The free phenolic fraction from Korean white ginseng (Panax ginseng C.A. Meyer) was studied by GLC/MS as trimethylsilyl and methyl derivative. Five phenolic compounds such as 2,6-ditert butyl p-crestal, phloroglucinol, protocatechuic acid, isoferulic acid, quinic acid were identified newly. And additionally 13 organic acids and hydrocarbons were also identified in the fraction.

인삼제품의 품질관리와 효능연구의 시료사용에 참고자료로 활용하기 위하여 인삼근의 부위별, 연근별 사포닌 함량 및 분포를 조사하였다. 한국인삼 6년근의 부위별 조성은 뇌두(rhizome) 4.1%, 동체(main root) 47.7%, 지근(lateral)의 비는 대략 1:1이었으나 지근부는 2:1로 피층이 많았다. 사포닌분포는 동체와 세근부가 29% 정도로 거의 같고, 지근부 34.6%로 가장 많았고, 뇌두는 7% 수준으로 가장 적었다. 그러나 단위 중량당 함량에서는 세근>퇴두>지근>동체의 순으로 뇌두가 높은 반면 동체는 가장 낮았다. 연근별 사포닌 변화는 2년근 4.89%, 6년근 7.98%로서 본포이식후 4년간 약 3% 증가에 그쳤으나 뿌리의 비대성장을 고려할 때 계속적으로 합성축적 되었으며 연간 증가율은 5년근이 43.8%로 가장 왕성한 성장기임을 나타내고 4년근 19.8%, 6년근 21.1%로 비슷했다. 따라서 5년에 뿌리의 생장과 사포닌 합성축적이 최고 수준에 도달했다가 6년째 부터 쇠퇴기로 됨을 알았다. 개별 사포닌의 함량변화는 전반적으로 증가하는 경향이나 PT계 사포닌보다는 PD계 사포닌의 증가가 보다 큰 경향이었다. This study was carried out to get basic information that can be used in quality control for processing ginseng products and also in separation of pure ginsenosides for experimental purpose. The composition of various parts of 6 year-old ginseng was 4.1% of rhizome (node), 47.7% of main root, 34.1% of lateral root and 14.1% of fine Toot on dried weight basis. The weight ratios of epidermis-cortex and xylem were about 1 : 1 in main root and about 2 : 1 in lateral root. The distribution of total saponin content shows 29.2% in main root, 34.6% in lateral root, 29.1% in fine root and 7% in rhizome, but the order of the content per unit weight was fine root > rhizome > lateral root > main root. Total saponin content according to age of root was increased gradually within 3% for 6 years, as compared with two year old root. In view of the increase of root weight owing to the net amount of saponin in root increased continuously. The increase rates of total saponins per year were 3.1,12.3,19.8,43.8 and 21.1% in 2, 3, 4, 5 and 6 years-old ginseng root, respectively.

Free and esterified sterols in neutral lipid fractionated from the free lipid of Korean white ginseng (Panax ginseng C.A. Meyer) were analyzed by TLC and GLC to investigate the contents and composition ratios. Content of each sterol was as follows: ${\beta}$-sitosterol was about 51.60 mg%, stigmasterol, 8.93mg% and campesterol, 2.17mg%. Fine root tended to have slightly higher contents of sterols than main root. Linoleic and palmitic acid as the major fatty acids in esterified sterols occupied 70% of the total composition.

A study was designed to produce a pelf-stable and clear Red Ginseng wine using ethanol solution for Red Ginseng extraction and low temperature treatment on the extract before packaging. Extraction of Red Ginseng at high temperature using low ethanol concentration caused as increase in the amount of crude Red Ginseng extract end a decrease of purified Red Ginseng extract. Extraction with 75% ethanol at 50∼70℃, followed by dilution of the extract to the ethanol concentration of final product,, resulted minimum precipitation in the Red Ginseng wine. Low temperature treatment at 4℃ retained all of the saponin content in crude extract while -20℃ treatment caused a significant loss of saponin along with precipitation during purification.
