It is very important to prepare the sanitation criteria for the animal foods through the microbiological examination and the investigation of tendency to change of the organisms according to the storage temperature and period. As the results of identification of total 110 genera isolated from commercial animal foods, 15 genera were identified and predominant genera were Staphylococcus(29.1%), Pseudomonas (13.6%) and Enterococcus(12.7%) and followed by Enterobacter, Lactobacillus, Achromobacter, Aeromonas, Escherichia, Micrococcus, Bacillus, Klebsiella, Serratia and yeast. As the results of identification of 1323 isolates from commercial animal foods stored at 10℃, 20℃ and 30℃, 21 genera were identified and Staphylococcus(22.5%), Enterococcus(15.9%), Pseudomonas(15.9%), Bacillus(10.3%) were predominant. The predominant genus among 405 isolates from commercial animal foods stored at 10℃ was Pseudomonas(28.9%), followed by Staphylococcus(19.8%), Enterococcus(16.0%) and Bacillus(11.1%). The predominant genus among 483 isolates from commercial animal foods stored at 20℃ was Staphylococcus(23.4%), followed by Enterococcus(16.0%) and Pseudomonas(11.1%) but the predominant genera among 436 isolates from commercial animal foods stored at 30℃ was Staphylococcus(23%), followed by Enterococcus(15.4%) and Bacillus(11%).

In order to investigate the bacterial sanitation of farm water in the suburb of Seoul, we examined Standard Plate Count, coliform, E. coli, heat-tolerant bacteria, psychrophilic bacteria, Pseudomonas aeruginosa and Enterococcus of 86 farm waters in Kwangju-gun, Namyangju-gun Ⅰ and Ⅱ, Pajugun. The results were as follows : 1. Of the 86 farm waters, the average number of psychrophilic bacteria was 1400±350 CFU/ml, SPC 1000±300 CFU/ml, Pseudomonas aeruginosa 290±150 CFU/100ml, Enterococci 190±100 CFU/100ml, Escherichia coli 130±60 CFU/100ml, coliform 31±12 CFU/ml and heat-tolerant bacteria 13±5 CFU/ml, respectively. 2. Of the 86 farm waters, the sanitary bacteriological conditions of only 24 waters (27.9%) were sufficient to animal and human. 40.9% of waters in Namyangju I region were sufficient to animal and human, 33.3% in Paju-gun, 19.1% in Namyangju Ⅱ region, and 18.2% in Kwangju-gun. 3. Fourty five waters (52.3%) were detected the standard plate counts of over than 100 CFU/ml, 35 waters (40.7%) were detected coliform, 33 (38.4%) heat-tolerant bacteria, 16 (18.6%) Pseudomonas aeruginosa, and 15 (17.4%) were detected coliform and enterococci, respectively. 4. There were highly significant between SPC and psychrophilic bacteria (r=0.792), coliform and E. coli (0.728), E. coli and heat-tolerant bacteria (0.636), coliform and enterococci (0.462), heat tolerant bacteria and coliform (0.451), and E. coli and enterococci (0.369).

In order to investigate the bacteriological quality of in raw milk, we examined standard plate count, coliform bacteria, fecal Escherichia coli, mesophilic aerobic spores, psychrophilic bacteria, Pseudomonas aeruginosa and enterococci in raw milks collected from 58 farms in Choongcheongdo and Kangwondo Province according to spring and summer. In standard plate count, the I class(less than 100,000/ml) milks are 48(82.8%) in spring and 31(53.5%) in summer, II class(100,000~250,000/ml) milks are 2(3.5%) in spring and 4(6.9%), III class(250,000~500,000/ml) are 2(3.5%) in summer and 7(12.1%), IV class(500,000~1,000,000/ml) are 3(5.2%), 6(10.3%) and V class(over than 1,000,000/ml) are 6(10.3%) and 11(19.0%), respectively.
