        Red wine을 첨가한 돈육 patty의 냉장 중 품질변화

        본 연구는 적포도주의 첨가가 돈육 patty의 냉장 중 품질에 미치는 영향을 검토하기 위하여 적포도주를 첨가하지 않은 돈육 patty(대조구), 적포도주를 1% 첨가한 돈육 patty(RW-1), 적포도주를 3% 첨가한 돈육 patty(RW-3) 및 적포도주를 5% 첨가한 돈육 patty(RW-5)등 네 종류의 돈육 patty를 제조하고, 냉장 중 보수력, 표면색깔, pH, TBARS값, VBN 함량 및 총균수를 측정하였다. 보수력은 냉장 중 현저하게 증가하였으나, 적포도주의 첨가에 의한 영향은 없었다(p<0.05). 돈육 patty의 $L^*,\;a^*$ 및 $b^*$값은 적포도주 첨가에 의하여 낮아졌으며, 냉장 중 감소하는 경향이었다(p<0.05). pH는 냉장 기간이 경과하면서 증가하는 경향이었으며, 적포도주를 3 및 5% 첨가한 돈육 patty가 대조구 및 적포도주 1% 첨가구보다 낮게 나타났다(p<0.05). TBARS값은 냉장 기간이 경과하면서 현저하게 증가하였으며, 적포도주 첨가량이 증가함에 따라 TBARS값은 감소하는 경향이었다(p<0.05). 돈육 patty의 VBN함량은 냉장기간의 경과와 함께 유의하게 증가하였으며, 총균수도 냉장기간에 의하여 증가하였다. 그러나 적포도주의 첨가가 VBN 함량과 총균수의 증가를 억제하는 경향이었다. This study was carried out to investigate the effect of addition of red wine on the water holding capacity, surface color, pH, TBARS value, VBN content and total bacterial counts of pork patties during cold storage. Pork patties were prepared by four type such as pork patty without red wine (control), pork paoy containing red wine 1% (RW-1), pork patty containing red wine 3% (RW-3) and pork patty containing red wine 5% (RW-5). The water holding capacity was increased significantly during cold storage, but was not influenced by addition of red wine (p<0.05). The $L^*$ (lightness), $a^*$ (redness) and $b^*$ (yellowness) value was low by addition of red wine, was decreased during cold storage (p<0.05). The pH of pork patties were tend to increased with increase in cold storage period, the pH of RW-3 and RW-5 were significantly lower compared to control and RW-1 (p<0.05). The TBARS value of pork patties were tend to increased with increase in cold storage period, by increasing the amount of addition of red wine, the TBARS value were tend to decreased (p<0.05). The VBN content and total bacterial counts of pork patties were tend to increased with increase in cold storage period, and by increasing the amount of addition of red wine, the VBN content and total bacterial counts were tend to decreased during cold storage.

