To gain insight on cheese consumption and develop strategies for the cheese industry, we conducted a survey of 742 women (age 25 or older) who were responsible for purchasing food for their families. Of them, 49.5% consumed cheese more than once a week and 25.1% expected that the cheese consumption of their families would increase, whereas only 7.1% expected a decrease in consumption. The most important considerations for purchasing cheese were taste and price. Of the respondents, 40.6% purchased domestic cheese, whereas 49.1% were unconcerned about the country of origin. Of them, 20.6% had experience of purchasing farm-made cheese, and 62.7% of them were satisfied with the cheese. These results suggest that cheese consumption will increase in the future, and that with attention to quality improvement and advertising, domestic farm-made cheese consumption could increase accordingly.
성별이 한우 등심의 육질등급요인, 이화학적 및 관능특성에 미치는 영향

The effect of cattle sex (cow, bull, and steer) on carcass traits of quality grade factors, physicochemical, and sensory traits of Longissimus Dorsi in Hanwoo was evaluated. Carcass traits of 42,113 heads were collected nation-wide and 257 heads were slaughtered to analyze beef quality. Sex affected significantly marbling score, meat color, fat color, texture, maturity, and quality grade of Hanwoo (p<0.05). Hanwoo steer carcasses had the highest marbling score (5.02), maturity (2.17), and texture (1.31) than those of cows and heifers. Crude fat of steers was higher than that of other cows and bulls. Steers showed the highest $L^*$(39.01), Warner-Bratzler shear force (4.03 kg), and water holding capacity (57.08%), however, there was no significant differences between those of cows and bulls. Ultimate$pH_{24}$ was shown difference among sex (5.58-5.69), however, the values remained within normal range. In sensory evaluation analyses, sex affected significantly tenderness, juiciness, and flavor (p<0.05). Also, the over all acceptability of steer beef was significantly higher than that of cow and bull beef. These results could be used as fundamental data set for further research activities to elevate Hanwoo beef qualities (p<0.05).
한우 육질등급에 따른 도체등급 요인, 이화학적 및 관능특성

Analyses were conducted to estimate the effect of quality grade on the carcass characteristics, physico-chemical and sensory traits of Longissimus dorsi in Hanwoo. A total of 42,113 carcasses were selected on the basis of five quality grades (grade $1^{++}$, $1^+$, 1, 2, and 3) and an additional 258 samples of Longissimus dorsi were used to evaluate the beef quality. The increase in quality grade from grade 3 to grade $1^{++}$ was significant (p<0.05) for carcass weight (from 338.7 kg to 387.2 kg), backfat thickness (from 7.45 mm to 12.23 mm) and marbling score (from 1.09 to 8.31). In contrast, significantly decreased levels of meat color, fat color, texture and maturity were apparent with increasing quality grade (p<0.05). Increasing quality grade was also correlated with significant increases (p<0.05) in crude fat contents (from 3.57% to 25.68%) and water holding capacity (from 52.41% to 58.03), and a decrease of the Warner-Bratzler shear force from 8.29 kg to 2.83 kg. The highest $L^*$ value (41.53) and highest cooking loss (22.11%) were observed with grade $1^{++}$ and 3 beef, respectively. There was no difference observed on $pH_{24}$ (5.53 to 5.66) among the quality grades, which were within the normal range. Sensory evaluation experiments revealed that quality grades were associated with significantly altered (all p<0.05) tenderness, juiciness, flavor, and overall acceptability. The crude fat contents showed significant correlation with juiciness (r=0.59), tenderness (r=0.71), flavor (r=0.55), and overall acceptability (r=0.69). The lower sensory trait scores were related to higher WBs. Grade $1^+$ Hanwoo beef had a significantly higher WBs and lower fat contents when compared to grade $1^{++}$ Hanwoo beef (p<0.05).

본 연구는 수입건초의 품질평가를 통해 사료가치를 평가하고 초종 및 등급별 현황을 파악하고자 수행되었다. 수입건초의 품질 평가를 위하여 2016년부터 2018년까지 전국 건초 수입상, TMR 회사와 축산 농가에서 목건초 9종 133점을 수집하였다. 수입건초의 품질등급이 3~4등급 수준으로 대부분의 수입건초가 사료성분이 낮은 것으로 판단된다. 알팔파의 품질등급별 사료성분은 ADF, Ash, TDN 및 DDM에서 유의적인 차이가 나타났다(p<0.05). 알팔파에 표기된 품질등급이 사료성분을 통해서 산출된 실제 품질 등급과 유사하지 않았다. 화본과목초의 품질등급별 사료성분은 DM 및 CP를 제외한 모든 항목에서 유의적인 차이가 나타났다(p<0.05). 국내에 유통되는 화본과목초 중에서 저품질인 품질등급 미표기가 49%를 차지하고 있으므로 사료성분에 따른 품질기준 제시가 시급하다. 이상으로 수입건초의 사료성분을 검토하였을 때 표시된 품질등급보다 낮은 결과를 나타내었다. 이는 수입건초에 표시된 품질등급만으로 판매가격을 책정하는 것은 축산 농가 및 사료제조사 등에 경제적 손실을 야기한다고 볼 수 있다. 수입건초의 품질등급을 재 검토하는 제도적 장치가 마련되어야 한다. This study was conducted to evaluate feed value of imported hays and examine current situation of species and hay grade. To evaluate the quality of the imported hay, 133 pieces including 9 species of roughage types were collected at the national hay importers, the TMR companies and livestock farms from 2016 to 2018. The quality grades of imported hay were 3~4 and most imported hay were considered to had low. The ADF, Ash, TDN and DDM in feed composition of alfalfa by quality grades presented significant differences(p<0.05). The quality grade on alfalfa was not similar to the actual quality grades calculated through feed composition. The feed composition of grasses by quality degrees presented significant differences in all contents except DM and CP (p<0.05). As the distributed grasses of the unmarked quality grade was low quality and accounted for 49%, it is urgent to present quality standards based on feed composition. As these results, the grades of imported hays were lower than the marked quality grades. Therefore, the imported roughage's(hay) price that considered to only quality grades on the marked imported roughages(hay) package can cause a loss to the livestock farms as economic damage. An institutional arrangement should be established to review the quality grades of imported hay.
Effects of Marketted-pigs per Sow per Year to recognition of Hog Farm Business Management

