        This study was carried out to investigate the level of total glucosinolates in different parts (outer and inner part) offresh, salted Chinese cabbage (Brassica campestris L. ssp. Pekinensis) and Kimchi at different harvesting periods (June-July, August-September, October-November, December-April, May). For determination of total glucosinolates, Chinese cabbage was used for analytical sample preparation provide with an anion exchanges column and measured by UV -visible Spectrophotometer. The fresh Chinese cabbage (FCC) that was harvested in June-July contained the highest levelof total glucosinolates and was higher in outer part than inner part in all harvesting period. The salted Chinese cabbage (SCC) that was harvested in May contained the lowest level of total glucosinolates. Total glucosinolates level of SCC in outer part was higher in June-July and August-September. The manufactured Kimchi (K) using harvested Chinese cabbage in June-July and August-September contained the highest level of total glucosinolates while that harvested in May contained the lowest level. The level of total glucosinolates in different parts was higher in inner part than outer part in June-July, August-September, October-November and December-April except for May. In all harvesting time, the level of total glucosinolates of FCC was higher than processed Chinese cabbage (SCC and K). Based on these results, levels of total glucosinolates are influenced by harvesting periods, parts, processing conditions of Chinese cabbage.

      • Evaluation of antibacterial activity of 3-butenyl, 4-pentenyl, 2-phenylethyl and benzyl isothiocyanate in Brassica vegetable

        This study investigated antibacterial activities of four isothiocyanates (3-butenyl, 4-pentenyl, 2-phenylethyl and benzyl isothiocyanate) against four Gram-positive bacteria (Bacillus cereus, Bacillus subtilis, Listeria monocytogenes and Staphylococcus aureus) and seven Gram-negative bacteria (Aeromonas hydrophila, Pseudomonas aeruginosa, Salmonella choleaesuis,Salmonella enterica, Serratia marcescens, Shigella sonnei and Vibrio parahaemolyticus) by an agar disc diffusion assay. Benzyl isothiocyanate (>90.00 mm inhibition zone diameter at 0.1 uL/mL) and 2-phenylethyl isothiocyanate (58.33 mmat 0.2 uL/mL) showed large inhibition zones especially against B. cereus. Also, 3-butenyl isothiocyanate (21.67 mm at 1.0 uL/mU and 4-pentenyl isothiocyanate 09.67 mm at 1.0 μL/mU displayed potent antibacterial activity against A. hydrophila. Benzyl and 2-phenylethyl isothiocyanate indicated higher activity against most of the pathogenic bacteria than 3-butenyl and 4-pentenyl isothiocyanate, and were more effective against Gram-positive bacteria than Gram-negative bacteria.
