        Impact of Cooking pH Values on the Textural and Chemical Properties for Processed Cheeses with/without the Use of Traditional Village Cheese during Storage

        Processed cheeses (PCs) were made under varying cooking pH values (5.3, 5.4, 5.5, and 5.6) using a processed cheese cooker. Along with emulsifying salts (2.5%), distilled water, NaCl (2%) and a colouring agent under these cooking pH values, the PC samples made with either 100% fresh curd and rennet casein coded processed cheese control ($PC_C$) as control or ~70% fresh curd-~30% traditional village cheese coded processed cheese with village cheese ($PC_V$). The main aim of this study was to determine the effect of the varying cooking pH values on the textural properties for the PCv samples compared with the control sample during 90 days of storage. Chemical and textural properties of all PC samples were investigated over time. The chemical compositions of the PC samples (dry matter and ash) increased at d 90 of storage significantly, due to 1-d ripening of all PC samples at ambient temperature in terms of the manufacturing protocol of the cheese. The textural properties of the PC samples were altered by the varying cooking pH values. It may propose that the interactions of the proteins at the cooking pH values during processing and biochemical mechanisms in the cheese systems could likely affect the texture of the PC samples over time. Hardness, gumminess and chewiness values of all PC samples also increased over time (p<0.05). This study is also to give some knowledge on the design of PC manufacture to cheese makers, and a marketing opportunity to local cheese makers who individually make a traditional village cheese in Turkey.

        In this paper, firstly we compute the spectral norm of g-circulant matrices $C_{n,g}=g-Circ(c_0,c_1,{\cdots},c{_{n-1}})$, where $c_i{\geq}0$ or $c_i{\leq}0$ (equivalently $c_i{\cdot}c_j{\geq}0$). After, we compute the spectral norms, determinants and inverses of the g-circulant matrices with the Fibonacci and Lucas numbers.

        Evaluation of YouTube Videos on Hepatocellular Carcinoma

        Background: As in every field, online information has become increasingly used in health. However, it is well known that some information online containing health advice is incorrect and may even include false statements. For this reason, it is crucial for public health that individuals reach reliable, high-quality resources when they are trying to obtain health information. Studies have been conducted on the quality and reliability of online information about many diseases, but no similar study has been found in the literature on hepatocellular carcinoma (HCC). Methods: In this descriptive study, videos on YouTube (www.youtube.com) about HCC were evaluated using the Global Quality Scale (GQS) and the modified DISCERN tool. Results: While 129 (89.58%) of the videos examined within the study were considered useful, 15 (10.42%) were misleading. The GQS scores of the videos considered useful were significantly higher than the scores of the misleading videos, with a median (min–max) score of 4 (2–5) (P < 0.001). When we compared the DISCERN scores, the scores of the useful videos were significantly higher (P < 0.001) than the scores of the misleading videos. Conclusion: YouTube should be considered a complex structure where accurate and reliable health information can be presented, as well as erroneous and misleading information. Users should understand the importance of video sources and focus their research on videos from doctors, academics, and universities.

        Construction of genetic linkage map for Ficus carica L. based on AFLP, SSR, and SRAP markers

        A new genetic linkage map of Ficus carica (2n = 2x = 26) was constructed using 149 F1 progeny derived from the crossbetween two fi g cultivars, ‘Bursa Siyahı’ (BS) and ‘Ak Ilek’ (AK). Fifty-two amplifi ed fragment length polymorphism, 49simple sequence repeat (SSR), 16 sequence-related amplifi ed polymorphism (SRAP), and 12 sequence characterized amplified region (SCAR–SRAP) combinations were used to generate markers for the map. The BS map consisted of 229 markers,distributed to 16 linkage groups (LGs), with an average marker density of 5.98 cM and map distance of 1342 cM. The AKlinkage map carried 244 markers, distributed to 16 LGs, with an average marker density of 4.90 cM and map distance of1191 cM. The consensus map comprises 355 markers, 1474 cM in length, with average marker density of 4.15 cM. The mapindicates the location of new SSRs, nine of which were transferred from related species, and might be helpful for mappingquantitative trait loci that control important horticultural traits in the future.

