        MINERAL CHARACTERISTICS OF RAW GOAT MILK FROM THE REGION OF GOIÂNIA, BRAZIL.

        432 samples of raw goat milk were analyzed for sodium, calcium, potassium, chloride, and ashes content. The samples came from 16 pure breed goats, 2 to 4 years of age kept in semi-feedlots. They were basically fed soy bran, cotton bran, triturated Guandu hay and disintegrated corn with its straw and corncob (according to requirements for due preservation and production). The mean values found were: sodium, $45{\pm}10.2mg%$ (24.5-65.6 mg%); potassium, $206{\pm}44.7mg%$ (116.6-295 mg%); calcium, $111{\pm}22mg%$ (66.5-155.4 mg %); ashes, $0.82{\pm}0.06mg%$ (0.68-0.95%); chloride, $235{\pm}39mg%$ (157-313 mg%). Results were related to: a) breed, the Brown and the Saanen revealed superior values for calcium and ashes, b) climate, which in the rain season led to higher contents of sodium, potassium, and calcium when compared to the local dry season, c) time of lactation which increasingly affected the contents of calcium, sodium and ashes, and d) the time between milking, when higher concentration of chloride and ashes were mostly concentrated in the evening and calcium in the morning. These results have important implications in the handling and management of the goat herd.

        Anti-Inflammatory and Cicatrizing Activities of a Carbohydrate Fraction Isolated from Sugary Kefir

        Kefir is an association of microrganisms generally grown in milk, with known probiotic activities identifiedfrom its soured suspensions. Aqueous media are also able to grow kefir, but little is known about the probiotic properties ofits fermented products. This work aimed to evaluate some probiotic properties of a carbohydrate fraction isolated from sug-ary kefir (sugary kefir carbohydrate [SKC]). Anti-inflammatory activity of the isolated fraction of carbohydrate was testedboth in vitro(cellular respirometry and macrophage culture) and in vivo (50% effective dose, rat paw edema, vascular per-meability, and cicatrizing test). The results indicated no significant difference for oxygen uptake or macrophage culture be-tween control and test groups. Rat paw edema, however, showed a significant inhibitory activity by 30. 4% and 54 . 8%(P. .001) for carrageenan and dextran, respectively. In the cicatrizing test, animals treated with SKC cream also presentedless trauma after treatments as compared to the negative control group (P. .05). The overall data suggested the SKC as anatural product that could be used as a constituent of an anti-inflammatory compound.

        Anti-Inflammatory Activity of Aqueous and Alkaline Extracts from Mushrooms (Agaricus blazei Murill)

        The effects of aqueous and alkaline extracts from Agaricus blazei Murill, an edible mushroom used as folk medicine in Brazil, Japan, and China to treat several illnesses, were investigated on the basis of the inflammatory process induced by different agents. Oral administration of A. blazei extracts marginally inhibited the edema induced by nystatin. In contrast, when complete Freund's adjuvant was used as the inflammatory stimulus, both extracts were able to inhibit this process significantly (P < .05, analysis of variance followed by Tukey-Kramer multiple comparison post hoc test), although it inhibited the granulomatous tissue induction moderately. These extracts were able to decrease the ulcer wounds induced by stress. Also, administration of extracts inhibited neutrophil migration to the exudates present in the peritoneal cavity after carrageenin injection. Therefore, it is possible that A. blazei extracts can be useful in inflammatory diseases because of activation of the immune system and its cells induced by the presence of polysaccharides such as β-glucans.

        Nitrogen Metabolism in Lactating Goats Fed with Diets Containing Different Protein Sources

        This study aimed to evaluate urea excretion, nitrogen balance and microbial protein synthesis in lactating goats fed with diets containing different protein sources in the concentrate (soybean meal, cottonseed meal, aerial part of cassava hay and leucaena hay). Four Alpine goats whose mean body weight was $42.6{\pm}6.1kg$ at the beginning of the experiment, a mean lactation period of $94.0{\pm}9.0days$ and a production of $1.7{\pm}0.4kg$ of milk were distributed in a $4{\times}4$ Latin square with four periods of 15 days. Diets were formulated to be isonitrogenous, containing 103.0 g/kg of CP, 400 g/kg of Tifton 85 hay and 600 g/kg of concentrate. Diet containing cottonseed meal provided (p<0.05) increased excretion of urea and urea nitrogen in the urine (g/d and mg/kg of BW) when compared with leucaena hay. The diets affected the concentrations of urea nitrogen in plasma (p<0.05) and excretion of urea nitrogen in milk, being that soybean meal and cottonseed meal showed (p<0.05) higher than the average aerial part of the cassava hay. The use of diets with cottonseed meal as protein source in the concentrate in feeding of lactating goats provides greater nitrogen excretion in urine and negative nitrogen balance, while the concentrate with leucaena hay as a source of protein, provides greater ruminal microbial protein synthesis.
