        음식윤리 접근에 의한 식생활교육 효과 증진

        This study was performed to improve the effectiveness of dietary education using a food ethics approach. Dietary education is a way of practicing food ethics based on Korean culture. The core values of dietary education and the keywords related to food ethics can be combined into environment·life, health·wisdom, and consideration·happiness. Sustainable dietary life comprises the value system of dietary education based on core values. To reach the ultimate goal of food ethics-sustaining the survival of the human race, the coexistence of humans and nature, the coexistence of humans and humans, and the fulfillment of food requirements are needed. These needs yield certain core principles, including respect for life, environmental preservation, justice, the priority of consumers, dynamic equilibrium, and the priority of safety. The extended ethical matrix with six core principles and three interest groups can be used for an ethical analysis either qualitative or quantitative. It is believed that if food ethics are introduced into dietary education programs, the effectiveness of education can be improved.

        음식윤리 분석 - 후쿠시마 방사성 오염/처리수 방류-

        일본 정부는 후쿠시마 방사성 오염/처리수를 바다에 방류하겠다는 공식 결정을 발표했다. 본 연구는 음식윤리를 적용해 방류를 윤리적으로 분석하기 위해 행하였다. 정치적 결정에는 윤리적 평가가 필요하다. 특히 인류의 생존 지속을 위협하는 방류 결정은 거시윤리로서 음식윤리의 대상이 되고, 응용윤리에 속하는 음식윤리의 세 요소와 여섯 원리의 대상이기도 하다. 방류 결정은 수많은 바람직하지 않은 결과를 초래한다. 예를 들어, 내부 피폭되는 사람과 바다에 사는 모든 생명체의 생명을 경시하고, 후쿠시마와 태평양의 바다 환경을 파괴하며, 제한된 안전정보로 인해 부정의한 상황이 생기고, 안전한 수산물이 필요한 소비자를 배려하지 않으며, 안전한 방법보다 가장 경제적인 방법에 집중한다. 따라서 방류 결정은 음식윤리의 생명존중, 환경보전, 정의, 소비자 최우선, 안전성 최우선의 핵심원리들을 지키지 않는다. The Japanese government has announced its formal decision that the Fukusihima polluted/treated water will be discharged into the sea. This study was performed to ethically analyze the discharge by applying food ethics. A political decision needs an ethical evaluation. Especially, the decision of discharge, which threatens the sustaining of survival of human race, is subject to food ethics as macroethics and the three elements and six principles of food ethics belonging to applied ethics. The decision of discharge results in a number of undesirable consequences, such as the contempt of lives of humans and all living beings in the sea, the destruction of environment of sea of Fukushima and the Pacific, the unjust situation due to the limited safety information, no consideration for consumers who need safe seafoods, and the focusing not on the safe way but on the most economic way. Therefore, the decision of discharge does not observe the core principles including a respect for life, environmental preservation, justice, priority of consumer, and the priority of safety.

        불량만두소 사건에 대한 음식 윤리적 접근

        This study was performed to approach the 2004 case of inferior quality mandu stuffing from the stance of food ethics. The court convicted the producers of inferior quality mandu stuffing and also decided against the plaintiffs who filed a damage suit. The core of the mandu stuffing case was not safety, but the wholesomeness. The principles of food ethics include a respect for life, justice, environmental preservation, and the priority of safety. The virtues of food professionals include wisdom, honesty, faithfulness, courage, moderation, and integrity. A food producer should possess not only the ability but also the morality to make food. The consumer should urge the producers to strengthen their morality and be conscious of responsibility and fairness. The government should organize a system to establish food ethics, and make efforts to reduce wasteful law enforcement. The media should lead public opinion toward justice by doing an unbiased and in-depth report and help establish the idea of food ethics. The necessity of food ethics and the spread of the ethical mind are the most important points of all.

        한국 음식 속담에 대한 음식 윤리적 접근

        This study was performed to approach Korean food proverbs from the stance of food ethics. Both modern principles and traditional principles of food ethics were applied to select proverbs. The modern principles include a respect for life, justice, environmental preservation, and the priority of safety. The traditional principles were longevity and good health, poverty (escaping) and wealth (pursuing), eating luck and fortune, priority of food, virtue, and taste and quality (economics). All the principles except environmental preservation and the priority of safety have adequate food proverbs, since environmental disruption and food safety were not serious issues in the past.