        돼지지방, 올리브유 및 대두유를 첨가한 분쇄돈육의 품질 및 기호성

        본 연구는 돼지지방, 올리브유 및 대두유를 첨가한 분쇄돈육의 품질 및 기호성을 검토하기 위하여 돼지지방을 첨가한 분쇄돈육(GP-P), 올리브유를 첨가한 분쇄돈육(GP-O) 및 대두유를 첨가한 분쇄돈육(GP-S) 등 세 종류의 분쇄육을 제조하고 일반성분, 표면색깔, 지방산 조성, 보수력, pH, VBN 함량, TBARS값 및 순위법에 의한 기호성을 측정하였다. 수분, 조단백질, 조지방 및 조회분 함량은 GP-P, GP-O 및 GP-S 사이에 통계적 유의성이 없었다. $L^{*}$(명도), $a^{*}$(적색도) 및 $b^{*}$(황색도)값은 GP-P가 GP-O 및 GP-S보다 유의하게 높았다(p<0.05). 가장 많이 함유된 포화지방산은 palmitic acid로서 GP-P(24.384%)가 GP-O(15.611%) 및 GP-S(14.423%)보다 유의하게 높았다(p<0.05). 불포화지방산의 경우 GP-P(43.773%)및 GP-O(65.040%)는 oleic acid가 가장 많았으며, GP-S는 linoleic acid(40.762%)가 가장 많이 함유되어 있었다. 보수력은 GP-P가 GP-O 및 GP-S보다 높았으며, pH는 GP-S가 GP-P및 GP-O보다 높았고, VBN 함량 및 TBARS값은 GP-P가 GP-O및 GP-S보다 유의하게 높았다(p<0.05).가열하지 않은 분쇄돈육의 색깔은 GP-O 및 GP-S가 GP-P보다 우수하였으나(p<0.05), 향기는 시료들 사이에 통계적 유의성이 없었다. 가열 분쇄육의 경우, 향기는 시료들 사이에 유의한 차이가 없었으며, 맛, 조직감 및 전체적인 기호성은 GP-S가 가장 우수하였고(p<0.05), 다즙성은 GP-O 및 GP-S가 GP-P보다 우수하였다(p<0.05). This study was carried out to investigate the effects of addition of pork fat, olive oil and soybean oil on the quality and sensory of ground pork meat. The samples consisted of the ground pork meat containing 20% pork fat (GP-P), 20% olive oil (GP-O), and 20% soybean oil (GP-S). The chemical composition, surface color, fatty acid composition, water hold-ing capacity, pH, VBN content and TBARS value were determined for the ground pork meat as the quality characteristics, and the sensory score were also evaluated. The moisture, crude protein, crude fat and crude ash content were not different among the GP-P, GP-O and GP-S. The $L^{*}$(lighaess), $a^{*}$(redness) and $b^{*}$(yellowness) of /GP-P were higher than those of the GP-O and GP-S (p<0.05). Palmitic acid was the most abundant among saturated fatty acids, and palmitic acid content of GP-P (24.384%)was higher than that of the GP-O (15.611%) and GP-5 (14.423%). In case of unsaturated fatty acids, oleic acid of GP-P (43.773%) and GP-O (65.040%) were the highest, linoleic. acid for GP-5 (40.762) was the highest. The water holding capacity of GP-P was higher than that of the GP-0 and GP-5, the pH of GP-S was higher than that of the GP-P and GP-O, and the VBN content and TBARS value of GP-P was higher than that of the GP-O and GP-5 (p<0.05). The raw color of GP-0 and GP-S were higher than that of the GP-P (p<0.05), however the raw aroma was not different among the samples. In case of roasted ground pork meat, the aroma was not different among the samples, the taste, texture and palatability or GP-S were the highest among the samples, and the juiciness of GP-O and GP-S were higher than that of the GP-P(p<0.05).

        돈육 패티에 첨가된 적포도주가 동결 저장 중 품질에 미치는 영향

        The aim of this study was to investigate the effects of the addition of red wine of pork patties during frozen storage on their water holding capacity, thawing loss, cooking loss, diameter change, thickness change, surface color, pH, VBN (volatile basic nitrogen) and TBARS (2-thiobarbituric acid reactive substances). Four types of pork patty were prepared; pork patty without red wine (control), and with the addition of 1%, 3% and 5% red wine (RWP-1, 3 -and t respectively). The pork patties were stored for 5 months at $-20^{\circ}C$. The water holding capacity was significantly decreased during frozen storage, which was not influenced by the addition of red wine (p<0.05). The thawing loss and cooking loss were significantly increased during frozen storage, which also was not influenced by the addition of red wine (p<0.05). There were no significant differences in the diameter and thickness changes during frozen storage, which was not influenced by the addition of red wine (p<0.05). There were no significant differences in the $L^*\;and\;b^*$ values, but the a value was significantly decreased during frozen storage. The $L^*,\;a^*\;and\;b^*$ values of the pork patties containing red wine were lower than those of the control patties (p<0.05). There were no significant differences in the pH and VBN content during the frozen storage period or on the addition of red wine to the patties. The TBARS value of the pork patties tended to increased with increasing in frozen storage period, but were decreased with increasing amount of red wine addition (p<0.05).

