        Comparison of Pork Quality and Sensory Characteristics for Antibiotic Free Yorkshire Crossbreds Raised in Hoop Houses

        The objective of this study was to compare pork characteristics and to determine consumer acceptability of pork chops from antibiotic free Yorkshire crossbreds sired by Berkshire (BY), Large Black (LBY), Tamworth (TY) or Yorkshire (YY) boars and reared in hoop houses. The experiments were conducted at the North Carolina Agricultural and Technical State University (NCA&TSU) Farm in Greensboro, NC and the Cherry Research Station Center for Environmental Farming Systems (CEFS) Alternative Swine Unit in Goldsboro, NC (source of antibiotic free Yorkshire sows used at both places). Twenty-four sows were artificially inseminated at each location in each of three trials. Litters were weaned at 4 wks old, and reared within deep-bedded outdoor hoop houses. To compare pork characteristics, 104 randomly selected animals were harvested at a USDA-inspected abattoir at approximately 200 d of age. Variables measured included pH, color score, $L^*$, $a^*$, $b^*$, marbling score, drip loss, hot carcass weight, backfat thickness (BF), loin muscle area (LMA), and slice shear force. Sensory panel tests were also conducted at two time periods. The data was analyzed with GLM in SAS 9.01 including location, trial, and sire breed as fixed effects. Backfat thickness, LMA, color score and $a^*$ were different among breeding groups (p<0.05). The LBY pigs had thicker backfat and smaller LMA than the other breed types. The TY and YY had less backfat than all other breed groups. Color score was lower for YY than BY and LBY but intermediate for TY. The $a^*$ was lower for TY than other breeds except LBY which was intermediate. For one sensory panel test, YY pork was more preferred overall as well as for juiciness and texture compared to BY and LBY (p<0.05), but no impact of breed type was noted for the other test, with values similar for BY, LBY, TY and YY pork. This information may help small farmers make decisions about breed types to use for outdoor production.

        Comparison of Growth Performance of Antibiotic-free Yorkshire Crossbreds Sired by Berkshire, Large Black, and Tamworth Breeds Raised in Hoop Structures

        The objective of this study was to compare body weight, ADG, and feed:gain ratio of antibiotic-free pigs from Yorkshire dams and sired by Yorkshire (YY), Berkshire (BY), Large Black (LBY) or Tamworth (TY) boars. All the crossbred pigs in each of three trials were raised as one group from weaning to finishing in the same deep-bedded hoop, providing a comfortable environment for the animals which allowed rooting and other natural behaviors. Birth, weaning and litter weights were measured and recorded. From approximately 50 kg to market weight (125 kg), feed intake and body weights were recorded manually (body weight) or using a FIRE (Feed Intake Recording Equipment, Osborne Industries Inc. Osborne, Kansas) system with eight individual feeding stations. Feed intake data for 106 finishing pigs between 140 and 210 d of age and the resulting weights and feed conversion ratios were analyzed by breed type. Least square means for body weights (birth, weaning and to 240 d) were estimated with Proc Mixed in SAS 9.2 for fixed effects such as crossbreed and days of age within the sire breed. The differences within fixed effects were compared using least significant differences with DIFF option. Individual birth weights and weaning weights were influenced by sire breed (p<0.05). For birth weight, BY pigs were the lightest, TY and YY pigs were the heaviest but similar to each other and LBY pigs were intermediate. For weaning weights, BY and LBY pigs were heavier than TY and YY pigs. However, litter birth and weaning weights were not influenced by sire breed, and average daily gain was also not significantly different among breed types. Tamworth sired pigs had lower overall body weight gain, and feed conversion was lower in TY and YY groups than BY and LBY groups (p<0.05), however, number of observations was somewhat limited for feed conversion and for Tamworth pigs. Overall, no convincing differences among breed types were noted for this study, but growth performance in the outdoor environment was satisfactory.

        <P>Finally, we give an overview of how eddy-covariance observations in combination with other data sources can be used in model benchmarking and intercomparison frameworks to diagnose the performance of TBMs in this environment and formulate road maps for future development. Our investigation reveals that many TBMs systematically misrepresent phenology, the effects of fire and root-water access (if they are considered at all) and that these should be critical areas for future development. Furthermore, such processes must not be static (i.e. prescribed behaviour) but be capable of responding to the changing environmental conditions in order to emulate the dynamic behaviour of savannas. Without such developments, however, TBMs will have limited predictive capability in making the critical projections needed to understand how savannas will respond to future global change.</P>

        Combined Intraocular Silicone Prosthesis and Conjunctival Flap for Glaucoma after Corneal Perforation in a Dog

