본 연구는 기능성과 당뇨, 고지혈증, 비만 등 다방면에서 활용 할 수 있는 보리순이 일부지역에만 국한되어 소비되고 있어, 웰빙식품으로 다양하게 활용도를 높이고자 보리순분말을 이용하여 양갱을 제조하여 품질특성을 검토하였다. 물성 측정결과 경도(Hardness)는 대조군(0% BSY)보다 보리순 분말 첨가량이 증가할수록 더 높았으며(p<0.001), 탄력성(Springness)과 삼키기 쉬운 상태로 반고체 식품을 씹는데 필요한 씹힘성(Chewiness)은 유의적인 차이를 보이지 않았다. 응집성(Cohesiveness)은 보리순분말 첨가량이 증가할수록 감소하였고, 점착성(gumminess)은 대조군보다 보리순분말 첨가군이 더 높게 나타났다(p<0.05). 또한 보리순이 가진 생리활성기능으로 양갱을 만들었을때도 항산화활성이 있는지 보고자 실험 한결과 총 페놀함량이 보리순 분말첨가량(2% BSY~8% BSY)에 따라 44.56~81.64 mg/100g으로 증가하였다. DPPH값은 대조군(0% BSY)이 1.18 μmol/100g, FRAP값은 12.76 mol/100g의 결과가 나왔다. 보리순 분말을 첨가한 양갱의 색, 향, 맛, 쓴맛, 전체적인 기호도 항목 관련 관능검사 결과 4~6% 첨가한 양갱이 적당할 것으로 사료되어지며, 기능성 가공식품의 제품개발연구를 통해 보리순 분말을 이용한 식품가공시장에 도입하면 다양한 보리순 상품개발에 바람직하며, 보리순 재배지역 발전에도 도움이 될 것으로 사료된다. This study was performed to investigate quality of yanggeng added barley sprout powder.0,2,4,6,8% of barley sprout powder were added to prepare yanggaeng. The addition of barley sprout powder has tendency to decreased the water content of yanggeng.The lightness and rednesss decreased significantly,but yellowness increased with increasing contents of barley sprout powder. Texture profile analysis, hardness increase with increasing barley sprout powder content. Springness and cohesiveness didn,t showed significant differences according to amount of barley sprout powder. DPPH radical scavening activity of the control group(0% BSY) was 1.17 μmol/100g, whereas groups with the added 2% BSY~ 8% BSY 6.02~16.93 μmol/100g. The results of sensory evalution showed that the Color, Flavor, Taste, Overall acceptability were the highscore at yanggeng containing 4~6% level of barley sprout powder. Based on these results, it is suggested that yanggaeng with up 4~6% added barley sprout powder can be developed as products.

A total of 165 housewives in Seoul area were interviewed to survey the Salted Sea Foods. The aim of this study was to investigate the perceptions and preferences of 20s~50s housewives to salted sea foods. As to the recognition of salted sea foods, shrimp salted sea foods(100%)>anchovy sauce(97%)>canary sauce(91%)answered. Necessity of the Development plan of salted sea foods as to its importance 23%, regarded salted sea foods very important, while 44.8% and 6.1% not important. The Participants considered that we need to succeed and develop salted sea foods. We need to develop new recipes to increase the usage of salted sea foods. 서울 지역의 주부들을 대상으로 젓갈에 대한 이용실태 및 선호도 분석을 하고자 설문지 조사를 하였으며, 165부를 통계분석에 이용하였다. 조사대상인 주부들은 젓갈은 발효식품으로 저장성이 좋은 식품으로 인식하고 있었다. 젓갈을 발전시키기 위한 방안이 필요하다고 응답한 경우가 67.8%로 높게 나타났으며, 20~50대이상의 주부들 모두 발전방안이 필요하다고 인식하고 있는 것으로 나타났다. 우리 전통음식인 젓갈을 계승화 하고 세계화 하기 위하여 젓갈제조공정이 표준화가 되고, 젊은 주부들이 자주 접할수 있도록 음식에 다양한 활용방법등의 기회가 제공되어야 한다고 여겨진다.

