조미식품과 관련된 용어로서는 양념, 조미료, 등이 있고 영어로는 Seasonings, Flavorings, Condiments, Spice등이 있다. 사전적인 의미에서 약간의 차이가 있을지 몰라도 조미식품이란 직접 음용하는 일은 드물고 주로 다른 식품의 풍미를 증진시키는데 이용되는 모든 식품을 말하며 일반사전에는 없는 일종의 '합성어'이다. 따라서 한마디로 정의하기 어렵고 다른 식품과의 구분도 애매한 편이다. 우리나라 표준산업 분류에는 조미식품 제조업이란 분류는 없다. 한편, 식품공전에서는 조미식품을 "식 등의 풍미를 돋우기 위한 목적으로 사용되는 장류, 시초, 소스류, 토마토 케첩, 카레, 고춘가로 및 실고추 향신료가공품, 드레싱, 복합조미식품, 향미유 등의 제품을 말한다"고 정의되어 있다. 이 중 장류에는 간장, 된장, 고추장, 춘장, 청국장 등이 포함되며, 소스류에는 우스타소스 등 서양풍 소스는 물론이고 불고기양념등과 같은 우리의 전통양념류를 포함한다. 우리나라 경우 드레싱보다는 마요네즈가 먼저 소개되어 현재 생산량이나 소비량에서 압도적으로 우위에 있기 때문에 마요네즈가 널리 알려져 있으나, 마요네즈는 샐러드드레싱, 프렌치드레싱 등과 마찬가지로 드레싱의 일종으로 보는게 타당하다. "소스"라는 말도 넓은 의미에서는 조미식품 의 대부분을 포함하며, 좁은 의미로는 현재 식품공전에서 말하는 제품류들이다. 이처럼 조미식품이라 하면 시초, 토마토 케첩 및 소스류, 마요네즈 및 드레싱류, 카레 및 천연향신료 등을 포함하는 좁은 의미를 뜻하는 경우가 많다. 본문은 이중에서 천연향신료를 중심으로 그 원료소재에 따른 기능별 효과를 다루고자 한다.

은행, 은행잎 및 들깨잎에서 추출한 지용성 성분이 쥐의 혈소판 응집에 미치는 영향

Linolenic acid를 다량으로 함유하고 있는 들깨유, 은행유를 rat에 투여하여 혈소판 응집능에 미치는 영향을 검토하여 다음과 같은 결과를 얻었다. 은행유 및 들깨유를 투여한 쥐의 혈청중 혈소판의 수는 각각 2.7×10^8/㎖, 4.7×10^8/㎖였다. 이 수치는 대조군(7.5×10^8/㎖)에 비해 현저하게 낮았다. 은행유와 들깨유를 투여한 혈청중 혈소판 응집능은 대조군 보다 1.4배 낮았다. 은행유와 들깨유를 투여한 rat의 혈청중 총 cholesterol과 유리 지방산의 함량은 대조군과 유의차를 나타내지 않았다.<br/> 위와 같은 결과로 부터 linolenic acid가 다량으로 함유된 들깨유 및 은행유는 혈소판 관련성 질환에 효과가 있을 것으로 생각된다. This research was performed to observe the effect on aggregation of rat platelet treated with ginkgo and perilla oil which contain much linolenic acid. The numbers of platelet treated with ginkgo and perilla oil were 2.7×10^8/㎖ and 4.7×10^8/㎖, respectively. These numbers were much less than control group(this group was 7.5×10^8/㎖). The ability of platelet aggregation treated with perilla oil and ginkgo oil was 1.4 folds less than control group. Concentrations of total cholesterol and free fatty acid in serum of rat treated with ginkgo and perilla oil group were almost equal to those of control group.

CY 운영업체의 운영능력이 컨테이너 정기선사의 물류성과에 미치는 영향에 관한 실증연구

Container transportation industry has been an important sector for economic development in Korea. The export oriented policies of Korea drove to expansion of the volume of international trade which resulted in huge container traffic in the major ports. This paper explores the dynamic relationship between the operating capabilities of Container Yard(CY) companies and logistic performance of liner shipping operators in Korea using extensive questionnaire survey and interviews. The major results stemming from the analysis is that adding transport capacity, human relations, marketing capacity variables has tremendously improved the explanatory power of the regression It also appears that the storage and material handling capabilities of the CY operator really matters and substantiality improves our understanding about the efficiency of the shipping lines overall operations.

