Water Activity Control in Lipase-catalyzed Reaction System

This mini review describes the effects of water activity (a_w) on the kinetics, regio- and enantioselectivities of lipases, and various methods for measuring and controlling a-w in lipase catalyzed reaction in organic solvent.

본 연구에서는 실험실에서 조립한 회분식수소 첨가반응 장치를 사용하여 균질한 촉매와 원료하에서 콩기름의 수소첨가반응을 특성짓는 반응속도, 선택도비, 트란스 이성질체의 생성에 미치는 공정 변수(교반속도, 촉매농도, 반응온도, 반응압력)의 영향을 조사함으로써, 각각의 바라는 생성물을 생성시키기 위한 일련의 반응조건들을 선택하는데에 지침이 되는 기본자료를 제시하였다. 또한 콩기름의 수소첨가 공정에서 문제가 되고 있는 반응생성물로부터의 닉켈촉매 입자들을 제거하는데 Gulftronic 분리기의 도입 타당성 여부를 실험실용 분리기를 사용하여 시험한 결과, 이 분리기는 조절, 운전, 분리성능면에 있어서 종래의 여과방법보다 훨씬 더 효율적이라고 결론지울 수 있었다. In this study, we presented the basic data for a guide to the selection of a set of conditions to give each desired products by investigating the effects of such process variables as agitation rate, catalyst concentration, temperature and pressure on the reaction rate, selectivity ratio and trans-isomer formation which characterize the hydrogenation of soybean oil under consistent catalyst and feeds. On the other hand, catalyst separation from the oil after the reaction was attempted with a laboratory scale Gulftronic separator and the separator was highly satisfactory in terms of control, operation, and efficiency.

Although traditional Korean diet consists of Very little fats and oils, the increase of their consumption, especially vegetable oil, has been truly remarkable in recent years and this increase is attributed to the improvement of their dietary habit and the development of Korean food industry. On the other hand, domestic production of the edible vegetable oil did not increase at all. Naturally, foreign exchange (over a several hundred million U.S. dollars) is annually used in importing oil seed and/or oil per se. Under these circumstances, it is of utmost importance to maximize the domestic production of edible vegetable oil, although its complete self-sufficiency cannot be achieved. In this seminar, intake of fats and oils by Korean people, status and outlook of the domestic production and consumption of fats and oils will be discussed, with. emphasis on the utilization of agricultural by products and waste as a source of fats and oil.
