Ramyeon has changed in a closely relation with society for past 50 years.

빙수의 근대성에 관한 고찰 : 1897~1945년 신문 기사를 중심으로

본 연구의 목적은 19세기 후반 일본에 의해 들어왔다고만 알려진 빙수에 대해 조선에서 시작된 시기와 그 유행과정, 재료 수급 등을 주로 근대성에 초점을 두어 신문기사 분석을 통해 실증적 관점으로 분석하는 것이다. 조사대상 기간은 1897~1945년이었고 「독립신문」, 「제국신문」, 「황성신문」, 「매일신보」, 「동아일보」등의 신문 기사를 전수조사하였다. 기사 총 건수는 73건이었고 1890년대 1건, 1900년대 7건, 1910년대 12건, 1920년대 28건, 1930년대 24건, 1940년대 1건으로 1920~30년대에 높은 건수를 나타내었다. 광고로는 동일한 내용이 1건 반복되었다. 조선인에 의한 시작은 대략 1900년도 초기로 유추되며 시내 중심가인 한양 종로에서 한양 북서쪽 외곽까지 판매 입장에서는 빙수업은 소자본으로 많은 이익을 남길 수 있어 많은 가난한 조선인에게 환영받는 업종이었으며 구입 입장에서는 여름에 가장 사랑받는 기호식품이었다. 얼음은 천연빙과 인조빙으로 나뉘어졌고 인조빙이 위생적인 면에서 선호되었으나 물량 부족으로 천연빙이 많이 사용되었으며 설탕 대신 사카린이 사용되기도 하여 식품 안전에 문제시 되기도 하였다. 빙수업은 혼란했던 조선말의 근대기에 귀한 여름철의 얼음과 설탕이라는 식재료가 어우러진 식품이었을 뿐만 아니라 사카린이라는 생경한 인공감미료, 얼음 운반을 위한 인프라 형성, 소자본으로 운영이 가능하여 중상주의, 자본주의가 종합된 식품이라 할 수 있다. 본 연구는 객관적 자료를 통해 사회적 특징과 연결지어 실증적 분석을 했다는 데에 의의가 있으며 식문화 연구의 학문적 자료로 활용될 수 있으리라 본다. This study analyzes the modernity and trend of shaved ice ingredients from an empirical point of view, mainly through old newspaper articles. The investigation period was 1897-1945, and newspaper articles were thoroughly investigated using the Big Kinds and Naver news-library sites. The total number of newspaper articles related to shaved ice was 73. The start of Koreans is estimated to be around the early 1900s, and it spread from the city center to the northwestern gateway of Hanyang. Many poor Koreans welcomed the shaved ice industry because it could make a lot of profits with small capital. Ice was divided into natural and synthetic ice, and synthetic ice was preferred in terms of hygiene. Saccharin was sometimes used instead of sugar. In the modern era of the chaotic Joseon Dynasty, shaved ice was food made from sugar, ice, and unfamiliar artificial sweetener. This study is meaningful in that it conducted an empirical analysis in connection with social characteristics through objective data. Therefore, it can be used as primary academic data for food culture research.

개인화 영양정보 제공을 위한 소셜 네트워크 서비스 활용방안

소셜 네트워크 서비스 사용자의 개인 데이터를 활용하는 것은 개인화된 영양정보의 제공을 위한 새로운 자원으로서 활용 가능하다. 기존 영양정보 제공 방식과 비교하여 사용자가 입력한 소셜 네트워크 서비스의 기록을 바탕으로 맞춤화된 정보를 제공하는 방법 및 개인화된 영양정보를 어떻게 제공할 것인지에 대한 연구는 매우 부족한 실정이다. 본 연구는 대표적인 소셜 네트워크 서비스인 페이스북의 사용자들이 입력한 텍스트 데이터를 바탕으로 개인화된 영양정보를 제공하기 위한 방안을 확인하고자 하였다. 이를 위하여 사용자의 페이스북 게시정보를 분석하여 개인별 영양정보를 효과적으로 제공하는 방식을 제시하였다. 연구의 목적에 따라, 본 연구는 수집된 데이터를 이용하여 데이터마이닝 기법 중 군집화를 수행하였다. 사용자 데이터에 대한 군집분석 결과, 나트륨과 당류가 사용자의 식단에서 중요한 변수로 추출되었다. 추가적으로 판매원/제조원에 따라 사용자의 식단과 관련하여 변수의 중요도에 차이가 있음을 확인하였다. Personalized data of users at social network service can be used as a new resource for providing personalized nutrition information. Although providing personalized information for nutrition using social data, there are a few studies on providing personalized nutrition information with customized user preference based on social network service. The purpose of this study is to implement the clustering of data analysis with collected personal data of Facebook users. To find out the method for providing personalized information, this study described an effective method for providing nutrition information by analyzing web posting on Facebook that can be called a typical social network service. According to the result from clustering, sodium and sugars were important variables from diet of user. Furthermore, the importance of elements of user’s diet has some differences according to vendor/manufactures.
