팜유와 대두유가 유과 바탕의 품질과 저장성에 미치는 영향

The shelf0life of Yugwa(Busuge)is very short because of the low oxidative stability of soybean oil which is conventionally used as the frying oil of Yugwa base with porous structures. To identify the possibility of replacing soybean oil with palm oil whose oxidative stability is high. POV(peroxide value). AV(acid value), colorness(L, a and b), hardness and sensory characteristics during storage of the Yugwa base fried with the soybean oil and palm oil stored in the anaerobic packaging or the aerobic packaging at 10 and 30℃ for 75 days were measured. POV and AV of the Yugwa base fried with palm oil were significantly lower than those of Yugwa fried with the soybean oil. Hardness and colorness were not different each other and, sensory evaluation was slightly higher than that fried with soybean oil. Lipid absorption amount was not significantly different between the Yugwa base fried with palm oil and the one fried with soybean oil.
In-package Cold Plasma 처리와 Malic Acid가 혼입된 유청 분리 단백질 항균 코팅의 병합 처리를 이용한 닭가슴살 가공육에 오염된 식중독균 저해

본 연구에서는 malic acid가 혼입된 유청 분리 단백질(whey protein isolate; WPI) 소재 항균 코팅(MA-WPI)과 포장 후(in-package) 유전체 장벽 방전 대기압 콜드 플라즈마(atmospheric dielectric barrier discharge cold plasma; ADCP)의 병합 처리가 닭가슴살 가공육에 오염된 Salmonella와 Listeria monocytogenes 저해 효과를 확인하였다. 3% (w/w, total coating solution) malic acid가 혼입되지 않거나 혼입된 WPI 코팅 용액으로 코팅된 닭가슴살 가공육(2 ´ 2 cm; 원통형) 을 상업적으로 사용되는 polyethylene terephthalate 용기(14 ´ 10 ´ 3 cm)에 15개씩 담아 ADCP 처리하였다. ADCP 처 리 전압(21, 24, 그리고 27 kV)과 처리 시간(1, 3, 그리고 5분)을 변수로 하여 닭가슴살 가공육에 접종된 Salmonella 저 해에 대한 최적 처리 조건(24 kV, 3분)을 결정하였고, 항균 코팅과 병합 처리 시 ADCP 처리 조건으로 사용되었다. 단 독 CP 처리, 단독 MA-WPI 코팅, 그리고 MA-WPI + CP 병합 처리 시 Salmonella는 각각 1.3 ± 0.1, 1.1 ± 0.2, 그리고 1.8 ± 0.1 log CFU/g만큼 저해되었고, L. monocytogenes는 0.9 ± 0.1, 0.5 ± 0.1, 그리고 1.3 ± 0.1 log CFU/g만큼 저해되 어 MA-WPI + CP 병합 처리가 각각의 단독 처리보다 Salmonella와 L. monocytogenes 저해 효과를 증가시킴을 알 수 있었다(p<0.05). 본 연구의 결과는 in-package ADCP 처리와 MA-WPI 항균 코팅의 병합 처리가 미생물을 효과적으로 저해시키는 포장 후 비가열 처리 기술로서의 가능성이 있음을 보여주었다.
한천, Sodium Alginate 및 Carrageenan첨가가 유과(부수게)바탕의 품질에 미치는 영향

This study was to evaluate effects of agar, sodium alginate and carrageenan on quality of Yugwa(Busuge) base. In the base preparation agar, sodium alginate and carrageenan were added 0.0, 0.1, 0.5, 1.0 and 3.0%(w/w), respectively. Volume, shape, hardness. color(L, a and b value), crude lipid content and sensory evaluation(taste and crispness) of the Yugwa base was measured. Volume of the base was higher than control in case of 0.1~0.5%(w/w) agar, sodium alginate and carrageenan, of which sodium alginate was the highest. Shapes were similar to control. Hardness and crude lipid content was decreased proportional to amount of addition of the three seesweed polysaccharides. the whiteness(L-value) was increased but the yellowness(a-value) and the redness(bvalue) decreased. Taste and crispness were increased in the case of 0.1~1.0%(w/w) of sodium alginate, but agar and carrageenan decreased.

The effects of packaging materials, packageshape, and secondary packaging on the inactivation ofindigenous mesophilic aerobic bacteria in Korean steamedrice cakes using in-package atmospheric dielectric barrierdischarge cold plasma (ADCP) treatment were investigated. Inactivation of indigenous mesophilic aerobic bacteriaby ADCP treatment (21 kV, 3 min) was significantlyincreased by 0.6 and 0.8 log CFU/g (p\0.05) from0.7 ± 0.1 and 0.5 ± 0.1 CFU/g, respectively, whenpolypropylene (PP) and low-density polyethylene (LDPE)were laminated with nylon, respectively. Secondary packaginglowered the inactivation level by 0.7–0.8 log CFU/gfrom 1.1 to 1.3 log CFU/g. In-package ADCP treatment didnot alter the water vapor permeability, oxygen transmissionrate, and tensile properties of PP, LDPE, nylon/PP, andnylon/LDPE. Thus, the results demonstrated that laminationof PP or LDPE with nylon and treatment before secondarypackaging may be effective strategies for microbialinactivation by in-package ADCP treatment.
