Recently the Ministry of Health and Welfare, Republic of Korea, announced the “Dietary Guidelines for Korean Adults (DGKA)”, which includes ten Dietary Goals, six Dietary Guidelines, and twenty-three Action Guidelines. DGKA are developed as the revision of the 2003 Dietary Guidelines for Koreans, targeting adult population. Dietary Guidelines are developed for general purpose as well as for different age groups. They are revised periodically to accommodate changes in diet and health problems of the population. The process of developing new DGKA can be summarized as 1) selection of focus areas, 2) analysis and review of available data for each area selected, and 3) derivation of guidelines based on the analyzed data, and 4) finalizing the guidelines after open discussions among the experts and general public. Five focus areas were selected by examining the Nutrition Goals of the Health Plan 2010 of Korea, soliciting proposals from the experts in the related fields, and reviewing existing and international guidelines. Five areas selected were 1) adequate intake of nutrients and foods, 2) balance of energy intake and physical activities, 3) alcohol intake, 4) food security and nutrition service, and 5) food safety. Adequacy of nutrient and food intakes of the Korean adult population was assessed using 2005 Korea National Health and Nutrition Examination Survey (KNHANES) data. Newly developed Dietary Reference Intakes for Koreans were used as reference values to assess the prevalence of inadequacies and excesses in nutrient intakes. Energy balance was examined with energy intake of 2005 KNHANES survey and results of physical activity questionnaire in the survey. Alcohol intake was also examined using 2005 KNHANES results of dietary intakes as well as the results of questionnaire survey on alcohol intakes. Food security, nutrition services, and food safety were analyzed using various government data and published results on the issues. Ten Dietary Goals and six Dietary Guidelines were developed after data analysis and were subjected to reviews of experts and general public. The final DGKA are: 1) Eat a variety of foods from each food group, 2) Increase physical activity and maintain healthy weight, 3) Eat proper amount of clean foods, 4) Avoid salty foods and try to eat foods with bland taste, 5) Avoid foods with high fat contents and deep-fried foods, and 6) When you drink alcohol, limit the amount. Twenty-three action guidelines are developed in order to achieve these guidelines in actual diet and life among the population. The government is disseminating the guidelines with “337” slogan and emblem. “337” indicates everyone should practice “3” guidelines of promoting good eating practice, “3” guidelines to limit or decrease in your diet, and you should practice them for “7” days a week. The guidelines will be useful in promoting healthy food habits and good nutritional status which will result in decrease nutrition related health problems in Korea.
서울·경기지역 성인의 상용음식에 대한 한식 인식도 조사

This study was conducted to investigate which food items are perceived as HANSIK (Korean food) in Korea. 562 males and females aged 20-70 were surveyed on 512 most frequently consumed dish items from 4th Korean National Health and Nutrition Survey if they perceive it as HANSIK. Dish items in kimchi, namul·sukchae (cooked and seasoned vegetable) and jeotgal (salt-fermented food) category showed high response rate to be perceived as HANSIK. The response rate of twigim (frying foods) as HANSIK was low showing less than 70%. The response rate as HANSIK for foreign origin foods such as ramen and jjajangmyeon (black bean paste noodle) were lower than 25%. In jang · yangnyum (seasoning) category, doenjang (soybean paste) and gochujang (red pepper paste) showed high response rate as HANSIK more than 90%. Females showed a higher response rate as HANSIK than males for most food items except several items of myen ·mandu (noodle and dumpling). The younger age group had higher HANSIK perception on many items of recently consumed foods, especially budae-jjigae (spicy sausage stew) (p < 0.001) and jwipo-jorim (braised dried filefish) (p < 0.001), implying that they already accept the common foods as HANSIK regardless of the origin. These results provide an information on the foods perceived as HANSIK among currently consumed common foods in Korea and these results can be utilized for establishment of HANSIK concept reflecting transition of dietary life in Korea.

본 연구는 우리나라 여대생들의 riboflavin (RF) 영양상태를 평가하기 위하여 서울거주 여대생 48명 (정상식이를 하는 학생 31명과 lacto-ovo vegetarian 인 학생 17명)을 대상으로 식이섭취조사, 임상검사, EGRAC 검사 및 소변검사를 실시하여 다음과 같은 결과를 얻었다. 1. 본 조사 대상 학생들은 동연령층에 대한 한국인 영양권장량에 비하여 열량섭취량은 낮고, 단백질 섭취량은 비슷하나 리보플라빈 섭취량은 높았다. 채식군의 학생들은 정상식이군에 비하여 열량과 단백질 섭취량은 낮았으나 리보플라빈 섭취량은 정상식이군과 비슷하였다. 2. 전 대상자들의 평균 EGRAC 값은 $1.24{\pm}0.03$이었으며, 정상식이군은 $1.19{\pm}0.04$, 채식군은 $1.32{\pm}0.06$으로 두 군의 평균값은 0.05수준에서 유의적 차이가 없었다. ERGAC값이 1.2이상인 대상자는 전 대상자 중 65%이었는데 정상식이군은 55%, 채식군은 82%이었다. 3. EGRAC값이 1.2이상인 대상자 중 18명에게 1일 5mg의 리보플라빈을 1주일간 투여한 후 재검사한 결과 모두 1.2이하로 감소하였다. 4. 상관분석 결과, 대상자들의 EGRAC값과 리보플라빈식이 섭취량 사이에는 유의적인 상관관계가 없었다. 이와 같은 결과가 나온 가능한 이유들에 대하여 고찰하였다. 이러한 결과들로 부터 본 조사 대상자들은 리보플라빈 섭취량은 한국인 영양권장량보다 높으나 생화학적 기능의 손상이 비교적 높은 비율로 존재함을 알 수 있다. 따라서 리보플라빈 식이섭취량이 낮은것으로 보고된 다른 집단들에 대하여 좀 더 집중적인 연구가 요청된다. 아직 우리나라 사람들을 대상으로 리보플라빈 식이섭취와 생화학적 결핍에 대하여 연구된 바가 적으므로 리보플라빈의 생화학적 결핍판정과 한국인의 RDA수준에 대하여 더 많은 연구가 요청된다. A dietary survey by 3-day food record, clinical examination, urinary riboflavin excretion, and erythrocyte glutathione reductase activity coefficient ( EGRAC ) were measured on forty -eight female college students residing in Seoul. Thirty -one students were on normal diet and seventeen were lacto - ovo vegetarians. The results are as following : (1) Students had lower intakes of energy, similar intakes of protein and higher intake of riboflavin compared to Korean RDA for their age group. Vegetarians were lower in energy and protein intakes but were similar in RF compared to omnivores. (2) Mean EGRAC values were $1.24{\pm}0.03$ for all subjects, $1.19{\pm}0.04$ for omnivores, and $1.32{\pm}0.06$ for vegetarians. Percentages of subjects with EGRAC values above 1.2 were 65% in all subjects, 55% in omnivores, and 82% in vegetarians. Therefore, it was concluded that vegetarians were more severe in biochemical lesions than omnivores despite the fact that their RF intakes were similar to omnivores. (3) Eighteen students who had EGRAC values above 1.2 were given daily supplementation of 5mg RF for one week and EGRAC determination was repeated. They all returned to normal range. (4) Correlation analyses showed that there was no significant correlation between the EGRAC values and dietary intakes of nutrients. Possible explanations for this were given. From these results, it was concluded that even though dietary RF intakes of the subjects were higher than Korean RDA levels, biochemical deficiency among the subjects was remarkably high if the criteria of EGRAC > 1.2 were used. More investigations are necessary to establish a criteria for biochemical deficiency and RDA levels of riboflavin for Koreans.
