N/A This study was carried out to examine the change of neutral volatile compounds of UHT milk at 7 and 15℃ during 9 day storage. The amount of volatile compounds including acetaldehyde, ethanol, acetone, 2-butanone, and 2-heptanone was determined by gas chromatography. Among 5 compounds, acetaldehyde and ethanol productions appeared to be significantly increased, while 2-butanone and 2-heptanone showed little change, and acetone concentration decreased at both 7 and 15℃ during 9 day storage. The production of acetaldehyde continously increased and reached to 4-40 times higher value, compared with the initial amount(0 day) at 7℃ at 9th days. However, at 15℃, the maximum value was found at 3rd or 6th day in three different market milks and decreased thereafter. The maximum value at 15℃ was higher than that determined at 7℃. The ethanol amount was not detected at the initial stage of storage(0 day), but during 9 days it increased dramatically at both 7(45∼57ppm) and 15℃(786∼1802ppm). 2-Butanone and 2-heptanone showed little change during the storage, and the change was a little greater at 15℃ storage than that at 7℃. In contrast, the acetone production decreased at both 7 and 15℃ during storage. The present study indicated that the 10 day storage at refrigerated temperature may not result in the negative effects on the market milk flavor. In addition, the change of above neutral volatile compounds, regardless of an increase or a decrease, did not significantly influence in milk quality at refrigerated temperature during 9 day storage.

This study was to review recent reports on antimutagenicity and anticancer activity of fermented milk products in human and animal models. Antimutagenic and binding properties of various strains of Lactobacillus and Bifidobacterium on the mutagenicity of amino acid pyrolysates were investigated in vitro using a streptomycin -dependent (SD510) strains of Salmonella typhimurium TA 98. The fecal bacterial enzymes were shown to play an important role in the incidence of colon cancer. These were increased on a western diet, but reduced by consumption of Lactobacilli and Bifidobacteria with the diet. In animal models having tumors, Lactobacilli cultures also significantly suppressed the growth of Sarcoma, Leukemia and Carcinoma. Therefore, antimutagenicity and anticancer effects of fermented milk with lactic acid bacteria have been widely demonstrated.