본 논문은 경영주의 양돈사양 항목별 성향이 MSY에 미치는 중요도를 제시함으로서 양돈농가별 효과적인 경영전략 수립에 방향을 제시하고자 수행하였다. 조사는 양돈농가 50호를 대상으로 하였으며 MSY을 종속변수로 하여 양돈사양 항목 별 중요도(22항목)로 요인분석 및 회귀분석을 실시하였다. 분석결과, MSY 향상의 중요 요인으로는 예방접종이 필수적으로 나타났으며 성장단계별 구분사육, 온습도 및 환기관리, 방역 및 위생관리 순으로 유의하게 나타났다. 이러한 결과를 토대로 양돈농가에 MSY 향상의 중요한 요인을 제시함으로써 경영전략을 수립할 수 있을 것이다. This study recommends effective ways to establish management strategies by suggesting to hog farm managers the importance of variables’ tendency to affect MSY according to hog management. Study subjects included 55 hog farms, which were analyzed using factor and regression analyses to determine each variable’s importance (22 total) for hog management, using MSY as the dependent variable. In the analysis result, the main necessary factor controlling MSY improvement was vaccination, followed, according to decreasing significance, by stages of growth classified breeding, thermo-humidity and ventilation control, and veterinary and hygienic control. Based on these results, suggesting the main factors to improve MSY to hog farms will establish management strategies.
제주지역에서 동계사료작물의 사초생산성 및 사료가치 비교

본 시험은 제주지역에서 동계사료작물의 사초생산성과 사료가치를 평가하여 청보리를 대체할 수 있는 사료작물을 탐색하고 제주지역에 적합한 동계사료작물 선발을 목적으로 제주시 난지농업연구소 시험포장에서 2007년 10월부터 2008년 6월까지 수행되었다. 제주지역에서 동계사료작물의 내한성은 모두 우수하였다. 출수기는 밀(‘금강’ 및 ‘우리’)이 4월 5일로 가장 빨랐으며 ‘삼한’ 귀리가 4월 28일로 가장 늦은 것으로 나타났다. 호숙기는 ‘금강’과 ‘우리’ 밀 (5월 9일) > ‘유연’ 보리(5월 12일) > ‘Swan’ 귀리(5월 16일) 순으로 나타났으며 초장은 ‘신영’ 트리티케일이 129㎝로 가장 크고 ‘금강’ 밀이 82㎝로 가장 작은 것으로 나타났다. 사초 생산성은 이탈리안 라이그라스(‘화산 101호’)의 생초수량이 128,667 ㎏/㏊, 건물수량이 25,951 ㎏/㏊로 가장 생산성이 높았으며, 곡류 사료작물 중 귀리(‘삼한’)의 건물수량이 22,556 ㎏/㏊로 가장 높았다. 사료가치에서 조단백질 함량은 이탈리안 라이그라스(‘화산 101호’)가 11.2%로 높았고 밀이 10.8%로 곡류 사료작물 중 가장 높았다. TDN 함량은 밀(‘금강’ 및 ‘우리’)이 69.1과 68.8%로 가장 높은 것으로 나타났으나 초종 간 차이가 5% 내외로 큰 차이를 보이지 않았다. 제주지역에서 동계사료작물은 수량적인 측면에서는 이탈리안 라이그라스가 가장 우수한 것으로 나타났으나 사료비 절감 등을 고려하면 제주지역에서는 귀리나 밀도 곡실효과를 얻을 수 있어 청보리 대체사료작물로 이용가능할 것으로 생각된다. This experiment was conducted to compare forage production and feed value of winter forage crops at the experimental field of Livestock Division, National Institute of Subtropical Agriculture from 2007 to 2008. The experiment was arranged in a randomized block design with three replications. The five winter forage crops used in this experiment were barely (‘Youngyang’ and ‘Yuyeon’), oats (‘Samhan’ and ‘Swan’), wheat (‘Kumkang’ and ‘Woori’), triticale (‘Shinyoung’) and italian ryegrass (‘Hwasan 101’ and ‘Florida-80’). The species having the fastest heading date was wheat (5th April) while the heading date of oats (‘Samhan’) was the latest as 28th April. The dry matter (DM) content of wheat was the highest among the five winter forage crops. Italian ryegrass (‘Hwasan 101’) showed the highest CP content by 11.2% and oats (Swan) showed the lowest content by 9.8%. Average acid detergent fiber (ADF) and neutral detergent fiber (NDF) content were 28.6 and 50.8% respectively. The five winter forage crops have narrow range of total nutrient digestibility (TDN) from 64.0% to 69.1%. Italian ryegrass (‘Hwasan 101’) showed the highest DM yield by 25,951 ㎏/㏊, but the DM yield of barely and wheat low by 13,892 ㎏/㏊ (‘Yuyeon’) and 14,815 ㎏/㏊ (‘Woori’), respectively. Italian ryegrass and oats have higher forage yield and feed value in Jeju. Also, oats has high grain and forage yield. The results demonstrated oats can cultivate as alternative winter forage crop for whole crop silage barely in Jeju.
