Deoxycholic Acid 유도 장세포 염증성 손상에 대한 어린감과 성숙감 추출물들의 보호 효과 비교

본 연구에서는 어린감과 성숙감의 탄닌 함량 및 담즙산과의 결합능력을 비교 조사하였다. 또한 사람의 장내 세포인 Caco-2 cell에 어린감과 성숙감 추출물을 처리한 후 고농도의 DCA로 자극시켜 생성되는 NO의 수준과 TEER의 차이를 확인하였다. 탄닌 함량과 담즙산의 결합능력은 성숙감에 비해 어린감에서 유의적으로 높은 것으로 나타났으며 어린 감 산성 에탄올 추출물에서 유의적으로 가장 높은 탄닌 함량 및 담즙산 결합능력을 보였다. NO 생성 억제능으로 확인한 염증반응에서도 어린감 산성 에탄올 추출물이 유의적으로 가장 높은 효과를 보였으며 DCA에 의해 유도된 장세포 간극의 느슨함을 유의하게 막아줄 수 있음이 확인되었다. 본 연구 결과를 토대로 어린감의 산성 에탄올 추출물은 고지방 식사를 통해 고농도로 축적되는 담즙산에 의해 형성된 유해한 장내 환경을 건강하게 유지시켜줄 수 있는 기능성 소재로 개발할 가능성이 있음이 확인되었다. Bile acids are endogenous metabolites that aid in the digestion and absorption of ingested fat and fat-soluble vitamins. However, high concentrations of deoxycholic acid (DCA) in the colon are associated with high incidence of colorectal cancer. In the present study, the binding of persimmon extracts to DCA in order to decrease inflammatory stress induced by DCA in a small intestinal epithelial cell line, Caco-2, was investigated. Young and ripened persimmons were extracted with distilled water (DW), ethanol, and acidic ethanol. Further, DW extract residue was re-extracted with acidic ethanol. Of the obtained extracts, acidic ethanol extract of young persimmon showed the highest bile-acid binding capacity. Moreover, acidic ethanol extract of young persimmon significantly inhibited nitric oxide production in Caco-2 cells stimulated with DCA and prevented significant reduction of trans-epithelial electric resistance. Based on these results, acidic ethanol extract of young persimmon can be used as a functional ingredient to enhance gastrointestinal health.

고령친화형 식품의 제도적 시스템 마련에 대한 식품산업체 인식 조사 연구

고령친화형식품에 대한 법적 제도마련을 위한 기준규격개발의 기반자료를 마련하기 위한 산업체 대상 설문조사의 결과는 다음과 같다. 노인을 타깃으로 생산하거나 판매하는 식품이 있느냐의 결과는 ‘아니요’ 48명(50.4%)으로 가장 많이 나타났다. 노인 타깃 식품 유형은 건강기능식품이 19명(40.4%)이고 노인 타깃 식품 생산·판매 희망여부는 52명(54.7%)이었다. 고령자를 위한 식품으로 필요한 식품은 고른 영양소를 섭취할 수 있는 식품, 기능성 원료를 강화한 식품, 저작의 편의를 도모한 식품 순으로 선택하였다. 노인 식품에 대한 법적 지위 필요여부는 47명(51.1%)이 필요하다고 하였으며, 고령친화제품 인증이 회사의 판매에 가장 유리할 것으로 판단한다고 답을 하였다. 고령자를 위한 식품의 인정에 필요한 기준은 저작의 편의를 도모한 물성기준, 건강을 고려한 기능성 원료 첨가에 대한 기준, 영양소 기준, 위해 및 안전 기준 모두가 필요하다고 답한 경우가 가장 많았다. 저작 능력에 따라 5가지 단계로 구분하는 일본 개호식품을 참고로 우리나라에서도 고령자를 위한 식품의 기준규격을 설정하는데 있어 5단계로 구분하는 것이 타당하다고 생각하느냐에 대해서는 41명(44.6%)명이 답을 하였다. 고령자 식품 활성화 방안은 인증제도 운영이 가장 높은 점수를 나타냈다. 본 연구결과를 토대로 향후 국내에서도 고령자를 위한 식품 유형의 신설이나 세금 우대 혜택 등의 활성화 방안이 만들어져야 할 것으로 판단된다. The objective of this study was to develop a standard for setting a legal system for senior-friendly food. We conducted a web-based survey on 95 food industry workers. Answers to 10 questions in the survey were analyzed using SPSS 19.0. Important factors to consider when it comes to food for seniors are the supply of balanced nutrition, enhancement of functionality, and promotion of convenience. A total of 47 respondents (51.1%) felt the need for a legal system for senior food, and they thought that a certification for senior-friendly food would be advantageous for companies. They said that there should be texture standards to promote ease of chewing, standards for functionality, nutritional standards, and safety standards to certify senior-friendly foods. A total of 41 people (44.6%) said that it was reasonable to classify Japanese food into five levels of senior-friendly foods according to ease of chewing. Certification management received the highest score in implementing an activation plan for senior-friendly food.