        Bone Metastasis from Gastric Cancer: The Incidence, Clinicopathological Features, and Influence on Survival

        Purpose: To evaluate the incidence, clinicopathological characteristics, treatment outcomes, prognostic factors, and survival of gastriccancer patients with bone metastases. Materials and Methods: Of 4,617 gastric cancer patients who were treated between 2001 and 2013, 176 patients with bone metastaseswere analyzed. Results: The incidence of bone metastasis was 3.8%. The most common histopathological subtype was adenocarcinoma (79%) withpoor differentiation (60.8%). The median interval from the diagnosis to bone metastasis was 11 months. The median survival time afterbone metastasis was 5.4 months. Factors that were associated with longer median survival times included the following: isolated bonemetastasis (P=0.004), well-differentiated tumors (P=0.002), palliative chemotherapy (P=0.003), zoledronic acid treatment (P<0.001),no smoking history (P=0.007), and no metastatic gastric cancer at the time of diagnosis (P=0.01). On the other hand, high levels oflactate dehydrogenase (LDH) (hazard ratio [HR]: 1.86; P=0.015), carcinoembryonic antigen (CEA) (HR: 2.04; P=0.002), and carbohydrateantigen (CA) 19-9 (HR: 2.94; P<0.001) were associated with shorter survival times. In multivariate analysis, receiving zoledronicacid (P<0.001) and performance status (P=0.013) were independent prognostic factors. Conclusions: Smoking history, poor performance status, poorly differentiated adenocarcinoma, and high levels of LDH, CEA, and CA19-9 were shown to be poor prognostic factors, while receiving chemotherapy and zoledronic acid were associated with prolonged survivalin gastric cancer patients with bone metastases.

        Evaluation of Arterial Stiffness in Patients with Behcet`s Disease by Using Noninvasive Radiological Methods such as Intima-Media Thickness of the Carotid, Ankle-Brachial Pressure Index, Coronary Artery Calcium Scoring, and Their Relati

        Background: Behcet`s disease (BD) is a chronic, recurrent inflammatory systemic vasculitis. Evidence for increased atherosclerosis in BD has been observed. The relation between cardiovascular risk factors and increased atherosclerosis in patients with BD is still controversial. Objective: We performed this study to evaluate arterial stiffness in patients with BD by using noninvasive radiological methods such as carotid artery intima-media thickness (CIMT), ankle-brachial pressure index (ABPI), coronary artery calcium score (CACaS), and their relation to serum fetuin-A levels, which was recently found to be important in vascular calcification. Methods: This prospective study included 26 patients with BD and 25 control subjects. In all patients, the CIMT, ABPI, CACaS, and serum fetuin-A levels were examined. Results: The CIMT and CACaS were statistically higher and the ABPI was statistically lower in BD patients than in the control group. All p-values were <0.001. Positive correlations were found between the CACaS and CIMT, and negative correlations were found between the CACaS and ABPI. Although the values of fetuin-A were higher in BD, the difference was not statistically significant (p=0.064). However, the correlations found between fetuin-A levels and CIMT and between fetuin-A levels and CACaS were significant. Conclusion: The CIMT, CACaS, and ABPI are all useful in detecting structural and functional vascular damage in BD. (Ann Dermatol 27(6) 702∼708, 2015)

        Evaluation of Antioxidant Activities of 3 Edible Mushrooms: Ramaria flava (Schaef.: Fr.) Quél., Rhizopogon roseolus (Corda) T.M. Fries., and Russula delica Fr.

        The methanolic extracts of Ramaria flava,Rhizopogon roseolus, and Russula delica were analyzed for their antioxidant activities in different test systems including β-carotene/linoleic acid, 1.1-diphenyl-2-picrylhydrazyl (DPPH) free radical scavenging, reducing power, and metal chelating activities in addition to their total phenolic and flavonoid contents. In the first case,methanol extract of R. roseolus showed the strongest activity. In DPPH system, the scavenging effects increased with the concentration. The reducing power of the mushroom also increased with concentration. Chelating effect was 96.75±0.28% for R. flava. In the case of total phenolic and flavonoid assays, R. flava found to have the highest phenolic content. Total flavonoid content of R. flava again found the superior to the other mushrooms. Experimental results indicate that the mushroom species evaluated here can be consumed safely. On the other hand, knowing the biological activity of these mushrooms will contribute to the establishment of conscious consumption.

        Antioxidant and anticancer activities of gallic acid loaded sodium alginate microspheres on colon cancer

        Polyphenols found in fruits and vegetables are of great interest due to their health benefits. Gallic acid (GA) is an antioxidant with cytotoxic effects. Microspheres are drug carrier systems, where the active substance is trapped in matrix. A controlled release profile is aimed at the target region by preserving the loss of substance and activity. In this study, GA containing microspheres were formed with sodium alginate (NaAlg) in formulations with different ratios. The arrest efficiencies ranged between 11.26 and 72.64%. Release studies were performed at pH 7.4. Optimum conditions were determined as GA/NaAlg ratio 1/8. The microspheres were found to arrest GA and exhibit a controlled release profile. Microspheres were characterized by scanning electron microscope (SEM), differential scanning calorimetry (DSC), X-Ray diffraction (XRD), Fourier transform infrared spectrometer (FTIR) analysis. GA retained its antioxidant activity determined by DPPH (2,2-diphenyl-1-picrylhydrazyl) method and anticancer activity on Caco-2 cells. Further studies are necessary on GA-loaded NaAlg microspheres which have high potential to be used in adjunct and complementary therapies.
