Chemical characteristics of mulberry syncarp were investigated in six mulberry varieties, including Subongppong, Daeryukppong, Kuksang 20, Chongilppong, Cataneo and a wild variety. Water content of mulberry syncarp was 78.5~85.0% and sugar degree of Kuksang 20 was the highst among six varieties. Anthocyanin content of Chongilppong mulberry syncarp was 282.42 mg% and Kuksang 20 was lower 13% than Chongilppong mulberry fruit. Also Daeryukoppong and wild variety were higher 11% respectively. GABA content of wild variety was higher than other varieties. In flavonol glycosides analysis, rutin content was the highest in Cataneo, isoquercitrin content was in a wild variety, guaijaverin and quercitrin content was the highst in Chongilppong respectively.

To investigate the possibility of cryopreservation of mulberry seeds in liquid nitrogen(LN2), characteristics of the seeds were examined after picking mulberry suncarps and drying-heat treatment. Storage in LN2 has the potential of providing indifinite preservation of valuable seed germplasm. Determining the tolerance of seeds among given cultivars to LN2 cooling and subsequent rewarming is the first step to establishing the feasibility of LN2 storage. Seeds of 4 mulberry varities were treated to LN2 (-196°C) for 24 hours after drying heat treatment. Seed moisture content of Daeryukppog was 0.67%, the highest in all varieties, while seed germination rate(91%) of Chosunppong was the highest. As moisture content of mulberry seed was below 1%, storage in LN2 was safe. And drying heat treatment for 60minutes was suitable to prevent decreased germination rate and germination vigor of seeds. The seeds of Cheongilppong were unsuitable to cryopreserve in LN2 for long-term storage.

Chitinolytic enzymes such as ß-N-acetylglucosaminidase are major hydrolases involved in insect molting. We have isolated, sequenced a cDNA encoding ß-N-acetylglucosaminidase from the silk-worm, Bombyx mandarina, and compared its sequence with genes encoding chitinolytic enzymes from other sources. The insert DNA in the clone is 3,284 nucleotides long with an open reading frame of 1,788 nucleotides that encodes a protein of 596 amino acids with a molecular weight of 68.2 kDa. There is a 3'-untranslated region composed with 1,479 nucleotides and are several potential polyadenylation signals. The predicted amino acid sequence apparently contains a leader peptide of 23 amino acids. A search of the amino acids sequence databases for sequences similarities to other ß-N-acetylglucosaminidases or P-N-acetylhexosaminidases. The highest similarity matched with the enzyme from B. mori, which has a sequence identity of 95%.. On the other hand, the identity between the B. mandarina enzyme and those from M. Sexta and human are 70% and 24%, respectively.

To investigate the detoxificative effect of tea, five kinds of tea(mulberry, anaerobic treated mulberry, green, barly tea and corn tea) were selected and determined their dotoxication activities for Cd and Pb in drinking water. The effect of tea on the removal of Cd and Pb were increased proportionally to the contents of teas. Anaerobic treated mulberry leaf tea showed stronger detoxication activity than the others. In drinking water contaminated with Cd, the removal effect of Cd was high 27% by anaerobic treated mulherry leaf tea and 14% by mulberry leaf tea as compared to green tea. Also, in drinking water with Pb, the removal effect of anaerobic treated mulberry leaf tea was the best among five kinds of tea. Pre-treatment method on the removal effect of Cd was better than post-treatment method in the treatment method.
