페미니즘 시각에서 본 1970년대 이전 한국 부엌의 공간 변화

본 논문은 한국 부엌 공간의 변천사를 부엌의 형태 구조 디자인과 가사 노동과의 연관성을 바탕으로 하여 여성주의적 시각에서 논의한 것이다. 부엌은 사적 공간 내에서 여성이 가사 노동을 수행하는 장소로 특히 한국의 주거 환경의 역사 속에서 가장 큰 변화를 보여주는 공간이다. 그러나 그 동안의 부엌에 대한 연구는 위생과 효율적인 노동 동선에 기반 한 설비 개발과 가구 배치 문제 등 효율적인 부엌 공간 창출 방법론에 치중되었기 때문에 공간의 독특한 장소성에 대한 분석은 간과되어 왔다. 본 연구에서는 이러한 시각을 근간으로 전통부엌이 근대화 과정에서 과도기적인 형태를 거쳐 입식부엌으로 변화하는 과정을 서술하되, 기능과 형태를 중심으로 한 원형공간으로서의 부엌 공간의 가치와 의미에 대하여 논의하고 있다. 연구 전반부에서는 문제 제시 및 부엌에 대한 문화적 의미를 서술하고, 후반부에서는 부엌의 기능주의적 측면에 대한 논의를 위하여 과학기술에 대한 배경에 대하여 살펴보았다. 이어 한국 부엌 공간의 형태를 연대기적으로 기술하면서, 전통 부엌이 현대 부엌으로 변화하는 과정을 기술적인 측면과 사회적인 요구, 여성노동과 형태의 상관성에 대한 자료를 바탕으로 연구하였다. 본 연구를 위하여 <주부생활>, <여원>등의 여성지를 1차 사료로 하여 시각자료와 기사를 분석하였고, 그동안 연구되었던 부엌에 관한 선행연구들을 정리하였다. 시기적으로는 1930년대부터 1970년대까지를 전통 한국 부엌이 현대적으로 변화하는 시기로 보고, 이를 개량 부엌과 과도기적 부엌, 입식 부엌의 등장의 세 시기로 구분하여 여성의 노동형태와 사회적 지위의 변화를 함께 논의하였다. 이러한 연구는 원형 공간 중의 원형공간인 부엌의 문화사적인 연구로 귀결된다. 결론적으로 본 논문은 부엌이 단지 기능만을 수행하는 물리적인 활동 공간이 아닌 문화 사회적 소통, 사용가치와 총체적 공감각이 살아 움직이는 공간으로 그 의미와 가치를 가지고 있다고 전제하면서 부엌을 인간의 삶 속에서 본래의 진가를 발견해 낼 수 있는 의미 있는 공간으로 다시 규정하고자 한다. This study discusses a change of Korean kitchen from the traditional form to modern built-in kitchen with the plans and elevations of kitchen space on the Feminist perspective. Even though a kitchen space shows a dramatic change in the history of residential environment, the precedent research on the kitchen has been mostly done on the aspect of physical composition and engineering convenience such as ergonomics and efficiency. Therefore, this paper suggests different approach to the kitchen space with the cultural and social context. The Feminism is required to explain the domestic labor and the needs of improvement since women have been a subjective laborer in the kitchen through the history and place. With this point of view the meaning and value of Korean kitchen space is revealed and discussed. Firstly, on the cultural meaning, a kitchen is explained as an archetype, synesthetic, and feminist space with the discussion of domestic labors. Secondly, modern kitchen on the context of science will be described on the Taylorism, scientific management, and the Frankfurt kitchen by Margarete Schutte-Lihotzky, a female Austrian architect. Finally, history of Korean kitchen will be describe in three phases; introduction of modern kitchen, transitional period and the built-in kitchen. To support this thesis, women`s journals and printed medium from the 1930s to 1970s are referred as a visual source of the change from pre-standarization, residential plan, water & gas system, and built-in furniture system kitchen.
음식군 구성 분석을 통한 전통 음식문화 측면에서의 학교급식 식단 평가

This study was conducted to analyze traditional aspects of school lunch menus in Korea. We conducted a content analysis of menu-related contents included in guidelines for school lunch programs provided by 16 city and provincial education offices. In addition, the data of 10,495 menus for the third week of December 2010 and March, July, October 2011 from 557 elementary, middle, and high school were analyzed by school grade, area, and province. The results showed that there were no specific and detailed guidelines for menu planning in terms of traditional food culture in most of the guidelines for school lunch programs. However, the basic traditional menu composition was maintained in school lunch menus. The percentage of menus including rice and Kimchi was 97% and 95%, respectively, and that including Korean soup was about 72%. However, the frequency of serving Namul, Korean seasoned vegetable dish, accounted for only about 52% of the menus. The percentage of the menus following the traditional food group pattern including such five food groups as rice, Korean soup, Kimchi, Namul, and optional Korean side dish was only about 35%. The percentage of the menus following the traditional food group pattern excluding Namul from the five food groups accounted for about 30%. The traditional food group score, calculated by allocating 1 point to each of the five food groups was 4.06 out of 5 points on average. Elementary schools and schools in rural area and in Jeolla-do province served traditional menus more frequently. In conclusion, school lunch programs need to consider establishing traditional foods-based standards and relevant guidelines for school lunch, particularly for high schools and schools in urban areas and in some provinces.