        A 7-month-old intact male Maltese dog was presented with a 1.5-month history of glaucoma in the right eye (OD). Ophthalmic examinations revealed a corneal perforation with iris entrapment, corneal edema and neovascularization, and buphthalmos OD. Intraocular pressures were 33 mmHg OD and 19 mmHg in left eye (OS). The right eye was diagnosed with chronic glaucoma and corneal perforation with iris entrapment. Now that the eye was blind, implantation of intraocular silicone prosthesis (ISP) and conjunctival flap were elected to salvage the globe. The corneal perforation healed with the conjunctival pedicle flap and the cornea accommodated the ISP properly. A satisfactory cosmetic result was achieved without complications in the 15 months following the procedure. Therefore, this case report indicates the combined an ISP and a conjunctival flap would be an alternative for the treatment of glaucoma associated with corneal perforation in dogs.

        Study on Genetic Evaluation for Linear Type Traits in Holstein Cows

        The objectives of this study were to i) investigate genetic performance for linear type traits of individual Holstein dairy cows, especially focusing on comparative traits, and to estimate genetic variances for these traits using actual data, and ii) compare genetic performance and improvement of progeny by birth country of the cows. Linear type traits defined with five comparative traits on this study were general stature composite (GSC), dairy capacity composite (DCC), body size composite (BSC), foot and leg composite (FLC), and udder composite (UDC). These traits were scored from 1 to 6 with 1 = poor, 2 = fair, 3 = good, 4 = good plus, 5 = very good and 6 = excellent. Final scores (FS) were also included in this study. Data used was collected from the years 2000 to 2004 by the Korea Animal Improvement Association (KAIA). Only data of more than five tested cows by herd appraisal date and by sires having more than ten daughters were included to increase the reliability of the data analyses. A total of 30,204 records of the selected traits, which was collected from 26,701 individuals having pedigree information were used. Herd appraisal date, year of age, lactation stage (grouped by month), and time lagged for milking (in hours) were assumed as fixed effects on the model. Animal additive genetic effects considering pedigree relationship and residual errors were assumed with random effects. Year of age at appraisal date was classified from one to nine years of age, assigning the value of nine years of age for animals that were greater than or equal to nine years of age. From our results, the estimate for heritability was 0.463, 0.346, 0.473, 0.290, and 0.430 on GSC, DCC, BSC, FLC and UDC, respectively. The estimate for FS heritability was 0.539. The greatest breeding values for GSC were estimated for Canada, with the breeding values for American lines increasing for 10 years starting in 1989 but tending to decrease after that until 2004. For DCC, the breeding values for American and Canadian lines showed similar patterns until 1999, after which the breeding values for the American lines declined sharply. For BSC, data from Korea, Canada and the USA followed similar trends overall except when the breeding values of the American lines decreased starting in 1999. Overall, the methods used to evaluate genetic performance in this study were acceptable and allowed for the discovery of differences by country of genetic origin, likely due in part to the American use of selection indexes based primarily on milk yield traits until methods for evaluating other traits began to emerge.

        Pork Production in China, Japan and South Korea

        Global pork markets are becoming more competitive, riding the wind of the bilateral free trade agreement. China is the world's largest pork producer with nearly 50% of the world's total production. China's fast growing economy has provided its people with higher purchasing power, resulting in a rapid expansion of the Chinese swine industry over the past decades. Worldwide, China consumes the greatest amount of pork and it is believed that this trend will continue. Japan is the world's largest pork importing country, even though it also produces a lot of pork. The Japanese swine industry encounters weighty obstacles in production costs and environmental limitations which result in reduced domestic supply and creates the situation in which Japan has to import a significant amount of pork for their consumption. South Korea is also a large buyer of pork, with a status greatly influenced by the struggle that the country has faced with Foot and Mouth Disease (FMD) which occurred in 2000, 2002 and 2010. High production costs, low production efficiency, and forced culling following the FMD outbreak resulted in the loss of many hog farming households in the country, reducing supply of domestic pork in the face of continued demand. Overall, pork production in these economically important countries can greatly impact the industry globally. The goal of this review paper is to describe pork production in China, Japan, and South Korea and discuss these countries' role in global pork export markets.

        Systematic Reviews of Sport for Development Literature: Managerial and Policy Implications

        This paper reports findings of two systematic reviews of Sport for Development (SfD) evidence, with a particular focus on manager- ial and policy implications. We suggest that the outcomes of the systematic reviews yield significant insights regarding the current state of the SfD literature, particularly with respect to the diversity of interventions, the importance of scale and context, and the general paucity of rigorous, empirical analyses. In turn, we pro- pose that several managerial and policy implications and recom- mendations can be gleaned from these assessments, including the importance of an ongoing and even renewed commitment to theory and context, and critical considerations of the structure of the SfD field itself. We also use the results of the reviews to make suggestions about the importance of future research in this area, as well as the kind of research that is needed, in both policy and programming terms.