        포도주가 함유된 돈육 패티의 품질 및 기호성

        본 연구는 포도주의 첨가가 돈육 patty의 품질 및 기호성에 미치는 영향을 규명하기 위하여 제조과정에 포도주를 첨가하지 않은 돈육 patty(대조구), 포도주를 1% 첨가한 돈육 patty(WP-1), 포도주를 3% 첨가한 돈육 patty(WP-2) 그리고 포도주를 5% 첨가한 돈육 patty(WP-3) 등 네 종류의 돈육 patty를 제조하였다. 수분, 조단백질, 조지방 및 조회분은 시료들 사이에 유의한 차이가 없었다. 돈육 patty의 $L^*$ 및 $b^*$값은 대조구가 포도주 첨가구보다 유의하게 높았다(p<0.05). 그리고 열량, 보수력, VBN 함량 및 총균수는 시료들 사이에 차이가 없었으나 pH 및 TBARS값은 WP-2 및 WP-3이 대조구 및 WP-1보다 유의하게 낮았다(p<0.05). 총아미노산 함량은 대조구, WP-1, WP-2 및 WP-3이 각각 18.29, 17.83, 17.85 및 17.37%로 시료들 사이에 유의한 차이가 없었다. 지방산 조성은 시료들 사이에 유의한 차이가 없었으며, 포화지방산은 palmitic acid가 가장 많았고, 불포화지방산은 oleic acid가 가장 많았다. 가열 돈육 patty의 풍미, 조직감 및 다즙성은 시료들 사이에 유의한 차이가 없었지만, 맛과 종합적인 기호성은 WP-2 및 WP-3이 대조구 및 WP-1보다 우수하였다. This study was carried out to investigate the effects of adding wine on the quality and palatability of pork patties. Pork patties were prepared by four types: pork patty without wine (control), pork patty containing wine 1% (WP-1), pork patty containing wine 3% (WP-2), and pork patty containing wine 5% (WP-3). Moisture, crude protein, crude fat, crude ash, Hunter's $a^*$ value, calorie, water holding capacity, VBN content, total bacterial counts, amino acid composition, fatty acid composition, flavor, texture, and juiciness were not significantly different among the pork patties. The $L^*\;and\;b^*$ values of the control patty was higher than those of the WP-1, WP-2, and WP-3 (p<0.05). The pH and TBARS value of the WP-2 and WP-3 were lower than those of the control patty and WP-1 (p<0.05). The total amino acid content of the control patty, WP-1, WP-2, and WP-3 were 18.29, 17.83, 17.85, and 17.37%, respectively. Palmitic acid was the most abundant among saturated fatty acids while oleic acid was the most abundant unsaturated fatty acid in the four groups. The taste and palatability of the WP-2 and WP-3 were superior to the control patty and WP-1 (p<0.05).

        가열 돈육 Patty의 이화학적 및 관능적 특성에 영향을 미치는 적포도주의 첨가 효과

        The aim of this study was to investigate the effect of the addition of red wine on the physicochemical properties ana sensory score of cooked pork patties. The samples consisted of the pork patty without red wine(control), and 1, 3 and 5% red wine(RWP-1, 3 and 5, respectively). There were no significantly differences in the moisture$(58.1\sim58.7%)$, crude protein$(15.9\sim16.3%)$ crude fat$(23.2\sim23.7%)$, and crude ash$(2.7\sim2.9%)$ contents, and the Hunter's $a^*-value(0.2\sim0.6)$, cooking loss$(16.5\sim19.2%)$, VBN$(11.9\sim15.6mg%)$, total bacterial count($(11.9\sim15.6mg%)$ Log cfu/mL), hardness$(3,193\sim3,336\;dyne/cm^2)$, springiness$(75.8\sim79.7%)$, cohesiveness$(47.8\sim52.1%)$, gumminess$(489\sim509kg)$, chewiness$(183\sim209g)$ and strength $(1,144\sim1,199g)$ between the pork patties. Of the pork patties the $L^*$ value of the control and the b value of RWP-5 were the lowest(p<0.05). The pH and TBARS value of RWP-5 were the lowest of all the pork patties. The flavor of RWP-5 was superior to that of the other pork patties, and the taste, texture, juiciness and palatability of RWP-3 and RWP-5 were superior to those of the control and RWP-1. In conclusion, the addition of 5% red wine was most suitable for enhancing the physicochemical properties and sensory score of pork patties.