국내 육상 컨테이너 운송기업의 영향전략과 운전자의 집단행동에 관한 실증분석

Inland Transport of containers has become core parts of international logistics in Korea. The recent strike of the container truck drivers is an evident sign that emphasize the importance of collective action in logistics. The behavior of the container truck drivers can possibly play an important role in improving transport company's performance and outputs. However, the existing papers had neglected this important agenda in the research. This article tried to analyze the collective action issues which are closely linked to the effective transport of containers in Korea. The results of the research may be a guidelines to both the inland container transport industries and container truck drivers in establishing effective relationship between the two parties. This study adopted a questionnaire survey method to collect data from container truck drivers in Korea. It is clear from the findings that fair distribution of the transport route is clearly related with the performance of the drivers and companies as well. 본 연구는 국내의 육상 컨테이너운수업 종사자를 대상으로 기업의 영항전략과 집단행동간의 경로관계를 분석하여 업계가 가지고 있는 다양한 문제점을 파악하고 시사점을 제시하고자 한다. 기존의 화물자동차시장에 관한 연구에서 지적되어 온 사안과 컨테이너 운수업계가 가지고 있는 고유의 관행과 실무를 충분히 반영하여 선행연구와 차별화를 추구하고자 하였으며 화물운수업계에 대한 미시적 분석을 통해 연관업계에 현실적인 이해와 대안을 제시하고 정부의 화물운송 정책수립에 도움이 되고자 하였다. 연구의 진행을 위하여 운송기업의 영향전략과 차량운전자의 집단행동 간의 관계 사이에 수익성, 안정성, 기회주의, 동료관계, 거래관계의 5가지 영향변수의 매개효과를 측정하고자 하였다. 연구결과 운송기업의 영향전략은 차량운전자의 집단행동에 직접적으로 유의한 영향을 미치지는 않지만 안정성과 거래관계 두 가지 요인에 의하여 집단행동에 변화가 있는 것을 알 수 있었다. 본 연구는 차량 운전자와 접점에 있는 운송기업간의 관계에 대한 실증분석을 통하여 극단적인 상황의 원인과 해결안을 제시하고 향후 컨테이너 육상운송시장에 발전적 시사점을 제공하고자 하였다.

국내 컨테이너 운송기업의 서비스몰입 및 수익성에 영향을 미치는 요인에 관한 실증연구

As logistical environments expands to be more and more competitive recently, service involvements, long term relationship and return on investment become increasingly important. Long term orientation and strategic partnerships are based on the concept of severe competition in the transport industries these days. To become more competitive in international logistics, it is essential that container transportation companies should pursue the requirements of the customers and base management decisions on needs as expressed by the users. The purpose of this paper is to provide the transportation companies with the key factors as expressed by the partners in international logistics. Results indicate that the past experiences, cultural distance, foreign background of international partners not only influnce the performance of the relationship but also affects the long term relationship of the transport system.

The Effect of Randomyl Interesterified Triacylglycerols and Vegetable Oils on the Autoxidative Stability

No difference was observed on autoxidative stability of triacyglycerols before and after randomyl interesterification. It indicate that randomization of the glyceride composition has no significant effect on the autoxidative stability. On the other hand, the autoxidation of randomyl interesterified vegetable oil was accelerated, caused mainly by decrease of tocopherols during the series of interesterification procedures.

국제물류주선업체와 정기선사간 장기지향성과 물류성과에 관한 실증적 연구

선사의 주요고객은 화주와 국제물류주선업체로 나누어지며 이 중 국제물류주선업체가 차지하는 비중은 매우 크다. 본 연구는 국제물류주선업체와 정기선사간의 장기 지향적 관계에 영향을 미치는 요인과 장기 지향적 관계가 국제물류주선업체의 전략과 운영에 미치는 영향에 관하여 분석을 실시하였다. 분석결과 인간관계, 신속성, 운항서비스는 장기지향성에 유의한 영향을 미치며, 장기지향성은 포워더의 전략과 운영 모두에 유의한 영향을 미치는 것으로 나타났다. 이러한 결과를 토대로 다음과 같은 시사점을 발견할 수 있다. 우선은 국제물류주선업체와 선사 간 관계의 중요한 출발점 중 하나는 바로 사람, 곧 인재이다. 최고 경영진의 동분야에 대한 인식의 변화와 동 분야에 대한 개선지표의 마련등 대대적인 개선대책이 요구된다. 신속성 개선이 가능한 분야는 크게 두 가지이다. 하나는 정보시스템 부문의 개선을 통한 정보 전달 시간의 개선이고 두 번째 분야는 실제 화물이동의 처리시간 단축이다. 또 국제물류주선업체 간 협약을 통하여 동일 항로나 목적지로 향하는 물량을 가지고 선사와 장기운송계약 관계를 만들어 나가야 한다. This paper examines the cooperation, long term orientation and competition between freight forwarders and liner shipping companies and presents the results of empirical analysis of this relationship. Data were collected from a survey, where 126 questionnaire were analyzed. Three strategies(speed, human relations and shipping service) can be vital for maintaining long term relationship and help enhance future competitiveness of the alliance. We also found out that improving long term relationship is crucial for the strategies formulation and operations. The importance of the variable on speediness also remains significant. Liner shipping companies and international freight forwarders must cooperae together to guarantee that their long term relationships can gain competitive edge successfully. However, to have a more accurate analysis of long term orientation and its performance, it is essential to reexamine the various factors and their influences on performance regularly.