        소해면상뇌증(BSE)과 사료 문제 - 창세기에 근거한 음식윤리적 분석 -

        소해면상뇌증(BSE)은 감염된 반추동물의 육골분(MBM)을 소에게 먹임으로써 발생했다. 본 연구에서는 창세기에 근거한 음식윤리를 활용하여 BSE와 사료문제를 분석하기 위해, 1) 창세기, 음식윤리, BSE에 공통으로 적용할 수 있는 먹을거리 원리를 세웠고, 2) BSE를 과학적으로 분석하여 핵심문제를 도출하였으며, 3) 음식윤리의 세부내용을 창세기의 창조질서와 관련지은 후, 4) 창세기에 근거한 음식윤리를 적용해 변종 크로이츠펠트-야콥병(vCJD)과 관련된 BSE와 사료 문제를 심층적으로 분석했다. 먹음의 궁극적 목적인 제1수준의 먹을거리 원리는 생존의 지속, 보다 구체적인 제2수준의 먹을거리 원리는 생명, 행복, 지혜, 창세기에 근거한 음식윤리의 세 요소는 자연과의 공존, 인간과의 공존, 음식의 본질 충족, 여기서 파생되는 제3수준의 실천적인 먹을거리 원리는 생명존중, 환경보전, 정의, 소비자 최우선, 절제와 균형, 안전성 최우선이었다. BSE의 핵심문제는 소에게 동물성 사료를 준 것과 동일종 사료(intra-species feed) 제공의 두 가지인데, 둘 다 창세기에 근거한 음식윤리의 생명존중의 원리와 안전성 최우선의 원리를 위배했다. Bovine spongiform encephalopathy(BSE) was caused by feeding cattle with the meat and bone meal(MBM) from infected ruminants. In this study, 1) we established food principles commonly applicable to the book of Genesis, food ethics, and the BSE; 2) we analyzed BSE scientifically to derive the core issues; 3) we related the basic contents of food ethics to the book of Genesis; and 4) we deeply analyzed the BSE and feed issues, related to variant Creutzfeldt-Jakob Disease(vCJD), by using food ethics based on the Genesis. The food principle of the 1st level, the ultimate goal of eating, was sustaining human survival; the more specific principles of the 2nd level were life, happiness, and wisdom; the three elements were the coexistence of humans and nature, the coexistence of humans and humans, and the fulfillment of food requirements; and the six practical principles of the 3rd level were respect for life, environmental preservation, justice, the priority of consumers, dynamic equilibrium, and the priority of safety. BSE’s core issues were feeding cattle with MBM and providing intra-species feed, both of which violated the principles of respect for life and priority of safety of food ethics based on the Genesis.

        미니컵 젤리 사건의 국가배상판결에 대한 음식 윤리 관점에서의 분석

        This study analyzes two court rulings on “mini-cup jelly”(a firm jelly containing konjac and packaged in bite-sized plastic cups) from a food ethics perspective. Here only the portion of lawsuits pertaining to the central government for damages will be focused. The judgment was criticized either jurisprudentially or ethically. The Supreme Court decided that the central government was not liable for damages in both cases. However, from an absolute and fundamental viewpoint, the jelly was unacceptable, ethically as well as legally, because it was unsafe, unwholesome, and unfit for children`s consumption. The ignoring or sidelining of fundamental principles of food ethics, especially respect for life, was at the core of these cases. If the government had considered and prioritized the principles of food ethics, the choking accidents could have been prevented. It is very important to minimize risks by applying the principles of food ethics before any accidents can occur.

        음식윤리 개요

        본 총설은 음식윤리의 개요를 식품과학과 산업 분야의 전문인에게 설명하고자 한 것이다. 음식윤리는 음식과 관련된 윤리 또는 윤리적 고려이고, 음식윤리의 핵심어는 생명, 행복, 지혜이다. 음식윤리의 제1원리이자 궁극적인 목적은 인류의 지속가능한 생존이다. 그 목적을 달성하기 위해서는 자연과의 공생, 인간과의 공생, 그리고 음식의 본질적 요소의 충족이 필요하다. 그 필요로부터 생명존중, 자연보전, 속임수나 가짜가 없는 분배의 정의, 소비자 최우선 고려, 절제와 균형, 그리고 안전성 확보의 여섯 가지 정언명령이 산출된다. 정언명령에 상응하는 핵심원리는 생명존중, 환경보전, 정의, 소비자 최우선, 동적 평형, 안전성 최우선이다. 핵심원리 접근법은 윤리문제의 해결에 간단하고 명료하며 실질적인 방법이다. 음식윤리강령 역시 핵심원리를 기반으로 한다. This review was performed to outline the food ethics to the professionals in the field of food science and industries. Food ethics is the ethics or ethical consideration concerning food; while, the keywords of food ethics are a life, happiness and the wisdom. The ultimate goal as well as the first principle of food ethics is a sustainable living of human race. In order to reach the goal a coexistence of humans and nature, coexistence of humans and humans, and the fulfillment of essential requirements of a food are needed. The needs yield six categorical imperatives such as a respect for life, preservation of nature, distributive justice without deception or fakes, prior consideration of consumer, moderation and balance neither overs nor shorts, and the assurance of safety. The core principles corresponding to the categorical imperatives include a respect for life, environmental preservation, justice, priority of consumer, dynamic equilibrium, and the priority of safety. The core principles approach is a simple, clear, and practical method in solving ethical issues. The code of food ethics is also based on the core principles.
