      • Physicochemical Quality Characteristics of Sansuyu Sikhye (Korean Tranditional Rice Beverage) used Cornus fruit Powder and Extract

        In this experiment, hot air-dried, freeze-dried cornus fruit powder and extract were used to make sansuyu sikhye. According to the results, cornus fruit extract is high in functional components, but while being saccharified, moroniside and loganin are reduced considerably and antioxidative activation was also lowered. As the time of saccharification increases, a-value is significantly more decreased in sikhye made of extract than sikhye which powder is added to; however, six hours after saccharification, a-value is found to be higher in FSP (freeze-dried cornus fruit powder)-added sikhye than DSP (hot air-dried cornus fruit powder)-added one, so it helps cornus fruit to maintain its original red color. As the addition of FSP increases, the color is more preferred, and concerning general quality characteristics, when FSP is added as 1.0 to 1.5%, the sikhye is evaluated to be the best. To make sansuyu sikhye, it is thought to be appropriate to perform the first saccharification on malt extract at 50℃ for heightening the sugar content and then add FSP as 1.0 to 1.5% for the second saccharification for increasing the contents of functional substances in cornus fruit. Therefore, it seems to be possible to develop processed goods using FSP.

      • Nrf2-mediated upregulation of heme oxygenase-1 induces cytoprotective effects of Corni Fructus water extract against oxidative stress-induced DNA damage and apoptosis in C2C12

        This study investigated the effects of Corni Fructus water extract (CFE) against oxidative stress-induced cell damage in C2C12. The results demonstrated that preincubation of C2C12 with CFE prior to H₂O₂ stimulation inhibited cytotoxicity, comet tail formation, chromatin condensation and phospho-histone γH2AX expression, suggesting that it prevents H₂O₂-induced ROS accumulation, cellular DNA damage and apoptotic cell death. CFE also restored H₂O₂-induced mitochondrial dysfunction and prevented apoptosis by Bax/Bcl-2 ratio and inducing cytosolic release of cytochrome c and degradation of caspase and PARP in H₂O₂-stimulated C2C12. Interestingly, the expression of Nrf2 was significantly increased by CFE in the presence of H₂O₂, which was associated with a marked increase in expression of HO-1. Additionally, the preventive effects of CFE were significantly abolished by zinc protoporphyrin, a HO-1 specific inhibitor, indicating that CFE activates the Nrf2/HO-1 axis in C2C12 to protect against oxidative stress. These findings suggest that CFE may protect muscle cells against oxidative stress-induced injury through activation of the Nrf2/HO-1 signaling pathway.

        This study was to suggest the roles of social enterprises in maintaining healthy life of the socially vulnerable by creating a customized care environment through chronic disease diet management targeting the elderly at home in need of care in the community. As for the subjects of this study, 102 in-home elderly people aged 65 or older (14 males & 88 females) who needed care in the community were provided with a diet management lunch box delivery service customized for chronic diseases. Theoretical education and cooking class on chronic diseases were provided to 15 volunteers with 10 sessions, and customized lunch boxes were provided to the elderly with chronic diseases at home on that day. In conclusion, it is believed that only by increasing the level of knowledge about chronic diseases and nutritional knowledge of the elderly will it be possible to establish a proper meal plan. Since the role of volunteers is important, it is necessary to systematically seek nutritional education methods for volunteers.

      • Production of Grain Syrup of Cornus Fruit by Using the (Jam) Vacuum Evaporator

        In order to enhance the facilitation level of the processing equipment of Agriculture Processing Support Center, the standardization of production processing of the grain syrup (jochung) of rice and jochung of cornus fruit (sansuyu). The sansuyu extract liquid extracted for 2 hours at 100℃ by adding 5% of dried sansuyu in 40L of water with the vacuum evaporator. The barley malt extract liquid is mixed for 10 minutes by adding 45L of water and 8kg of barley malt in the storage tank. The starch is settled by certain time of placement and then, used only 40L of the clean liquid (0.8°Brix). The barley malt extracted substance for 40L and hard-boiled rice for 8kg are placed into the agitator with the temperature device for making the diastatic liquid of 8°Brix with 7 hours of diastatic at 55℃. As a result, the diastatic liquid 80L of 8°Brix is concentrated to manufacture approximately 6.5kg of jochung of rice (68°Brix) and jochung of sansuyu (72°Brix). However, the jochung of sansuyu has higher sugar content compared to the jochung of rice, but it was in the thick condition without thickening. It is considered as caused by the higher organic acid content.
