        숙시닐화에 따른 참깨박 농축 단백질의 성분 변화

        Addition of 0.5, 1.0 and 2.0g of succinic anhydride to 2g of sesame protein concentrates succinylated 44.9, 70.0 and 83.1% of the available amino groups, respectively. Considerable amount of phytate were removed in all sesame protein concentrates and the highest reduction was obtained by addition of 2.0g of succinic anhydride. Among the minerals investigated, high amount of calcium and magnesium were presented in defatted sesame flour. In the case of calcium, magnesium and iron, the contents were decreased as the degree of succinylation was increased. Most amino acid content of sesame protein concentrates was not changed by succinylation but lysine was slightly decreased. Result of color measurement showed that the higher degree of succinylation, the higher values of L and b were founded.

        A Cross-Cultural Study of Holiday Decorations

        The purpose of this study is to investigate the ways in which cultural beliefs influence the lifestyles of the residents and environmental activities, especially decorations on the fronts during holiday seasons. The relationship between holiday displays and cultural values are investigated in the study. This research conducts a case study of two ethnic neighborhoods to understand cultural identification, attachments and environmental decoration. The neighborhoods were visited and their activities were observed during the holidays including Easter, Thanksgiving, Halloween and Christmas from 1992 to 1995. Exterior decorations were measured by a field survey of the frontal areas of 200 houses. This study confirms that the fronts are recognized and evaluated as cultural communications. The holiday decorations and celebrations are intimately related to cultural dimensions. Distinctive groups use different environmental elements in the celebration of holidays. Each culture is distinguished by its own rituals constituted by the interweaving of space and activities.

        직무분석을 통한 현장 영화인력 교육과정 개발

        The purpose of this study was to develop a curriculum for fostering movie workers systematically. And 3 step model was set up for developing a curriculum as follows: ① setting up career path and analyzing job requirements, ② organizing and developing a curriculum, ③ designing training courses. Above all, 28 jobs of 5 fields in moviemaking, including producing, directing, photographing, lighting, production designing, were drafted through conducting literature review and interviews with experts in moviemaking. Using 28 jobs in 5 fields, career paths were set up, and job analysis was conducted for each job. As a result of job analysis, 28 job models were identified. After identification, 4 levels of a curriculum were drafted. These included following levels: Beginner, Practitioner, Expert, Master. Contents of the curriculum were composed by grouping knowledge, skill, attitude of job models. General contents were organized into a fundamental curriculum, and specific contents Oil the fields were organized into a professional curriculum. Then modules and lessons were organized and designed for each curriculum. Consequently, 21 courses, 66 modules, and 172 lessons were developed, and examined through conducting interviews and professional workshop.

