The objective of this research was to observe a buying behavior of fruit purchasers. Either encouraging or discouraging factors for purchasing fruits were identified by a survey with a buying behavior of fruits in 2003. An eating-habit with fresh fruits for a dessert was a major reason for buying fruits. As fruits have been recognized as one of the healthiest foods, food safety was another criterion for buying fruits. However, the high price of fruits restrained a lot of purchasers from buying fruits. Buying patterns differed according to customer preference as well as season. Local fruits depended on the choice pattern according to their preference and the changes of season. The most favorite fruits in the changes of choice pattern were apple, grape, pear, and mandarin. Apples were the best preference fruits during spring and fall, grape in summer, and mandarin in winter. In the case of imported fruits, purchasers preferred to orange and banana. Choice of imported fruits mainly depended on their flavor and curiosity. The amount of fruit consumed has also been increased by the preference. Many customers were intended for consuming more fruits during the time of the survey than they did before.

The effect of relative humidity (RH) on the quality of ‘Niitaka’ pears (Pyrus pyrifolia Nakai) was studied using two types of pallet covers made of polyethylene film for maintaining a high RH in commercial low temperature storage rooms. The pallet covers are referred to as open pallet cover and closed pallet cover. The open type had an opening at the top of the cover to allow greater air circulation. Relative humidity (RH), fruit temperature, gas concentration, weight loss, firmness, crispness, and decay were evaluated during storage. The RH in commercial low temperature storage rooms used for this experiment typically ranges from 65 to 82%, while using of a pallet cover increased the RH to as high as 83 to 87 or 93 to 95% with open and closed pallet cover, respectively. Control fruit (no pallet cover) showed greater weight loss than fruit stored with a pallet cover after long term storage. After sevens of month storage, skin discoloration, decay, and white-colored lesions were observed on pears stored in the closed-pallet cover. However, the open-pallet cover maintained fruit's quality without discoloration and with a little decay.