현재 경관에 대한 번역어로는 랜드스케이프(landscape)가 가장 보편적으로 쓰이고 있다. 그런데 랜드스케이프라는 단어는 지나치게 광범위한 측면이 있어 도시에 보이는 경관이 갖는 고유성을 담아내는 적절한 번역어인지는 확인이 필요하다. 도시 공간의 성격을 검토한 결과, 도시 경관은 도시 외부공간의 물적 건조환경(built environment)에서 비롯되며 인지의 대상이다. 즉 인공적인 사물들로 이루어진 도시 공간은 자연에서의 공간과는 다른 특성을 지니며 이는 도시 가로에서의 인지 작용을 통해 맥락과 특정한 이미지를 드러낸다. 이러한 특징으로 인해 도시 경관의 경우 도시의 물리적 공간이 갖는 공간적 특질로 인해 자연이나 도시가 아닌 지역과는 다른 양상을 갖게 된다. 결론적으로 도시 경관의 인지에 있어 중요한 것은 보는 행위 자체인데, 이 때 만들어지는 시각축이 도시 경관의 고유한 요소라고 할 수 있다. 도시 내부의 시선에서 가장 보편적인 도시 경관은 격자형 도로망 체계에서 흔히 보이는 terminating vista로 불리는 초점경관이며, 이를 반영하면 도시 경관에 대해서는 비스타라는 단어가 보다 적합한 번역어일 수 있다. Currently korean term ‘Gyeong-gwan’ generally has translated word of ‘Landscape’. However, it has to be reviewed if the word is proper to reflect characteristic of certain view in an urban area because the word contains a lot of meanings. As the result, the city view is generated on the physically-built environment of urban space as well as is an object recognized. Urban space made from bunch of artifacts has different spatial features and structures with the nature, which gives semantics, context and images by cognitive process on the urban street. Therefore, a view of city is not like a view of nature or unurbanized area because of the uniqueness of urban space as a physical body. The seeing is consequently more relevant to the view of urban space than the objects to be seen and the visual axis by the seeing is essential element of urban view. Most general one among views inside a city is ‘terminating vistas’ which are constructed by the visual axis come from the grid-like road network of modern. Therefore, the term ‘vista’ would be a better alternative for translation of ‘Gyeong-gwan’ in order to embrace the quality of urban view.

The purpose of this study is to develop a customized residential selection service that recommends residential areas that meet individual needs so as to occupy an appropriate residential environment for students of Sinchon which is a university campus area. We have developed a housing selection service by integrating housing information and constructing a data model based on the investigation of the residential type and the current status of students in Shinchon area. In the preliminary survey, students were classified into 5 types of housing (Dormitory, Studio, Gosiwon, Boarding house, and Share house). Five residential areas were selected from Daehyun-dong, Yeonhyudong, Changcheon-dong, Daesin-dong, Nogosan-dong. The housing informations were divided into accessibility, cost, facilities, indoor environment, outdoor environment and common facilities. The university residence selection beta service is being divided into the housing selection recommendation process and the user participation type database expansion plan.

The recent various ingredients are used in the food industry. Among them the results of moisture content, Hunter color system, and antioxidant activity by making a section different Jeolpyun from the general Chaenomeles sinensis Koehne and Chaenomeles sinensis Koehne powder, which have a bitter and sour taste as follows. The moisture content of the Chaenomeles sinensis Koehne was 73.8% and the moisture content were Chaenomeles sinensis Koehne powder 10.2%. The fat content of Chaenomeles sinensis Koehne powder increased by 0.9% and the ash content also increased by 0.9%. As the result of the moisture content was reduced to 60.15~41.03% and values of Hunter color system, the L-values of the Chaenomeles sinensis Koehne powder Jeolpyeon significantly decreased(p<0.05). The a-values also significantly increased(p<0.05) and the b-values was the highest 35.94 for the 3 % Chaenomeles sinensis Koehne powder. There were significant Levels of total phenolics and TEAC found for the antioxidant activity of the jeolpyeon samples(1~7%) with Chaenomeles sinensis Koehne Powder added(p<0.05). We have the above results adding Chaenomeles sinensis Koehne powder to make a traditional rice cake will help to use it as basic data for making rice cakes with excellent antioxidant activity.

천식 및 알레르기비염으로 진단된 소아, 청소년 및 성인에서의 흡입 알레르겐에 대한 감작률 비교

Purpose: Inhalant allergens are known as a major factor for respiratory allergic diseases. There are many differences in sensitization rates of inhalant allergens, depending on the environment and demographic factors. This study aimed to compare the cross-sec tional differences in sensitivity patterns to inhalant allergen between children, adolescents, and adults. Methods: We analyzed the results of 449 patients with asthma or allergic rhinitis who underwent the inhalant allergen skin prick test at our university hospital in 2016. The subjects were classified 5 groups according to age: children (≤12 years), adolescents (13-17 years), young adults (18-30 years), middle adults (31-64 years), and elderly group (≥65 years). Positive responses skin prick test for allergens were defined as allergen-to-histamine wheal ratio ≥1. Results: The sensitization rate (SR) to house dust mites (HDM) was 52.1% on average, showing the highest SR in all groups, espe cially in children (64.2%). Children and adolescents showed high SRs to cockroach along with tree pollen, animal fur, and adults showed high SR to weed pollen along with them. Among the tree pollen, the SRs to oak, alder, birch, and beech were high in all groups; in children, the SR to plain and willow tended to be high, and in adults the SR to hazel was high. SRs to Timothy pollen (9.9%) and Alternaria (8.6%) tended to be higher in children than in the other groups. Conclusion: Although HDM is still the major allergen in children and adults with respiratory allergy, our study suggests various dif ferences in the sensitization pattern to inhalant allergens according to age even in the same area. Further studies are needed to ex plain these differences in sensitization patterns. (Allergy Asthma Respir Dis 2021;9:148-155)