        성숙시기에 따른 대추잎의 화학적 조성의 변화

        대추잎의 유용식물자원으로서의 이용가능성을 구명하기 위하여 수확시기별 대추잎의 화학적 조성의 변화를 조사하였다. 대추잎의 단백질 함량은 4.42~6.31%로서 수확시기가 늦어지면서 단백질 함량이 급격히 감소하였고 지방 함량은 4.31~5.71%로서 점차 증가하였다. 대추잎의 아미노산 조성은 aspartic acid가 가장 많았고 다음으로 glutamic acid, leucine순이었으며 methionine이 제한 아미노산이였다. 대추잎에 존재하는 유리당으로는 glucose, fructose, sucrose, maltose 4종류로 나타났으며 sucrose의 함량은 성장후기로 갈수록 급격히 감소하였다. 지방산 조성은 palmitic acid가 40% 정도로 가장 많이 함유되었으며 다음으로 linolenic acid, stearic acid, oleic acid순으로 함유되어 이들 4종의 지방산이 전체 지방산 함량의 약 90%를 차지하였다. 대추잎의 무기질 함량은 K, Na, Ca의 함량이 특히 풍부한 것으로 나타났고, Fe, Mn, Cu의 함량은 아주 낮게 나타났다. 잎의 수확시기가 늦어지면서 Ca, Na 함량은 현저히 증가한 반면 Mg 함량은 감소하였으며 K, Mn, Fe, Zn, Cu의 함량은 변화가 없었다. 페놀성 화합물의 함량은 0.83~0.89%, 축합형 탄닌함량은 0.40~0.45%로서 축합형 탄닌이 총페놀 화합물의 약 50%를 차지하였고 수확시기에 따른 함량차이는 나타나지 않았다. 대추잎에는 rutin과 isoquercitrin 2종의 flavonoid 성분이 존재하였고 각각의 함량은 103.8~125.2㎎/㎏, 26.2~40.0㎎/㎏으로서 수확시기에 따라 rutin의 함량이 isoquercitrin보다 약 3~4배 정도 높게 나타났다. The seasonal variations of chemical composition of jujuba leaf were studied by analyzing general composition, amino acid composition, fatty acid composition, mineral, phenol, condensed tannin, flavonoid contents. Fresh jujuba leaf contained 4.42~6.31% protein and 4.31~5.71% fat on wet basis. Jujuba leaf was rich in aspartic acid, glutamic acid and leucine, but methionine was a limiting amino acid. Four kinds of free sugar, i.e. glucose, fructose, sucrose and maltose were found in jujuba leaf. The contents of fructose and glucose increased during growth, while the contents of disaccharides, sucrose and maltose, decreased. The main fatty acids of the leaf were palmitic acid, linoleic acid, stearic acid and oleic acid. Jujuba leaf was rich in K, Na and Ca, however, the amounts of Fe, Mn and Cu were low. The contents of Ca and Na increased during growth but the content of Mg decreased. The content of total phenolic compound was 0.83~0.89% and the content of condensed tannin was 0.40~0.45%. Two major flavonoids such as rutin and isoquercitrin were detected and their contents were. 103.8~125.2㎎/㎏ and 26.2~40.0㎎/㎏, respectively.

        대추잎 추출물의 생리활성 작용

        대추잎 에탄올 추출물로부터 조제한 각 분획의 xanthine oxidase 저해활성은 클로로포름을 제외한 기 타 분획에서 높게 나타났고 농도가 증가하면서 저해율도 크게 증가하였으며 메탄올, 에틸아세테이트, 부탄올, 물, 클로로포름 순으로 저해효과가 높았다. 추출물의 모든 분획의 농도 0.5%에서 전자공여작용은 DPPH에 의한 흡광도의 감소현상이 반응시간 5분이내에서 강하게 나타났고 에틸아세테이트, 메탄올, 물, 클로로포름, 부탄올순으로 높게 나타났다. 아질산염 소거작용은 1㎎/ml의 낮은 농도에서도 모든 분획이 40%이상의 분해능을 나타내었고 농도가 증가하면서 분해능도 높게 나타났다. 에틸아세테이트, 부탄올, 메탄올, 클로로포름, 물 분획 순으로 분해효과가 좋았다. ACE활성 저해작용은 에틸아세테이트 분획에서는 농도가 높아짐에 따라 저해율도 증가하여 10㎎/ml에서는 71.4%의 높은 저해율을 보였고 클로로포름 분획은 비교적 높은 농도인 10㎎/ml에서만 33.1%의 낮은 저해율을 나타내었다. This study was designed to investigate the possible utilization of Zizyphus jujuba leaves as a source of functional ingredients. The physiological activity of different solvent fractions prepared from ethanol extract of Zizyphus jujuba leaves were analyzed. Xanthine oxidase inhibitory effect was very high in all fractions except chloroform fraction. The very high electron donating ability was observed in the ethylacetate fraction and the effect was similar to 0.1% tocopherol. Nitrite scavenging effect of all fractions was more than 40% even at low concentration of 1㎎/ml and was increased with increasing concentration. Angiotensin-I converting enzyme inhibitory activity was appeared in ethyl acetate and chloroform fractions only at high concentraton.