        Non-Exposure Endoscopic-Laparoscopic Cooperative Surgery for Stomach Tumors: First Experience from the Czech Republic

        Background/Aims: The aim of this study was to investigate the use of non-exposure endoscopic wall-inversion surgery (NEWS) andthe combination of laparoscopic and endoscopic approaches to neoplasia with non-exposure technique (CLEAN-NET) in gastrictumors. Methods: We reviewed all cases of NEWS and CLEAN-NET performed in the department of surgery of the Royal VinohradyTeaching Hospital. Results: Our department performed 12 gastric tumor resections (NEWS, n=10 and CLEAN-NET, n=2) between March 2016 andFebruary 2017. The cases chosen for these resections included predominantly submucosal tumors with no signs of dissemination orlocal invasion and early gastric carcinomas (T1SM1 and T1M), where tumor location made it impossible to use endoscopic submucosaldissection. R0 resection margins were confirmed in all the cases. Conclusions: NEWS and CLEAN-NET allow en bloc non-exposed full-thickness gastric wall resection in a way that uses a “close first,cut later” approach to prevent seeding of the peritoneal cavity with tumor cells. These mini-invasive techniques combine laparoscopicand endoscopic techniques, and preserve the full function of the stomach.

        Comparison of growth performance of Berkshire purebreds and crossbreds sired by Hereford and Tamworth breeds raised in alternative production system

        Objective: The objective of the present study was to compare growth performance of Berkshire purebred pigs (BB), Hereford (HB) and/or Tamworth (TB) sired Berkshire crossbred pigs reared in a hoop structure in two experiments. Methods: In the first experiment, BB was compared to TB while HB and TB were compared in the second. Body weights (BW) were recorded at 3 days of age and every 28 days from birth until 140 days of age. There was no significant difference between the BW of BB and TB, but HB was heavier than TB by 84 days of age. Least square means of average daily gain (ADG) were evaluated using one-way analysis of variance. Results: The mean parity (${\pm}$standard deviation) of the sows was $3.42{\pm}2.14$ and a total of 45 farrowing occurred from year 2012 to 2014. The mean number of total born, number born alive, number of mummies, and number weaned were $9.23{\pm}2.52$, $7.87{\pm}2.53$, $0.04{\pm}0.21$, and $5.94{\pm}2.74$, respectively. Parity did not have a significant effect on the growth performance of the pigs. For BB and TB, there was only one time frame in which there was a significant difference in the ADG: between 28 and 56 days of age. For HB and TB, the overall ADG of HB was significantly greater than the total ADG of TB. Conclusion: The breed of the sire did not affect the growth performance of the progeny between Berkshire purebreds and Tamworth${\times}$Berkshire crossbreds. The breed of the sire did have an effect between Hereford and Tamworth sired Berkshire crossbreds (p<0.05). The Hereford sired pigs were found to have increased growth performance compared to Tamworth sired.

        Meat quality of pork loins from Hereford×Berkshire female and intact male pigs reared in an alternative production system

        Objective: The objective of the present study was to investigate pork quality from Hereford× Berkshire female and intact male pigs reared outdoors in an alternative production system. Methods: Berkshire purebred sows were artificially inseminated, once in the fall and again in the spring of the following year, with semen from Hereford boars and managed free of antibiotics in an outdoor hoop structure until the last month of pregnancy, after which they were moved to a pasture-based unit of 0.8 hectares with individual lots with a farrowing hut, shade, and water ad libitum. Piglets were weaned at 4 weeks of age and housed in a deep-bedded hoop structure, grouped by sex. Animals were harvested at market weight of 125 kg, approximately 200 days of age. Hot carcass weight was collected at the time of the harvest. After 24 hours of refrigeration, carcass characteristics were measured. Longissimus dorsi samples collected from the right side loin. Loins were cut into 2.54-cm thick chops and were used to measure marbling score, color score, drip loss, and ultimate pH. Sensory panel tests were conducted as well at North Carolina State University. For pork characteristics and sensory panel data, trial and sex were included in the statistical model as fixed effects. Hot carcass weight was included in the model as a covariate for backfat thickness. Results: Neither the subjective nor the objective color scores displayed any differences between the boars and the gilts. No difference was found for pH and marbling score between trials or sexes. Gilts had a thicker backfat measurement at the last lumbar and a narrower longissimus muscle area measurement when compared to the boars. The only difference in the sensory characteristics was found between the trials for texture and moisture scores. Conclusion: Consumers were not able to detect boar taint under the condition of this study, which is that the intact males were reared outdoors. Additional trials would be necessary; however, based on the results of the present study, outdoor rearing can be suggested as a solution to the issue of boar taint.
