The study was made for storage test of Yackwa, which is typical cookies of Korea and contain about 20% of vegetable oil. As the result of investigation the variation of POV and AV of oil contained in Yackwa which was stored in packed or unpacked state for 60 days, at the temperature of $5^{circ}C$ or $30^{circ}C$ respectively, it was found that the Yackwa of AV, about 2, and POV, about 20, was considerably stable for storage. This result of the good storage condition of Yackwa containing a considerable amounts of Vagetable oil which proceed the rancidity, is derived from the formed film on the surface of Yackwa by the sugar syrup afterwards.

The purpose of this study was to investigate the dietary intake and health for male and female old persons living in Young Dong by mean of questionarie and interview.<br/> The results from the above survey are summerized as follows;<br/> 1. The aged average height, weight, and physical index were 166㎝, 60㎏, 19.31 in male, 156㎝, 50㎏, 20.27 in female which were almost the same as the Korean average standard (male; 167.0㎝, 61.0㎏, 21.8, female; 156㎝, 53.0㎏, 21.8).<br/> Among the condition of diseases, neuralgia was 45.3%, hypertension was 12.2%, constipation was 10.4%.<br/> 2. Correlation coefficients between systolic blood pressure, diastolic blood pressure and age were significant(P<0.05, P<0.01), and also those between systolic blood pressure, diastolic blood pressure and Body Mass Index were signifcant(P<0.01. P<0.005).<br/> 3. Correlation of food intake frequency of protein group, calcium group, vitamin and mineral group was divided three levels-Good, Fair, Poor.<br/> Food intake frequency as the factors(three groups) which might influence the condition of health was partly significant (P<0. 05, P<0.l).

The purpose of this study was to investigate the dietary-intake and that of health by mean of questionarie and interview for male and female old persons living in Seoul area.<br/> The contents of study included general aspects, physical status and health, nutrient intake, and food intake frequency.<br/> The results from the above survey are summerized as follows;<br/> 1. The age group in the range of 60 to 79 years old was 71%, and the average number of family was 4.9.<br/> The educational level was 56% of elderly persons were elementary or middle school graduates.<br/> 42.8% of elderly persons had an average monthly income of ₩490,000 to 300,000.<br/> 2. The aged average height, weight, and physical index were 164.9㎝, 55.8㎏ and 20.4 in male, 152.7㎝, 46.0㎏ and 20.3 in female which were lower than the Korean average standard. (male; 167.0 ㎝, 61.0㎏, female; 156.0㎝, 55.0㎏)<br/> In the degree of health self-consciousness, percentage distribution of poor and very poor was 29% in male, 59% in female.<br/> Among the condition of disease, neuralgia was 23.8%, hypertension was 17.2%, diabetes was 5.4%.<br/> 3. Average dialy calorie intake was 63.9~70.4% for male and 76.4~83.9% for female which were lower than the Recommended Dietary Allowances for Koreans.<br/> Protein intake was 42.9~57.3g (which was 72.8~82.6% RDA) for elderly person, the proportion of animal protein to total protein intake were 24.3~28.2%(12.9~16.2g).<br/> Iron, Vitamin B₁, Vitamin B₂ Niacin intake exceeded the RDA, but the intake of Calcium, Vitamin C were far less than that of RDA.<br/> 4. In the correlations between nutritional intakes and environmental factors and health, economic living situations and educational level as the factors which might influence the condition of nutritional intake was significant(P<0.01).<br/> 5. Food intake frequency of meats, fishes, eggs, for average of 1~2 days per week were 44.8~50.5%, that of milk and milk products for scarecely week were 42.9.%.<br/> Correlation of food intake frequency was divided three levels-good, fair, poor.<br/> Food intake frequency as the factors which might influence the condition of nutritional intake was significant(P<0.01).<br/> The results of the survey reveal that many of elderly show evidence of general nutrient intake deficiency, it requires first of all importance of nutrition to improve nutritional level through to promotion of elderly health.
