다슬기(Semisulcospira libertina)의 營養學的 成分에 관한 硏究

This study was carried out to investigate the nutritive component of Black Snail. The results obtained are as follows; The average contents of crude protein, crude fat, total sugar and ash were 60.7, 7.1, 17.9 and 14.3%, respectively. Amino acids in black snail appeared to be 16 kinds. Glutamic acid and aspartic acid content were the highest among the contents of amino acid and the order of the next contents showed as arginine, leucine and lysine. The fatty acid of the black snail was composed chiefly of palmitic acid(37.9%), oleic acid(17.5%), lin olenic acid(15.2%) and stearic acid(10.3%). The content of K, Na, Ca, Mg, Cu, Fe and Zn were 1160, 106, 1300, 43.3, 10.5,7.8 and 0.10 mg, respectively.