        개고기 다리와 가슴 근육에서 추출한 근원섬유 단백질의 특성

        This study investigated the extractability, solubility, Mg$^{2+}$-, Ca$^{2+}$- and EDTA-ATPase activity of actomyosin prepared from leg and breast muscle of dog meat. The actomyosin extractability of breast muscle(2,100.6 mg/l00 g) was higher than that of leg muscle(500.8 mg/l00 g). The Mg$^{2+}$-ATPase activity of actomyosin had a high ionic strength of 0.02$\sim$0.05 M KCI and did not differ between leg and breast muscle. The Ca$^{2+}$-ATPase activity of actomyosin had a high ionic strength of 0.02$\sim$0.10 M KCI and leg muscle had a higher level of Ca$^{2+}$-ATPase activity than breast muscle did. The EDTA-ATPase activity was lower in low ionic strength and showed higher in high ionic strength, and increased sharply with increasing ionic strength up to 0.3 M KCI. The solubility of actomyosin did not differ between leg and breast muscle, and the solubility started and ended at KCI concentrations of 0.35 M and 0.4 M, respectively.

        지방의 종류가 돈육 Patty 의 품질 특성에 미치는 영향

        This study was carried out to investigate the effect of lipid type on the physicochemical properties and sensory score of pork patties. The samples consisted of pork patties containing 20% pork fat (PP), 20% olive oil (OP), and 20% soybean oil (SP). The surface color, water holding capacity, increased rate in thickness, decreased rate in diameter, rheological properties, pH, VBN content and TBARS value were determined for the pork patties as the physicochemical properties: the sensory scores were also evaluated. The $L^*$ value for PP was the highest, and the lowest for OP among the samples (p<0.05). For the $a^*$ value OP was the highest among the samples, and the $b^*$ value of OP was lower than that of the PP (p<0.05). The water holding capacity and increased rate of thickness were higher for PP than for OP and SP (p<0.05). The cooking loss and decreased rate of diameter of PP were lower than those of OP and SP (p<0.05). The hardness and springiness of OP and SP were higher than those of PP, and SP had the highest chewiness among the samples (p<0.05). However, cohesiveness and gumminess were not different among the samples. The pH of SP was the highest among the samples, and the TBARS value of OP was lowest (p<0.05). The VBN contents were not different among the samples. The amounts of raw color for OP and SP were higher than that of PP (p<0.05). The raw aroma was not different among the samples. Also, roasted aroma and taste were not different among the samples, but the tenderness, juiciness, and palatability of SP were the highest among the samples (p<0.05).

        올리브유 및 대두유를 첨가한 돼지등심 분쇄육의 냉장 중 품질변화

        본 연구는 올리브유 및 대두유의 첨가가 돼지 분쇄육의 냉장 중 품질에 미치는 영향을 검토하기 위하여 돼지지방을 첨가한 분쇄육(GP-P), 올리브유를 첨가한 분쇄육(GP-O) 및 대두유를 첨가한 분쇄육(GP-S) 등 세 종류의 분쇄육을 제조하고 냉장 중 색깔, 보수력, 가열감량, 두께의 증가율, 직경의 감소율, pH, VBV함량 및 TBARS값을 측정하였다. 저장 중 $L^{\ast}$ 및 $b^{\ast}$값의 변화는 없었으나, 돼지지방을 첨가한 분쇄육의 $L^{\ast}$, $a^{\ast}$ 및 $b^{\ast}$값이 올리브유나 대두유를 첨가한 것보다 높았다. 보수력은 저장 중 증가하는 경향이었으며, GP-P의 보수력이 GP-O 및 GP-S보다 높았다. 그리고 가열감량은 GP-P가 GP-O 및 GP-S보다 낮았다(p<0.05). 두께의 증가는 저장 중 높아졌고, 직경의 감소는 저장 중 낮아지는 경향이었다(P<0.05). 그리고 GP-P의 두께 증가율 및 직경 감소율이 GP-O 및 GP-S보다 더 컸다(p<0.05). pH는 저장 5일째 감소하였다가 그 후 저장말기까지 증가하였다(p<0.05). 분쇄육의 VBN함량은 저장 중 증가하였으며, GP-P가 GP-O 및 GP-S보다 함량이 높았다(p<0.05). TBARS값은 저장 중 증가하였으며, GP-P가 가장 높고, GP-O가 가장 낮았다. This study was carried out to investigate the effect of the addition of olive and soybean oil on the color, water holding capacity, cooking loss, increase rate of thickness, decrease rate of diameter, pH, VBN content and TBARS value of ground pork loin during cold storage for 15 days. Ground pork loin were prepared by three types such as ground pork loin containing 20% pork fat (GP-P), ground pork loin containing 20% olive oil (GP-O) and ground pork loin containing 20% soybean oil (GP-S). The $L^{\ast}$ (lightness) and $b^{\ast}$ (yellowness) value of GP-P, GP-O and GP-S were not significantly different during storage, and the $L^{\ast}$, $a^{\ast}$ and $b^{\ast}$ value of GP-P were higher than those of GP-O and GP-S (p<0.05). The water holding capacity tended to increase along with storage period, the water holding capacity of GP-P was higher than that of GP-O and GP-S. Also, the cooking loss of GP-P was lower than that of GP-O and GP-S (p<0.05). The increase rate of thickeness by cooking increased along with storage period, but the decrease rate of diameter was tend to decreased with increase in storage period (p<0.05). The pH of all ground pork loins decreased until storage at 5 days, but increased at 15 days (p<0.05). The VBN content of all ground pork loins increased along with storage period, and the VBN content of GP-P was higher than that of GP-O and GP-S (p<0.05). The TBARS value of all ground pork loins increased along with storage period; also, the VBN content of GP-P was the highest among all ground pork loins and GP-O was the lowest among all ground pork loins (p<0.05).

