This study examines the quality characteristics of cream soup added with pomegranate cortex powder(0~0.8%). As for the proximate composition, the control group had significantly(p<0.05) higher moisture content than the PGCP samples; however, crude ash decreased with increasing PGCP content. The PGCP samples presented significantly(p<0.05) higher viscosity of the control group. As the PGCP content increased, pH decreased. As for the color, Hunter L value increased with dark color while a value decreased with the PGCP content increased. b value decreased in the group added with 0.8% of PGCP content. In terms of sensory evaluation, color, flavor decreased with the PGCP content increased. Viscosity was high in the group added with 0.4% of PGCP content. Overall acceptability was the highest in the group added with 0,2% of PGCP content while bitterness, astringency, harshness, and off-flavor increased. There were no significant(p>0.05) differences in creamness of the cream soup among the samples. In conclusion, the results indicate that the addition of 0.2% PGCP to cream soup is desirable for quality and provides good physiological properties to the products.
석류 추출물에 의한 인간호염구(KU812F 세포)의 탈과립 억제효과

석류는 항당뇨, 항암, 항산화, 항미생물 및 항염증 효과와 같은 다양한 생리적 특성을 가지고 있다. 석류의 씨, 껍질 및 즙의 메탄올 추출물의 항알레르기 활성을 조사하기 위해, 인간 호염구인 KU812F 세포에 있어, A23187로 유도된 탈과립에 있어 저해효과를 검토하였다. 세포를 각각의 추출물로 처리하여, A23187로 자극한 후, 세포 내 칼슘농도, β-hexosaminidase 및 히스타민 함량을 조사하였다. 각각의 석류 추출물은 A23187에 의해 유도된 세포 내 칼슘 농도, 히스타민 및 β-hexosaminidase 유리를 농도의존적으로 감소시켰다. 이러한 결과는 석류 추출물은 알레르기반응에 있어 칼슘 유입의 억제를 통한 탈과립의 강력한 저해제로서의 가능성을 제시하고 있다. Punica granatum (PG) evidences a variety of physiological properties, including anti-diabetic, anti-cancer, antiinflammatory, anti-microbial, and anti-oxidative activities. Using the human basophilic KU812F cells, the inhibitory effects of the methanolic extract of PG seed, shell, and juice on calcium ionophore, A23187-induced degranulation were assessed. All of the PG extracts inhibited A23187-induced intracellular Ca²? levels, β-hexosaminidase, and histamine release in a dose-dependent manner. These results showed that all of the PG extracts are potent inhibitors of degranulation in allergic reactions, via the suppression of Ca²? influx.

This study aims to furnish the basic data in securing momentum for taking interest in inheriting and developing the native local foods in Gimhae by examining the perception and awareness of the native local foods among the local residents in Gimhae, Gyeongnam Province. As the results of this study, the definition of native local foods was surveyed as follows. Foods that have been handed down for generations by using local agricultural products as their ingredients; a local food restaurant was the most preferred place to eat native local foods; the most chosen reason why they should eat native local foods was ``good for health``; as for the necessity of inheriting and developing the native local foods, most of them agreed, and it was because they felt they should protect their food culture; and ``native local foods contests`` were the best way to promote the native local foods. As the results of analyzing the awareness of 12 kinds of native local foods in Gimhae, there were significant differences in Kongnamul-bab, MinmulJangeo-gui, Gajuk-jaban, Kongip-mulkimchi by gender, in Hobakogari-namul, Moomallaengi-jangachi, Kongip-mulgimchi by ages, and in Kongnamul-bab, Gajuk-jaban, Kongip-mulgimchi by the residential districts. Accordingly, in order to inherit and develop the native local foods which are the precious cultural assets in Gimhae, there should be continued opportunities and interest to promote them through the local festivals and events along with publicity activities for the native local foods.
지각된 환경단서에 의한 지역이미지가 행동의도에 미치는 영향

This study was intended to clarify how local image by Perceived environmental cues affected on Behavior Intention, aiming at Kaya cultural festival, Gimhae area, Gyeongsangnam-do. For accomplishing this purpose this study put SPSS win version 15.0, a statistical package program into data processing, and put frequency analysis, reliability analysis, factor analysis, regression analysis into verification of hypothesis. Major results of this study were as follows; there was statistically significant Influence of local image by Perceived environmental cues on Behavior Intention. First, when taking influence of Perceived environmental cues on cognitive image into account, it was revealed that there was significant influence of Perceived environmental cues on cognitive image, such as convenience facility, accessibility, food, convenience facility. By the way local image could be largely categorized as cognitive image and emotional image. Second, when taking influence of Perceived environmental cues on emotional image into account, it was revealed that there was significant influence of Perceived environmental cues on emotional image. Third, when we seeking how local image affected on Behavior Intention, it was revealed that local image affected significantly on Behavior Intention.