        튀김 닭고기 가슴살의 품질에 영향을 미치는 초음파 주사 효과

        This study was carried out to investigate the effect of ultrasonic wave scanning on the quality of fried chicken breast. The ultrasonic wave scanning time was 0(US-0), 3(US-3), 7(US-7) and 10(US-10) minutes, no respective comparison here. The moisture of raw breast was higher than that of flied chicken, while the crude protein, fat and ash of fried chicken were higher than those of raw breast(p<0.05). The moisture content was influenced by the ultrasonic waves scanning, but the crude protein, fat and ash were not. The $L^*$(lightness) and $b^*$(yellowness) values of fried chicken were higher than those of raw breast but the $a^*$(redness) value of raw breast was higher than that of fried chicken. The $L^*$ value was lowest in US-0, while the $a^*$ value was not significantly different and the $b^*$ value was lowest in US-7 among the fried chicken samples(p<0.05). The fried chicken was not influenced by the ultrasonic wave scanning, indicating that the longer scanning time increased the water holding capacity. The pH ranged from 6.54 to 6.93, and the calorie of fried was higher than that of raw breast, but was not influenced by the ultrasonic wave scanning time. The VBN content ranged from 8.73 to 12.3 mg%. The TBARS value of raw breast was lower than that of flied chicken and was not influenced by the ultrasonic wave scanning time. Total amino acid was highest in raw breast and lowest in US-3(p<0.05). The taste, texture and juiciness were superior with increasing scanning time, but flavor and Palatability were not significantly different among the fried chicken samples(p<0.05).

        감귤 껍질을 급여한 돈육의 물리화학적 특성 및 기호성

        This study was carried out to investigate the possible for utilization of garbage in pig feed by investigating the functional characteristics of pork from pigs fed tangerine-peels. The samples consisted of the pork loin from pigs not fed with tangerine-peel (control), the pork loin fed with 3% and 5% tangerine-peel during growing and finishing period (TP-1), and fed with 6% and 10% tangerine-peel during growing and finishing period (TP-2) there is no respective comparison here. The pH, VBN content TBARS value, bacterial counts, surface color, water holding capacity, loss degree and rheological properties of the samples were determined by physicochemical properties, and the sensory scores were evaluated. The pH, TBARS value, surface color, water holding capacity and loss degree were not different among the samples, but the VBN content and bacterial counts of TP-1 and TP-2 were significantly lower than those of the control (p<0.05). The hardness, springiness, cohesiveness, gumminess and chewiness, taste, aroma, tenderness and juiciness were not different among the samples, but the shear force value and palatability of TP-1 were the highest among the samples (p<0.05).
